I think fondly of waiting in a long line, getting up to the counter, ordering my tacos and then eating them next to other ardent taco fans as we all huddled around the truck. Ah! The gross old days. When the words “social” and “distancing” were still socially distanced from each other, and we could all congregate next to actual strangers and masticate away in food ecstasy. I’ve actually had this particular one more than any other taco from this truck’s menu whenever I’d visit because it is dripping with flavor. The beef is just so g’damn tender and juicy. So just in case you’re wondering this isn’t a repost of the Birria tacos I had the other day. These are from somewhere else in Columbus, Georgia. So keep reading 📖 . After I posted about the Birria Tacos the other day someone hit me up here on IG. . @quedodelidelideli told me she had started to make Birria tacos every other weekend to help with nursing school. My interested was peaked so I decided to try them out. I’m a big believer in trying different types and versions of the same food. . So I ended up receiving 3 of the tacos, the consome broth, toppings and a canned soda. 🌮 . The tacos were really good and had a really different flavor and look from the ones at Mexi grill. The meat was tender and the spices and flavors were really different than the previous ones I tried. The tortillas also had a little bit more of a crunch. . The consome stood out the most as it was completely different than the previous version I tried. It had a little heat to it and the moment you smell it you can tell she is using a different group of spices and herbs. 🤤 . Overall, the tacos were good quality and it’s nice to see this style of taco gain popularity here in Columbus. Groups have followed the seasons across the state to harvest pecans, prickly pear, figs, oysters, fish, and game while creating food cultures and sharing foodways. San Antonio is perfectly positioned geographically for our discussion of this great collection and mixing of food cultures. Were changing the schedule up a bit this year. Well still hold our traditional program beginning Thursday evening with dinner and closing Saturday at lunch, but well offer several optional tours (or tour on your own) on Saturday afternoon that focus on food culture in the city. TQ Rating: 8️⃣.5️⃣ When driving around Hollywood, it is easy to get distracted by the bright lights and loud music from businesses and restaurants attempting to lure locals and tourists into their establishments. But in the corner or Melrose and Vine, a taco stand is creating a bigger ruckus by making the greatest tacos we’ve had in Hollywood. Tacos Guelaguetza may not seem like much at first; small tents on the sidewalk with the menu and name written on a poster board taped to its side. Never judge a book by its cover was the first lesson we learned. The second lesson we learned was that 5 tacos was not enough, for these were incredible. Thanks to the recommendation of fellow TQer, @thatjoshuakid , we ordered the tripa tacos and we also got some pastor and asada con queso. Pastor was fine(6), we noticed that after it had been cut from the trompo the meat was grilled again and by the time we had it, it had lost some juiciness. The tripa was great(7.5). It was cut so thinly and grilled to perfection that it tasted almost crunchy, yet the meat was so flavorful and juicy. But the star of the show, and possibly one of the greatest tacos we’ve had in LA was the asada con queso(8.5). One bite of the asada with cheese taco and we felt like we were floating. We felt like we were flying towards the taco heavens but we quickly fought our way back to earth so we could finish these INCREDIBLE tacos. We finished the taco in about 1.25 seconds and were back in line in the same amount of time, ready to order 3 more. To tell you that we’ve dreamed about these tacos everyday during the quarantine would not be an exaggeration. If you’re ever in Hollywood and want to try some amazing tacos, leave boulevard and come to tacos Guelaguetza, you won’t