Pearl Morissette bringing the party tonight! 🍇🥳 . The Metis Rouge is an ode to quality Niagara reds: a blend of Pinot Noir (51%), Cabernet Franc (37%), and Gamay (12%). Fermentation was done partially whole-cluster (Pinot and Gamay) and partially de-stemmed (Cab Franc) with indigenous yeast. The wine was bottled unfiltered and unfined, which is noticeable as it presents with a cloudy ruby appearance. The nose is earthy and spicy with bright red fruits, and the palate bursts with jolly rancher juiciness, green pepper, and spice. Perfect Saturday night wine 💥 . François Morissette has developed a reputation as a Canadian winemaker producing high-quality wines using natural methods, including organic farming and natural yeast fermentation with no filtering. 2012 Keller G-Max - Immediately beguiling on opening. An utterly incandescent nose that I could have sniffed for hours. It smells concentrated; layers of passionfruit, lime, mango, peach vanilla and peach swirling over floral and crushed rock perfume. Crackles with tension and energy on the palate showing lime, lemon sherbet, wet rocks and pith. Generous, precise and delicate, the acid is tightly coiled, tuned to perfection over a long stony finish. Immensely powerful despite being nimble and graceful. An absolutely stunning wine. Having drunk and enjoyed a few of the 12 Kirchspiel and Hubacker GGs in the last year I’ve often found myself wondering whether the G-Max could be that much better and whether it was worth chasing. The answer to both is an emphatic yes. One of the rare occasions where a prestige cuvee lives up to the hype. Quite possibly the greatest Riesling I have ever tasted. - @doctorhesh on Instagram

For surely to uncover real bargains, where the quality IN the bottle far outweighs the price tag ON the bottle, one needs to discover hidden gems before the market has a chance to adjust! 🍇 If you’d caught Lucinda Heyns, and her wine label @illimiswines a vintage or two ago, you could have had your pioneer-early-adopter-Tom-Cruise-Home-&-Away sort of moment: “This wine is mine by destiny!” One year later though, after consecutive vintages receiving 90+ scores across almost her entire range, and finding herself inaugurated into the @timatkinmw Cape Classification for this year, the time for bargain-buys (let alone trend hunter status) is running out. BUT NOT YET, Gladiator, NOT YET! Lucinda’s Elgin Chenin, her Darling Cinsault, her power-house Barrel-fermented Riesling (yes, “powerhouse + “riesling is weird, but when you taste it you’ll see) are all priced under the R200 mark; which puts them well into the category of genuine giant killer wines. 2015. A great vintage for sure but leave them alone for another 2 decades, other than the La Romanee the rest were shut like a clam. Leroy Clos de la Roche 15. Crimson red that’s almost purple in shade, piercing red fruits, orange peel, new oak. focused, high energy, sappy, intense, everything is there but so compact at the moment it’s hardly giving any pleasure. Sylvain Cathiard VR Malconsorts 15. Dark, deep and brooding. Sweep spices, dark cherries. Ripe and rather extracted with tight grippy finish. All but a bit shut at the moment. Hudelot Noellat Richebourg 15. Expressive nose of dark cherries, plums, sweet spices. Silky, medium weight and compact. Delineated and long. Liger Belair La Romanee 15. Chateau Pichon Baron and Chateau Pichon Lalande started out life together. At the beginning, they were originally part of the same vineyard in Pauillac (Bordeaux). The chateau acquired its name like many other estates, through marriage. This happened when Therese, daughter of the founder, received the estate as a dowry when she married Jacques de Pichon Longueville, the first President of the Bordeaux Parliament. Baron Joseph de Pichon Longueville took over running the estate when he was only 19 years old. And he was at the helm until his death in 1850, at the age of 90. The family lived through three revolutions, the reign of five kings, two republics and an empire. In fact, they survived the 1789 French Revolution by renouncing to the title and becoming a “simple” farmer in Pauillac (although he did spend several weeks in prison for his dubious political leanings). However, he managed to build up an estate so successful that five years after his death it was named 2nd growth in the 1855 Classification! The wines were following in the footsteps of those of Latour at the start of the 18th century until the