Happy TACO Tuesssssday! Today features my favorite TACO combination of all time - The Al Pastor TACO!! This combination features savory pork, topped with some pineapple, onion, and cilantro. Heres how you make them: ⁣⁣ ⁣⁣ Pulled Pork, crockpot style: ⁣⁣ ¤ cut of pork butt ⁣⁣ ¤ 4 TBSP paprika ⁣⁣ ¤ 2 TBSP celery salt ⁣⁣ ¤ 2 TBSP salt ⁣⁣ ¤ 2 TBSP black pepper ⁣⁣ ¤ 2 TBSP cumin powder ⁣⁣ ¤ 2 TBSP brown sugar ⁣⁣ ¤ 1 TBSP oregano ⁣⁣ ¤ 1 TBSP cayenne pepper ⁣⁣ ¤ 2 TBSP dried sage ⁣⁣ ¤ 2 Bay leaves ⁣⁣ ¤ 1 TBSP mustard ⁣⁣ ⁣⁣ Crush the bay leaves, combine all ingredients and cover the entire butt. Cook in crockpot on low heat for 8 hours. Taco Tuesday - one of my favorite days of the week. When deciding where to get tacos today, I immediately knew I wanted Hermanas Kitchen & Cocktails located in Lindenhurst on Wellwood Ave. 🌮 Let’s start with the tacos. Unique, fresh, and full of layers of flavor. Everyone should be able to find one they love. Today, I went with the carrot taco, roasted cauliflower taco, and classic hard shell beef taco. Carrots? Cauliflower??? Yeah. They’re amazing and I recommend you all try them. 🌮 Next is the grilled romaine salad loaded with roasted corn, tomatoes, cotjia, finished with garlic-citrus vinaigrette. It was VERY NICE (Borat voice) to say the least. 🌮 Following you have their truffled mushroom & manchego empanada. Easily one of the tastiest things I’ve ever eaten. I always get them to eat later on. Do it. 🌮 Finally, you have their rice balls which I’m pretty sure has crack in them because I am straight addicted to these things. Aside from rice, there’s pernil, peas, oaxaca and a spicy dipping sauce that I could drink. I dip the empanadas in the sauce too... 🌮 Not pictured are their phenomenal cocktails and some of the best margaritas I’ve ever had. i made a version of birria tacos the other day. my second time making them. first time i used short ribs only, and i was tempted to drive to my mama house and slap her (but i didn’t cuz she got hands)...this time i used both short ribs AND chuck — and i honestly prefer the two combined. it was easier on my pockets and gave me a meatier texture as well as being luscious af. for this second time, i used my pressure cooker instead of my oven, and it’s *hands down* my favorite way to do it now. the meat is falling apart like all of 2020, and the monterey jack cheese is just 🤤 i’m gonna make these one more time before i give y’all the recipe because i wanna add a little more heat. they’re utterly delicious and melt in your mouth, but i found the heat level to be weaker than i wanted. so, lemme play around with adding more arbol chilies and chipotles...then you’ll get it. but in the meantime, i’m gonna slurp tf outta these incredibly juicy ooey gooey tacos for the 99 and the 2000 #birriatacos #tacos #birria #shortribtacos #birriaderes #carnaldish - @chefresha on Instagram

Best-Ever Mexican Tostadas⠀ INGREDIENTS⠀ 1/2 small red onion, sliced⠀ Juice of 1 lime⠀ 2 tbsp. butter⠀ 2 tbsp. vegetable oil, plus more for frying⠀ 1/2 small yellow onion, minced⠀ 1/2 tsp. dried oregano⠀ 1/2 tsp. chili powder⠀ Kosher salt⠀ Freshly ground black pepper⠀ 2 (15.5-oz.) cans pinto beans, drained and rinsed⠀ 6 corn tortillas⠀ FOR TOPPING⠀ 1 1/2 c. cotija, crumbled⠀ 1 avocado, sliced⠀ 4 radishes, thinly sliced into rounds⠀ 1 jalapeño, thinly sliced⠀ 1/4 c. cilantro leaves⠀ 1 lime, sliced for serving⠀ ⠀ DIRECTIONS⠀ 1. In a medium bowl, combine red onions and lime juice. Set aside to quick pickle while preparing the rest of your ingredients.⠀ 2. In a large skillet over medium heat, melt butter and heat oil. When oil is hot and butter is foaming, add yellow onion and cook, stirring occasionally, until onions are soft and translucent, 5 minutes. Add oregano and chili powder and season with salt and pepper and cook until fragrant, 1 minute more.⠀ 3. Add beans and 1/2 cup water. Cook, mashing beans with a wooden spoon or potato masher, until desired consistency is reached. When beans are thick and almost all water has evaporated, remove from heat.⠀ In a medium, high-sided skillet, add vegetable oil until it is 1/2 deep. Heat oil until a drop of water sizzles when added to the pan. Using tongs, fry 1 tortilla at a time until golden and crisp, about 20 to 30 seconds per side. Transfer to a paper-towel lined plate and salt immediately. ⠀ 4. Build tostadas: Top each tortilla with about 1/4 cup refried beans, avocado, radishes, jalapeño, cilantro, and some quick pickled onions. Serve with lime wedges. - @elparaisotostadas on Instagram