regret it. #AD. I love Tacos! A great shout if your hosting family and friends round 🇲🇽 ☀️. . Here’s my BBQ Pulled Pork Tacos using @bullseyebbq sauce 🥰 #Bullseye #Cookstong . . Ingredients:- . Small Pork Shoulder Joint Salt & Pepper 4 Cloves Garlic 1 small onion Honey (tablespoon) 1/2 Cup Chicken Stock Squeeze of Lemon @bullseyebbq BBQ Sauce. . The Rub:- x1 Tablespoon Ground Cumin X1 Tablespoon Olive Oil X1 Tablespoon Cajun Spice X1 Tablespoon Dried Oregano Salt & Pepper. . Pickled Red Onion:- X1 Red Onion sliced X1 Teaspoon Sugar X2 Tablespoon Cider Vinegar. . Chipotle Mayo:- X4 Tablespoon Mayo X1 Teaspoon Paprika X1 Teaspoon Cayenne Pepper X1 teaspoon Chilli Powder Squeeze of lime. . To finish:- Corn tortillas (toasted) Coriander Spring Onion. . Method:- 1. Add the rub and coat the pork well in a large bowl. Leave over night in fridge (or for 3/4 hours). Cover bowl with cling film. . 2. Add the pork into a slow cooker or roasting tin. Cover in Honey. Add Salt & Pepper. In the same tray, add the stock, lemon, onions and garlic and then cover the pork well in tray well in tin foil. This will keep the pork as moist as poss. Slow cook for 4 hours low and slow. Low heat. . 3. Time now to pickle your onions. Add all ingredients listed to a small bowl and put in the fridge. Leave for a few hours. . 4. After 4/5 hours, this should be ready to shred! Get two forks and pull away the meat. Add the @bullseyebbq bbq sauce and cover all the meat well. At this point, you could even whack it on the BBQ on a tray wrapped in foil for the smokiness. . 5. Add all Chipotle Mayo ingredients in a small bowl and mix well - easy. . 6. Toast your Corn Tortillas (White corn tortillas are awesome if you can find these) on the BBQ or grill for a minute either side until toasty. . 7. Guys here is the recipe that I used on this cook. It’s a long one but well worth it🌮 The only adjustment I made was seasoning the meat with @chriscookscrazy Crazy Latin Explosion Seasoning. i made a version of birria tacos the other day. my second time making them. first time i used short ribs only, and i was tempted to drive to my mama house and slap her (but i didn’t cuz she got hands)...this time i used both short ribs AND chuck — and i honestly prefer the two combined. it was easier on my pockets and gave me a meatier texture as well as being luscious af. for this second time, i used my pressure cooker instead of my oven, and it’s *hands down* my favorite way to do it now. the meat is falling apart like all of 2020, and the monterey jack cheese is just 🤤 i’m gonna make these one more time before i give y’all the recipe because i wanna add a little more heat. they’re utterly delicious and melt in your mouth, but i found the heat level to be weaker than i wanted. so, lemme play around with adding more arbol chilies and chipotles...then you’ll get it. but in the meantime, i’m gonna slurp tf outta these incredibly juicy ooey gooey tacos for the 99 and the 2000 #birriatacos #tacos #birria #shortribtacos #birriaderes #carnaldish - @chefresha on Instagram

Best-Ever Mexican Tostadas⠀ INGREDIENTS⠀ 1/2 small red onion, sliced⠀ Juice of 1 lime⠀ 2 tbsp. butter⠀ 2 tbsp. vegetable oil, plus more for frying⠀ 1/2 small yellow onion, minced⠀ 1/2 tsp. dried oregano⠀ 1/2 tsp. chili powder⠀ Kosher salt⠀ Freshly ground black pepper⠀ 2 (15.5-oz.) cans pinto beans, drained and rinsed⠀ 6 corn tortillas⠀ FOR TOPPING⠀ 1 1/2 c. cotija, crumbled⠀ 1 avocado, sliced⠀ 4 radishes, thinly sliced into rounds⠀ 1 jalapeño, thinly sliced⠀ 1/4 c. cilantro leaves⠀ 1 lime, sliced for serving⠀ ⠀ DIRECTIONS⠀ 1. In a medium bowl, combine red onions and lime juice. Set aside to quick pickle while preparing the rest of your ingredients.⠀ 2. In a large skillet over medium heat, melt butter and heat oil. When oil is hot and butter is foaming, add yellow onion and cook, stirring occasionally, until onions are soft and translucent, 5 minutes. Add oregano and chili powder and season with salt and pepper and cook until fragrant, 1 minute more.⠀ 3. Add beans and 1/2 cup water. 