Happy Friday! 🍂I have an autumn bouquet for you today. Its been a bit dreary here these past few days, so I thought flowers were in order! I’m a little sad to see summer go...mostly because the days are getting shorter. I miss the long summer evenings 😭 Last night it was so dark at 7:00! ...but I do love the cozy fall vibes, the smell of cinnamon apples can’t be beat and the vibrant New England fall foliage is breathtaking, so I have a bit of excitement for the season too 🤗 . It’s also the perfect time to be in the kitchen baking bread 😉😉 If you still need an extra push to try a focaccia I’ll make it a little easier and leave my simple recipe below ☺️ Tag me and use #focacciafriday so I can share your beautiful bread to my stories. I love seeing what your create! Enjoy your day! . . Focaccia Recipe: 🌱1 package active dry yeast (2 and 1/4 tsp) 🌱1Tbs sugar 🌱1 1/2 cups warm water (about 110 F) 🌱1/4 cup olive oil (plus extra for drizzling on top) 🌱1 1/2 tsp sea salt 🌱 about 3-4 cups flour Sprinkle the yeast and sugar over the warm water and let sit till foamy (about 5-10 minutes.) Add the olive oil and 1 cup of the flour and mix for about one minute. Add another cup of flour and the sea salt. Mix. Add the remaining flour a bit at a time, while still mixing, until the dough starts to come together. You want a sticky dough! Don’t add too much flour. On an oiled baking sheet or pan, and oiled hands! ...press out your dough in the shape you would like, leave it about an inch thick. Drizzle olive oil over your dough and add your desired toppings. let rise 30-60 minutes. Okay, I have to admit that I was very greedy for hummus when I ordered 1KG of hummus for two people. 😬 I thought the small portion of 500gr will not satisfy my hunger 🤷🏼♀️ Okay, okay... 1 KG of hummus for two people is definitely too much! But the good side is that I have the best leftovers for tomorrow. I ordered this portion @thehummusdealer who delivered the food on time. The guy was super friendly and thankful for my order and the price of 13€ for the hummus and 2 breads is totally fine. And what about the hummus? The hummus was great! Super creamy and super fresh! There is a new game in town with @tigerlilypatisserie producing some tasty little baked goods. They have a savoury and sweet box, both of which I ordered. As you can see its all rather pretty and I will confirm its also very good. Its rather substantial so I havent tried everything yet but far the quiche, vegetable tart, curry sausage roll, choc baba and peach galette are gone. Its fantastic to see so many young talents coming out on their own amidst the high demand created for home delivered treats by this pandemic. Crust • 1 1/4 cup GF flour • 1/2 cup almond flour • 1-2 tbsp. pure maple syrup • 5 tbsp. coconut oil • 1/2 tsp vanilla extract • A pinch of salt Method 1. Preheat oven to 180ºC. 2. Grease the tart tin with coconut oil. Set aside. 3. Chuck all the ingredients in a food processor. Then pulse to get a moist moldable mixture. 4. Shift mixture to the tart tin and press the crust firmly into the bottom and sides. 5. Pop it in the oven to bake (15 mins or until it’s golden). 6. Let it cool on a wire rack. Filling • ¾ cup cashews, soaked in water overnight • ¾ cup coconut cream • 3 tbsp. maple syrup • 1 tbsp. blue spirulina powder • 1/2 tsp agar powder Method 1. Drain the cashews and chuck them in a high-powered blender. Add 1/2 of the coconut cream, along with everything except agar. 2. Whizz until you reach a silky smooth texture and set aside. 3. Add the rest of the coconut cream and agar powder to a small saucepan. Bring to boil while stirring it. 4. Transfer it to the blender and pulse until the ingredients are combined. 5. Pour your filling into the crust. 6. Pop pan back into the fridge to set. Top your stunning tart with fresh fruits and edible flowers🌸while serving. Each slice of this exciting tart is a burst of sunshine and happiness. It’s the perfect way to celebrate the clear blue skies even though we’re at home🏡 . Prepare for soup season with this hearty #Burrata tomato soup. 