property was divided in favour of a succession which divided the Pauillac estate between Joseph’s five children. His two sons received two fifths of the vineyard and the wine-making facilities; his three daughters received the other three fifths of the vineyards. The men were awarded what became @pichonbaron. The women were given what was to become Chateau Pichon Lalande. Raoul, the only surviving son of the Baron Joseph, took the head of the current Pichon Longueville Baron, whilst his daughter Virginie, the wife of the count of Lalande, received the other part of the property. For a few years, both properties were overseen by Baron Raoul de before the estate was finally divided in two forever. Pichon Baron remained in the Pichon-Longueville family until 1933. BALMET / Wizard of Beaujolais, Jérôme Balmet, is back with some more magic / After working with two of the regions greats, Jean-Claude Lapalu and Mathieu Lapierre, Balmet is now on his 8th vintage in Vaux-en-Beaujolais / Out of his mere 3.5ha and bedroom-sized cellar come two wines into our hands; Lemon Head and Red Beard / Red Beard comes from his Saint-Étienne-des-Olières site just south of Brouilly and makes for more dense, concentrated wines while Lemon Head from Vaux is more lean, acidic and structured given the blue granite soils in which the vines are planted. The Künstler comparison was really interesting as the Weisserd is stuck somehere in the middle of nowhere. Not very charming. The Hölle is only doing slightly better and opens up after about an hour. Very weird to drink right now. Nonnenberg was a little bit off and I still dont get why people celebrate it that much. Sure it is a good Riesling but nothing that excites me personally. High in acidity and unbalanced. The Weinreich was certainly interesting as you dont get too many Schwarzriesling but it didnt rock my world either. Les Pagodes from the stunning 2010 was in good shape and still has some more years to come. Duediedue was decent rosso that was brought from a party. Not a knight in shining armour but a solid rosso that was fun enough to drink. The Kabinett at the end was good for the sweet tooth but its nothing I would buy again. @hartenberg_wine_estate Riesling 2017. SWIPE LEFT for TASTING NOTES 🍷 🍷 After soaking up the amazing history & heritage of Hartenberg Wine Estate, we started the tasting with the Estate Riesling 2017. Riesling is a funny topic in South Africa for me, some prefer it off dry, some prefer it sweet & some prefer it bone dry. I like all 3, but my preference is bone dry. Hartenberg have made the different examples over the years & currently sell an “Occasional Riesling” which is pretty amazing for an off dry version too. But this Riesling was expressive, complex, racy with beautiful minerality. A wine that compliments food but easily drank on its own with a good view. Serve this very chilled & experience it warming up. 🍷 🍷 This beautiful Riesling got 90 points from @timatkinmw & 91 points from @decanter & I have to say that I totally agree (not that my opinion matters nearly as much, it just backs my rating up). Hartenberg are so consistent, with their Riesling achieving between 90 and 93 points from Tim Atkins for their 2013 – 2018 vintages. Watch out for the almost released 2018 which got 93 points 😉. Now ratings are hugely contested across the industry & it’s not the most important thing, but it provides a guide or baseline to distinguish quality & consistency. Well done Hartenberg, some very distinguished people have told me this is a beautiful expression of 🇿🇦 Riesling & one of the best at it. What matters most is that I really enjoyed it. So if you haven’t tried it or begun a Riesling adventure, really do it. Les Murgers des Dents de Chien is a premier cru that sits at the very top of the eastern hill of St. Aubin, just around the corner from where the hill of Puligny-Montrachet turns west and becomes St. Aubin. The vines in this area grow on an intensely chalky, limestone marl mix from the Argovian era that is low on clay – a perfect combination for making a textured, mineral expression of Chardonnay. Named for the jagged rocks that piled up around the vineyard as the first vines were being planted, it is, along with En Remilly and La Chatenière, the heart of the best terroir in the appellation. As the vineyard is only 200 meters west of the illustrious Grand Cru Chevalier-Montrachet, it is often referred to as a baby Montrachet due to its proximity to