🇲🇽Viernes de Sazón Mexicano..... Delicia Cultural🇲🇽🇲🇽😋😋 La palabra taco proviene de la palabra náhuatl ‘tlahco’ que significa “mitad o en el medio”, refiriéndose a la forma en que está conformado. El verdadero origen del taco no se conoce pero se cree que fue creado en el México prehispánico. Se tienen dos referencias de esta época: la primera es de Moctezuma, quien utilizaba de cuchara las tortillas hechas en piedras calientes, formando algo parecido al taco que conocemos hoy en día; la segunda es la forma como enviaban la comida a los hombres que trabajaban todo el día en el campo, envuelta en tortillas. La mesa de nixtamal más antigua proviene del año 1,500 antes de Cristo y se encontró en Soconusco, Chiapas. La primera taquiza que se documentó fue en los tiempos de la conquista española, hecha por Hernán Cortés en Coyoacán para sus capitanes. Según Bernal Díaz del Castillo en su crónica: “Historia verdadera de la conquista de la Nueva España”, se servía carne de cerdo con tortillas. Los tacos pueden ser de carnitas, longaniza, carne asada, cochinita, árabe, barbacoa, birria, de cabeza, de pollo, mariscos, entre otros. Por tipo de preparación existen los siguientes: Dorados: originario de Sinaloa, se elabora con tortilla recién hecha y rellenos de camarón, res, pollo, frijol o papa. La tortilla se enrolla o dobla por la mitad y se fríe en aceite. Suadero: dos tortillas fritas y encima se pone el suadero (carne de res). Se sirve con cilantro y cebolla. Canasta: se calientan al vapor y son conocidos por ser muy económicos. Placero: este es el taco normal de tortilla caliente y cualquier relleno de carne o marisco. Guisado: hechos con platillos típicos mexicanos como chicharrón, mole, cochinita, etc. Ahogados: en salsa de tomate, sin picante. Doblados: una tortilla doblada y frita en aceite, rellena de papa, carne, frijoles, etc. Comer tacos es un arte, “el arte de comer con tortilla”. Cualquier día es bueno para disfrutarlos y como dice ese famoso refrán mexicano: “un taco no se le niega a nadie”. As soon as we got off the plane in LAX we knew exactly where our very first stop would be. The one and only @teddysredtacos It was my first time there so we went with the sample plate. The “hard” part about being a self-proclaimed foodie is keeping up with the... burger weeks, national pizza day or even Taco Tuesday while still trying to work a day job for those pesky bills I have. So for me... it’s Taco Wednesday, although I think we can all agree that tacos deserve more than just one day a week. Am I right? I’ve had my head and stomach buried in The Taco Chronicles on @netflix, so I asked a trusted source their favorite Pastor taqueria in Dallas. That led me to @taqueriataxco off of Inwood and Irving where I ordered Pastor, Fajita and Carnitas. The pastor was great. Served fresh off the trompo with that beautiful red hue you get from the adobo and achiote. The flavors were on point with addition to some hotttt salsa rojo and salsa verde. The fajita was good but I really enjoyed the Carnitas. Each bite had the perfect mix of those fatty flavorful pieces complimented with leaner cuts for a complete bite. Top with onions, cilantro and salsa of choice for the full experience. Its day 192. Its also #TacoTuesday so I went to @minibirrieria which is a Tijuana-style taco truck thats often found parked in the Bixby Knolls Shopping Center right near my office. Their whole thing is birria de res (stewed beef) and variations on them which includes tacos dorados, quesatacos, mulitas, vampiros, quesadillas, and birria consomme. Its probably not surprising to anyone that I got at least one of everything. Theyre all slightly different modifications on crunchy fried tortillas filled with birria. The tortilla is crunchy and makes a great vessel for the star—the birria. Their birria is incredibly tender, juicy, and full of savory flavor. The birria literally melts in your mouth and when you dunk any of the items into the consomme, it takes them to another level. In brief, this truck serves amazing birria-related goods.