📷: @asimplepantry 🍅 🍅 🍅 Ingredients 5 slices bacon, chopped 2 Tbsp. butter 1 Tbsp. fresh basil, chopped 1 Tbsp. fresh thyme, chopped 1 Tbsp. fresh oregano, chopped 1 Tbsp. fresh rosemary, chopped 5 cloves garlic, minced 2 cups sliced carrots 1 medium sweet yellow onion, diced 3 Tbsp. tomato paste 1 Tbsp. flour 4 cups chicken broth 1 can (28 oz.) peeled whole tomatoes 1 Tbsp. red wine vinegar 8 oz. BelGioioso Burrata 🍅 🍅 🍅 Directions In a large pot over medium heat, add the bacon and cook until crispy. Add the butter and melt down, then add fresh herbs and garlic. Stir gently for 2-3 minutes, or until lightly cooked and fragrant. Add the carrots and onion and continue cooking on medium heat until softened, around 10 minutes. 🍅 🍅 🍅 Add the tomato paste and stir continuously for 2-3 minutes, or until the paste darkens and has coated everything. Stir in the flour, then add chicken broth and tomatoes, gently smashing the tomatoes into the soup with a wooden spoon or potato smasher. Stir in the red wine vinegar, then bring the pot to a full boil. Reduce heat and simmer for 30-45 minutes. 🍅 🍅 🍅 Working in batches, add the soup mixture to a blender and pulse until smooth. Секрет вкусного салата не только в хороших продуктах, но и в интересной заправке 😋 Для такого салата берём: - пару больших красных томатов - 2-3 средних спелых сочных помидора - 200-300г помидоров Черри разных цветов - 1 красная луковица Для заправки: - 5 филе анчоусов - 3 ст.л. красного винного уксуса - 3 ст.л. оливкового масла С помидорами вы и сами разберётесь, их нужно только нарезать. Половину луковицы нарезаем перьями. Вторую половину измельчаем. Теперь самое интересное. Заправка: лук смешиваем с винным уксусом и маслом. Добавляем к ним мелко нарубленные анчоусы. Даём настояться 10-15 минут. FROZEN YOGURT BARK 💫 One of my favorite recipes to share with you guys bc I love seeing how creative you all get😍 This recipe is SO easy, healthy, & fun to make. It will be your new favorite breakfast/ snack/dessert ! 😋 Alway check my stories for my step by step 🤍 How to: ✨Line The bottom of your baking tray with parchment paper ✨Spread your favorite yogurt on top of the parchment paper. I use full fat Greek yogurt & regular yogurt. You can also flavor or color your yogurt with whatever you’d like. Do not use food coloring. Keep it healthy by using nature’s dye. Turli Tava or Turli Đuveč, another Balkan dish adopted and adapted from Turkish/Ottoman cuisine. It translates to “variety in earthenware pot” (and my grandmother had a special pot reserved specifically for this dish). It is a summer casserole/stew using all the seasonal summer vegetables and a little bit of meat (though it works just as beautifully without meat and would be vegan). The Turkish version uses lamb, and in the Balkans we often use a mix of beef and pork. While we are well and truly in autumn, I can still find seasonal late summer vegetables so this dish is perfect for that. This version has a mix of beef rump and pork shoulder, with onion, sweet peppers, aubergine, celery, potatoes, carrots, green beans, okra and tomatoes, flavoured of course with sweet paprika and parsley, and as ever, cooked long and slow. Practicing my giant bun game (I don’t know what you’d want to call it). This is v2.0. I made a giant cinnamon roll a couple of months back (v1.0), and in my a) search for perfection, and b) boredom of repeating recipes, I wanted to try a riff on it. Changed the filling completely, and switched the caster sugar in the dough for dark muscovado. Basically this is just an orange infused brioche dough, rolled with biscoff spread, topped with some chopped dark chocolate and chopped pistachio. 🚨RECIPE ALERT 🚨 CRÈME BRÛLÉE . Last month, I posted the recipe for crème caramel. Now I’m sharing the recipe for the equally famous crème brûlée. . Brûlée means burnt in French and that is exactly what you do to the top layer of sugar in order to transform it into caramel. . Ingredients: . Custard 1 cup heavy cream 4 tbsp sugar 1/2 vanilla bean 2 egg yolks 1/2 vanilla bean A pinch of salt . Procedure: . 1. Preheat the oven to 160c and arrange 3 ramekins in a roasting pan. . 2. Scrape the seeds out of the vanilla bean and mix the seeds with 2 tbsp of sugar. . 3. In a medium sauce pan, combine heavy cream, the empty vanilla beans, the vanilla bean and sugar mix and salt. Slowly heat over medium heat. Remove before it reaches boiling point. Let it rest for 5 minutes to infuse the flavors. . 4. Using a bowl, whisk the yolks with the remaining 2 tbsp of sugar. . 5. Temper the yolk mixture with the cream: While whisking the yolk slowly, pour in half of the cream mixture. Do it really slowly while mixing to prevent the eggs from cooking. . 6. Add the other half. Remove the vanilla bean and strain the mixture. . 7. Pour the custard into the 3 ramekins. Fill about 3/4 of the ramekin. . 8. Boil water and pour it into the roasting pan until the water covers about 2/3 of ramekins. . 9. Transfer the custard to the oven and bake for 35-40 minutes. . 10. The custard is ready when there’s a uniform jiggle in the middle. When you touch the middle it should spring back a bit. . 11. Leave the ramekins in the water for 10 minutes and let them cool on a rack for another 10 minutes. Then chill in the fridge for at least 4 hours and preferably overnight. . 12. Drizzle a tsp of sugar on top and, using a torch, caramelize the sugar. Prawn and Tomato Stew with Coriander Sauce from @sami_tamimi and @tara.wigley #falastincookbook . Charred cherry tomatoes are added, alongside charred prawns, to a delicious tomato sauce made with olive oil, onions, garlic, ginger, green chilli, tomato paste, lightly crushed coriander and cumin seeds, bashed cardamom pods, chopped fresh dill, water, seasoning and roughly chopped plum tomatoes. When the stew is ready, it’s dotted with a stunning coriander pesto. The pesto is made with fresh coriander, green chilli, pine nuts, lemon zest, seasoning and olive oil. Though I’m not cooking as much as I’d love from this book this month, every single dish I’ve made until now is a huge success. Both in terms of flavour profile combination and recipe accuracy. Oil - 2tbsp Red onion - 1 finely chopped Garlic ginger paste - 1tbsp Cumin seeds- 1tsp Salt according to your taste Sweet chilli sauce - 2tbsp Kashmiri red chilli powder - 1tsp Garam masala - 1tsp ( I added ( homemade kadai spice blend ) Corriander powder - 1tsp Coarse corriander - 1tsp ✒FOr FILLING Cucumber , tomatoes, beetroot, Homemade Tamrillo Chuntey, cashew cream spread , Green lettuce , fennel leaves , Ciabatta Bread METHOD ✒ Rinse, drain and shred jackfruit pieces . ✒ In a pan , add oil on a low medium heat, then add cumin seeds let them sputter, then add garlic ginger paste saute for few seconds, add onions and cook until they are pink in color. ✒ Add salt, kadai masala / Garam masala, corriander powder, coarse corriander, red chilli powder and mix well until they leave a lovely aroma . Then add sweet chilli sauce for tangy taste . Mix well cool for few minutes with lid on top . This is a great recipe to make on the weekend as leftovers taste delicious cold. A slice of this with some salad makes a great work lunch and will save you 💰. If you want to give it a go here’s how, all ingredients are available from Aldi. 💚 Ingredients : 1.5x sheets of shortcrust pastry, 450g firm tofu, 100g dairy-free tasty cheese, 1x bunch of basil, 1x leek, small head of broccoli, 1/2 punnet of cherry tomatoes, pepitas, 1x tblspn fresh lemon juice, olive oil, salt and pepper. 💛 Method : Lightly oil a 20cm tart tin with removable bottom and mould your defrosted pastry into it, I kept a few little bits for decorating the top. In a saucepan with a little olive oil cook down the finely sliced leek and broccoli (also thinly sliced), add a little water if needed. In a food processor blend the tofu and lemon juice until smooth then add in the basil leaves and blend until combined. In a bowl mix together the tofu mixture, cooked vegetables and grated cheese plus salt and pepper. Pour your filling in to the pastry and evenly spread. Decorate with pastry pieces, cherry tomatoes and pepitas. Lightly brush the top with a little olive oil. Bake for 40mins at 180c degrees. PIZZA DE HIGOS, TOMATE DESHIDRATADOS Y MIEL EN MASA CON ALGAS DE ESPIRULINA♥️ Qué ganas de repetir el momento en el que me comí esta pizza. Estaba BRUTAL! Les cuento que es una de las bolitas que pedi en @thinkingfoods y que la verdad resuelven la vida. Aunque llevan harina de trigo, no pasa nada si es algo eventual. El hacerlas en casa con tus ingredientes las hacen mucho más saludables que una pizza de una cadena de comida rápida e igual de deliciosa. Yo, particularmente, no puedo comer esas pizzas porque tengo gastritis crónica y la grasa es uno de mis peores enemigos, pero como saben me gusta la flexibilidad y al menos un día a la semana comerme una pizza deliciosa sin preocuparme por las calorías. Estas bolitas son una auténtica maravilla✨ RECETA👇🏻 ━ 1 bolita de vitamin algas de @thinkingfoods ━ 4 cucharadas de salsa de tomate casera. ━ 1/4 taza de queso mozzarella rallado. ━ 2 higos. ━ 5 pedazos de tomates deshidratados. ━ 1 cucharadita de miel. RECETA SALSA DE TOMATE👇🏻 ━ 1 lata de tomate triturado sin azúcar. ━ 1 cucharada y media de Monkfruit o otro edulcorante. ━ 1 cucharadita de aceite de oliva virgen extra. ━ 1/4 cucharadita de sal. 1️⃣ Primero debemos descongelar nuestra bolita de pizza a unas 4h a temperatura ambiente o dejarla de un día a otro en la nevera. 2️⃣ Ponemos el horno a 180 grados y echamos un poco de harina en la encimera. 3️⃣ aplastamos nuestra masa y con los dedos vamos dandole una forma circular, dejando que la masa vaya cayendo con su propio peso. Luego nos ayudamos de un rodillo para extenderla un poco más. Nos debemos asegurar que los bordes tengan mayor grosor (aire) que el centro de la masa. 4️⃣ Horneamos por unos 8 minutos y retiramos. Ponemos la salsa, luego el queso, luego el tomate y los higos. 5️⃣ Volvemos a hornear hasta derretir el queso y que nuestra masa se tueste un poquito. ʟᴀʙɴᴇʜ ᴠÉɢᴀɴᴇ ᴍᴀɪꜱᴏɴ . En pleine période de confinement le printemps dernier, je me suis finalement mise au yogourt maison, en utilisant celui de @epicerie.muscade comme culture (certainement un des meilleurs que vous puissiez acheter selon moi). Au même titre que faire son pain et ses lacto, faire son yogourt requiert de la patience et le respect de certaines règles. Mais cest aussi un rythme de vie à adopter qui nous fait tant apprécié le résultat final. Au fil de mes expériences yogourt, certaines batches étaient parfois plus liquides, dautres plus épaisses. Avec celles plus épaisses, je me suis mises à faire du labneh. Et cest devenu un de mes fromages préférés, qui me rappelle le chèvre frais, un de mes fromages préférés avant de devenir végane! 𝗰𝗲 𝗾𝘂𝗶𝗹 𝗳𝗮𝘂𝘁 : - 1 à 2 tasses de yogourt végane nature, à la texture épaisse - un ou deux morceaux détamine (cotton fromage) ou un sac de lait de noix - sel, poivre, herbes fraîches/séchées, fruits séchée, etc Lobjectif est de filtrer autant de liquide du fromage (ce quon appelle le petit lait, whey en anglais) pour se retrouver avec une texture à fromage à la crème. On y parvient en transférant le yogourt dans un cotton fromage, puis en suspendant le tout dans un récipient afin den récupérer le liquide (mon truc est dattacher le tout à une baguette, de façon à faire un petit baluchon). On place dans un endroit aéré pendant 24 à 48h. On réserve le petit lait pour dautres usages puis on aromatise notre labneh selon notre convenance, avec des herbes fraîches, sel & poivre, fruits séchés. On remet le tout en baluchon dans le coton fromage et on suspend un autre 24h. And this has to be my ultimate favourite of this summer, because it’s been one of my favourite things to eat for years, Hummus, Chicken Shawarma & Flatbreads. My starter order at one of my favourite after work haunts in Cardiff when I lived there... if you know, you know! Chicken Shawarma To make 3 large or 4 medium skewers Ingredients 600g boneless skinless chicken thighs cut into bite size pieces 3 tbsp olive oil 2 tsp finely grated garlic 1 tbsp ground cumin 1 tbsp ground coriander 1 tsp turmeric 1 tsp ground ginger 1 tsp all spice 1/2 tsp ground black pepper 1/4 tsp cayenne pepper 1 tsp sea salt Squeeze of lemon Method 1. Put the all the ingredients except the chicken in a mixing bowls and stir well to combine. Then add the chicken and mix until the chicken is well coated all over. Cover and refrigerate for 6-24 hours. 2. If using wooden skewers soak in water for 30 mins before use. Divide the chicken between 3 to 4 skewers, thread the chicken pieces down the pointed end of the skewer and then bbq or put under a hot grill. Large will take approx 5 mins on both sides, medium around 4 mins. 3. To serve, stand the skewers upright and slice the chicken off in a downward motion with a knife on each side. Flatbreads To make 3 large Ingredients 230g strong white or plain flour 7g packet fast yeast 2 tbsp olive oil 1 tsp salt 150ml warm water Method 1. Put all the ingredients in a mixing bowl and mix immediately, stir to combine, then bring together into a dough with your hand. Knead the dough in the bowl for five minutes. Cover and leave to rise for 1 hour, and it’s doubled in size. 2. Flour your kitchen top and roller and roll out to large thin rounds. 3. To cook, place in a large, very hot dry pan. The bread should almost immediately start to bubble up, if it doesn’t the pan isn’t hot enough. Cook for one min each side. Repeat. - @food_obsessed_girl on Instagram

Sweet Pizza! When you combine your love of two food groups, pizza and fruit- you get blackberry ricotta basil pizza! 🤪 Here is what I was up to yesterday! This is the perfect summer pizza for your 4th of July parties this weekend! INGREDIENTS 14 to 16-inch unbaked pizza crust 1 Tbsp olive oil 1 package blackberries 1 cup shredded mozzarella cheese 1 cup shredded parmesan cheese 1 cup ricotta cheese 10 large basil leaves sliced into strips and some for garnish INSTRUCTIONS 1. Rub the olive oil over the pizza crust. 2. Smash half of the blackberries and spread out over the crust for the sauce. 3. Sprinkle mozzarella and parmesan cheese over the crust. 4. Scatter remaining blackberries over the top. Place spoonfuls of ricotta randomly over the pizza. 5. Bake at 450 degrees for 10-15 minutes, until cheese starts to brown. 6. Terbiyeli Köfte Çorbası Lemon Meatball Soup (Recipe down below 👇🏽and in my story/highlights☝🏽) . “Terbiye” also called “avgolemonı” in Greek, is an emulsion of egg yolk and lemon juice that thickens and marinates your soup. It adds so much flavour. My mum usually makes it using lamb but I also like it with chicken mince. . Mum always tells me the story of how she learned this soup when she was a young girl cleaning a wealthy family’s home in Istanbul. They loved this soup and she would make it for them regularly. . Ingredients: 500g chicken/lamb mince 1/3 cup of pudding rice 1 large onion Handful Parsley 4 large carrots 1 tin drained chickpeas 6 tbsp Olive oil 1.5 - 2 ltrs boiling water 1 egg yolk Juice of 1 lemon 2 tbsp flour Salt / Pepper / Aleppo chilli flakes . Method: . 1/ grate the onion and finely chop your parsley or add to a food processor and blend. 2/ in a bowl mix your mincemeat, onion, parsley, rice and season with salt and pepper 3/ once you’ve thoroughly mixed with your hands, roll the mix into small balls of marble size. 4/ lace balls on a floured tray. Once you’ve prepared all the balls, give your tray a shake to coat all the balls in flour. 5/ place tray in the fridge to chill whilst you prepare the rest of the soup. 6/ peel and chop your carrots into 1cm rounds and fry them for 5 mins in your saucepan 7/ add your drained and shelled chickpeas and then add your boiling water 8/ once the water had come back to the boil add your meatballs and bring back to boil. 9/ reduce your soup to a simmer, check the seasoning and add salt and pepper accordingly. Allow to simmer for 30 mins 10/ whisk your egg yolks and lemon juice and stir in for the last 5 mins of simmering your soup. 11/ your soup should thicken slightly and will be ready to eat - @mels_place_east on Instagram

Making of Cherry Galette Who can resist all the gorgeous cherries🙈!? Not me😁 For this pie crust I used sifted spelt flour (not whole for it is too “heavy”) or use mixture of rice and buckwheat flour for gluten free version or if you prefer just use whole purpose wheat flour. It is easier to make any pastry using wheat but I prefer avoiding it for I find it hard to digest. I used coconut oil instead of butter and sweetened it with coconut sugar - but you can go with any dry sweetener. Just don’t use any liquid ones. And for the filling any soft fruit mixed with thickener like tapioca or arrowroot and sweetened will work. Someone asked how to use/measure coconut oil for the recipe. I measure half cup of melted oil and leave it to solidify in the fridge. Then I take it out and use a sharp knife to chop it into small pieces before mixing it in with flour and other dry ingredients with fork. Then I use my fingers to kind of rub it in together, then add ice cold water and using my hands as quickly as possible shape it into a dough. Wrap it into cling foul and leave to chill in freezer for about 10 minutes. Pomidory, boczuś, jajka, szczypior.. tak to musi być uwielbiana przeze mnie 💥SZAKSZUKA💥🖤 SKŁADNIKI: ✖️pomidorki koktajlowe ✖️szczypior, bazylia ✖️boczek ✖️jajka ✖️czarny sezam ✖️pomidory krojone w puszce ✖️serek śmietankowy ✖️cebula ✖️czosnek ✖️syrop z agawy ✖️sól, pieprz, kumin PRZYGOTOWANIE: Na głębokiej patelni przesmażamy boczek. Kiedy się zarumieni dodajemy cebulę oraz czosnek. Wszystko chwilę przesmażamy, a następnie dodajemy pomidory z puszki. Doprawiamy: 1/2 łyżeczki soli, 1/2 łyżeczki pieprzu, 1 łyżeczka kuminu oraz łyżka syropu z agawy. Gotujemy wszystko 1-2 min i wbijamy jajka. Pora na dodatki: Dookoła rozsypujemy pokrojone pomidorki koktajlowej robimy kilka „plamek” z serka śmietankowego. •• 𝙈𝙚𝙖𝙡 𝙥𝙧𝙚𝙥𝙨 & 𝙈𝙚𝙖𝙡 𝙥𝙡𝙖𝙣𝙨 •• It’s been more than 5 months since my cook isn’t coming (all thanks to covid) and neither do I plan to call her atleast for the coming 6 months. Needless to say in the initial few months of lockdown I was finding things very difficult. Doing all the other home chores, cooking all three meals and managing a toddler was literally driving me crazy. And guess who came to my rescue.. As always my Mom!! She gave me few tips which I have been following since the last 3 months and I must say things have eased up so much. So here are some of my Mom’s tips that I follow: 1. 𝗠𝗮𝗸𝗲 𝗮 𝗠𝗲𝗮𝗹 𝗽𝗹𝗮𝗻: I try making a weekly meal plan on weekends and then try to stick to it. It helps immensely. Every night I don’t have to think what needs to be prepared tomorrow. Swipe to see a weekly meal plan of mine. 2. 𝗣𝗹𝗮𝗻 𝘁𝗵𝗲 𝘁𝗼𝘂𝗴𝗵𝗲𝘀𝘁 𝗺𝗲𝗮𝗹 𝗮 𝗱𝗮𝘆 𝗮𝗵𝗲𝗮𝗱: In my case Lunch is the toughest meal to prepare. With Utpal being in office and Koko demanding my attention, I get very less time to prepare lunch. So I started planning my lunch a day ahead at night after Koko slept. And with all the preps done it now hardly takes me 20-25 minutes to prepare lunch. 3. 𝗖𝗵𝗼𝗽𝗽𝗶𝗻𝗴 𝘃𝗲𝗴𝗴𝗶𝗲𝘀 𝗶𝗻 𝗮𝗱𝘃𝗮𝗻𝗰𝗲: I make sure to chop the veggies(like bhindi, beans etc. which takes much time to be chopped) in advance and store them in refrigerator. I know people who chop and store their veggies for the entire week but I just do it for the next day. Now with chopped veggies handy, it hardly takes me 10-15 minutes to prepare it. 4. 𝗣𝗿𝗲𝗽𝗮𝗿𝗶𝗻𝗴 𝗕𝗵𝘂𝗻𝗮 𝗺𝗮𝘀𝗮𝗹𝗮 𝗶𝗻 𝗮𝗱𝘃𝗮𝗻𝗰𝗲: I prepare a gravy of tomatoes and onions together and store it. It’s a saviour guys. You need to prepare Rajma.. Just take out the Bhuna Masala from the freezer, heat it up, add boiled rajma, salt and water and done.. it hardly takes 10-12 minutes. Similarly chana, chole, dal tadka, most of the Paneer dishes, masala aloo and many more dishes can be made within minutes. Depuis que je l’ai refait pendant le confinement, c’est devenu un classique maison. Bonne nouvelle, vous pouvez même le congeler pour le savourer petit à petit avec un café le matin… » 🔸 Tapissez de papier sulfurisé un moule à manqué de 20 cm de diamètre, beurrez-le, puis saupoudrez de cassonade. Fouettez 5 mn 170 g de cassonade avec 3 oeufs et 25 g d’huile d’olive douce. Ajoutez 170 g de poudre de noisette, 3 g de levure et 2 g de fleur de sel. 🔸 Versez dans le moule et enfournez entre 13 et 15 mn à 180°/th. 6. Laissez tiédir dans le moule avant de détacher les bords du gâteau avec la pointe d’un couteau, puis de le faire glisser sur une assiette. Hello! It’s been a while. I’ve been working on a new project and studying for a big exam coming up next month 🧿 I’ve also been baking lots of bread. I found an amazing sourdough naan recipe on @breadtopia that I’ve been making on repeat. The naan is soft and chewy because of the yogurt in the dough and it develops a deep, almost smokey, flavor from the charred spots along the surface. I like that I can bake them on my cast iron without having to turn on the oven. Best of all, they freeze really well and make delicious mana’eesh za’tar (مناقيش زعتر) that come together in seconds: heat both sides of the naan on a skillet and slather a paste of za’atar and olive oil (زيت و زعتر) on top. Never home alone... I’m learning how to take care of millions of little beings, right on the kitchen counter. 3 months ago, I mixed flour and water together and invited a colony of creatures to inhabit that space. Of course, they were already there... Present at the beginning, before I even became aware. Overnight, they started murmuring and gurgling to each other and filled the container with a bubbly song. The species seeded by the flour, included microbes from inside the grain seeds themselves that help the seed to grow. They included soil microbes from wherever the grain was grown, and the microbes off my clean hands that my body carries. I began to feed them every day...to touch and smell and delight in their active responses to me. Now they are vigorous, creamy, sweet smelling friends that feed me daily, as I feed them. The sourdough crepes, and pancakes, and breads that have come from them have been a delight to many. And I am overwhelmed by all the lessons of hope, patience, resilience, and relationship that they have taught me. I’m hoping to continue living with these creatures even as I start traveling again. latest harvest photo. garden is going insane. you might even say loco. it’s interesting how each year I have a different MVP. in the past regular habaneros kicked the most ass but this year both of my reg hab plants died. last year shishitos and Thai dragons were the stars, but this year they are both very timid. the true star plants of this year are all my scorpion peppers and any chocolate variety pepper (choc habs, choc 7-pot etc). I promise I will have some sauces available soon. I’m planning to do smaller batches but hopefully more often. Cherry tomato glut? The last few were being menaced by fruit flies so I turned them into this batch of slow-roasted garlicky, herby flavourbombs. Easy to prepare - slice the tomatoes in half, marinate in olive oil, fresh herbs, pomegranate molasses/honey and seasoning for half an hour or so, then roast at 120/100 fan for 3 hours along with a bulb of garlic until the tomatoes are partly dried but not papery. Allow to cool then tip into a jar with olive oil, fresh thyme and the roast garlic cloves. Wczorajszy dzień był bardzo SZALONY. Zaczęło się od @pytanienasniadanie i nowych prowadzących. Kasię i Maćka spotkałam już wcześniej przy okazji świątecznych odcinków programu. Są fantastyczni. Trzymam za nich mocno kciuki i Was też o to proszę. Uśmiech Kasi i głos Maćka..... powalające. Po programie uciekł mi pociąg. Wierzycie w to ? Ja do teraz zastanawiam się, jak to się stało. Zachowałam spokój i kupiłam bilet na następną godzinę.Zasiadłam wygodnie na nowym miejscu i okazało się, że to nie mój pociąg. 😲🤭🤫Całe szczęście zdążyłam pokonać 2 perony i zajęłam odpowiednie miejsce. Tym samym szczęśliwie dojechałam do Katowic i poprowadziłam urodziny kulinarne. Pozdrawiam gorąco rodzinę solenizantki. Byliście świetni. Dzisiaj ledwo się ruszam ale uwielbiam jak tyle pozytywnej energii krąży w świecie. Życzę Wam wspaniałej niedzieli. There’s no such thing as too many summer tomatoes, even if you hoard them like I do! The farmers market are bursting with so many varieties this time of year, I find them impossible to resist. What we don’t eat fresh, I love slow roasting to bring out even more of their natural sweetness and flavor and usually freeze them to enjoy a few months from now when pumpkins have taken over. However, when my family sees these pulled from the oven, all bets are off. Simply pairing them with pantry staples, beans, pasta, grains... works magic! Whole Roasted Tomatoes with Butter Bean Purée is a favorite. Here’s how it goes: You will need- 1/4+ cup olive oil, divided 2 pints assorted “cherry” tomatoes 1 tsp each Cumin and Coriander Seeds Pinch Chili flakes 1-15 oz can butter or cannellini beans, drained and rinsed (any white bean will do) Fresh thyme and/or oregano 1-2 anchovy filets Splash cider vinegar Fresh basil Pinch sumac Preheat oven to 375F and line a baking sheet with parchment. Lightly coat an assortment of small tomatoes with about 2 tsp of the olive oil. Season with flaky sea salt, fresh ground pepper and a few sprigs of thyme and/or oregano (add a few garlic cloves of you like) Spread across baking sheet and cook for about 25-30 minutes, until tomatoes swell and the smaller ones just begin to burst. While they cook, in a small sauce pan, toast cumin and coriander seeds over medium heat, just until fragrant. Add about 2 Tbs olive oil and a pinch of chili flakes and swirl to heat and scent oil. Remove from heat and set aside. Add beans, remaining olive oil a splash of cider vinegar, 1 or 2 chopped anchovy fillets, flaky sea salt and fresh ground pepper to a food processor or high speed blender. Purée until smooth. Spread purée on a serving dish and top with warm roasted tomatoes and spiced oil. Tomato tart 🍅 I’m obsessed with tomatoes! They are my number 1 ingredient in all my vegan cooking, whether they are fresh, tinned or puréed! The tomatoes right now are so ripe and juicy - we call them happy tomatoes - so they are going into every dish. This one is super easy and a real crowd pleaser: 1. Roll out a sheet of puff pastry (@jus_rol is vegan) until it is as big as a baking tray. 2. Score a border around the edge for max flake and crisp. 3. Spread 3 tbsp of vegan pesto up to the border. 4. Scatter thinly sliced tomatoes all over (the more colours and sizes the better!) and sprinkle with salt and pepper. NB you can salt the tomatoes beforehand in a sieve to remove excess water - will bake a crispy bake easier! 5. Bake at 190 degrees for 40 mins until the base is crispy (no soggy bottoms here) 6. Beautyberry Panna Cotta in today’s Houston Chronicle and on india1948.com! If we are open to surprises, there are plenty along the way and never a dull moment in life. I spent a couple of weeks at a ranch in nearby Navasota and discovered beautyberries, a native wild Texas plant that blooms in late summer. Beautyberries are all over Texas, on roadsides, in forests — their stunning pungent purple berries forming brilliant large clusters. Native Americans use these berries, their roots and stems for many medicinal purposes from mosquito repellents to stomach ailments. The raw berries are slightly sweet and astringent in flavor. At the ranch, I topped off my salads and quinoa pilafs with beautyberries and drank tea made from the leaves to prevent mosquito bites. Often used to make jellies and wine, they are also commonly planted in landscape designs to attract wild bird species including cardinals, mockingbirds, finches and woodpeckers. Tepsi Kebap or “Tray Kebab” from #simplysabrina by @sabrinaghayour . I have to confess, I was literally salivating the day @sabrinaghayour cooked this recipe on @saturday.kitchen and I thought to myself: “that’s it! I’m making this tomorrow...”. And so I did! Though I’m just posting it now, this dish was devoured weeks ago and with the same joy and enthusiasm @matt.tebbutt and @theo.randall devoured the one Sabrina cooked on TV. Served over flatbreads, topped with thinly sliced red onion, coriander leaves and Greek yoghurt, once you try this kebab, you’ll become addicted to it! Absolute stunner!! In a huge mood for za’atar today!! Theres so much tang here, but not from sourdough – instead big dollops of yoghurt. 50% wholewheat manouche filled with some of my favourite things for lunch. These 145g pita dough balls are rolled out (but not too thin or they’ll turn into crackers), coated in a slurry of za’atar and olive oil and cooked in my @gozney on a low flame from around 300°C, turning often. No charring allowed for optimum fluffiness and big carb energy, as was todays emotional requirement.