this holy vinous site and the value that such proximity represents. Compared to its noble neighbor, the orientation is southwest as opposed to southeast, and the micro-climate skews colder due to the higher altitude and exposure to strong winds that once made achieving consistent ripeness far from guaranteed - a problem that is no longer an issue on a warming globe. When in the hands of a great young vigneron such as Pierre-Vincent Girardin, it is capable of producing a white Burgundy that can rival some of the top crus in Puligny and Chassagne. In 2018 Pierre has done exactly that, creating a hauntingly pure, complex, and saline expression of this singular site that is one of the great values in all of the Côte d’Or. Krysta & Scott Zebarth and Nicole Artopoulos here! 🍇 We are very excited to tell you about a new little project we have been working on together - Coup de Coeur by Thymiopoulos. 🍷 When Scott & I first tasted the wines of Apostolos and Eleftheri Thymiopolous with their Ontario importer Nicole Artopoulos of Victory Wines our hearts skipped a beat. These are wines of place (the place is Naoussa in Northern Greece) that are bright, vibrant, and highly drinkable. Many of you will be familiar with the Young Vines (a youngish-vine Xinomavro that is always a hit when it flies through the LCBO and SAQ shelves) and Earth and Sky (a top cuvée, snatch it up if you see it!). This grape whose name translates to ‘acid black’ can compare favourably with Pinot Noir or Nebbiolo - there is something earthy and raw, with a backbone of pure fruit and freshness. But back to THIS winel! Biodynamic Xinomavro with no added sulphur. When we tasted a similar cuvée years ago we threw a temper tantrum (aka asked Nicole and Apostolos very nicely) to get the wines in to Ontario, and now we are super honoured that Thymiopoulos has let us import this 2017 treasure. Our artist pal Gabriel Parniak designed the label and we can’t stop staring at the label with heart eyes. 😍 Would you like to taste it with us? Every year we give new life to our favorite “spent” fruits from a given harvest year by conditioning our spontaneously fermented pale wheat beer on the fruit and lees left behind after racking another fruited spontaneous beer. Sparkling Rosé of Carmine is back, baby! The 2019 harvest felt like a throwback to some of the classic cooler seasons in the Willamette Valley. While these ripening conditions are part and parcel for Pinot Noir, the sun-loving Carmine requires more heat and time on the vine to achieve full maturity. In years where ripeness isn’t quite there for a red wine, can pivot to make a rosé. We foot crushed the grapes after harvesting to pull color into the juice, pressed, and fermented in stainless. This process allows us to capture the bright red fruit flavors and gorgeous pink hue. This is our first release of a sparkling wine made from Carmine since 2012. The success of the sparkling hinges on the acid profile. Wines with softer acidity are usually better balanced for still wines, whereas wines with crisp acidity make better sparkling wines. We found such balance in 2019, and voilà--the Celebrate Rosé of Carmine makes a return after seven years. This Benoit Marguet Elements 11 Grand Cru Extra Brut NV (2.4g/l dosage) is an attractive wine made from 66% Pinot Noir and 34% Chardonnay from the village of Ambonnay in Champagne, France. The 11 on the front label represents the youngest vintage of this blend being 2011. Marguet is one of a handful of natural wine producers in Champagne using biodynamic practices on vines, wild yeasts, soils ploughed by horses, in addition to low sulfites and minimal dosage producing wines of purity and sophistication. On the nose, the wine is shows lifted aromas of bruised red apple, wild strawberry, brioche, toasted nuts, creme patissiere, white flowers, yuzu, and a touch of smoke. In the mouth the wine is crisp and fresh, showing some mineral and saline nuances. Concentrated flavours of meyer lemon, citrus rind, grapefruit, sweet butter biscuit, and a hint of oak on the palate. The acidity is racy and the finish is respectable. Provamos oito safras, de 2009 à de 2016. Se um tinha mais intensidade, como era o caso do 2012, outro prezava a concentração e profundidade, caso do 2010, todos representavam em grande estilo o Corton Charlemagne, branco balanceado mas robusto, com muita tensão, ainda que, nesse caso, tenso e tenro se enlaçam, com seu aveludado que rivaliza com tantos primorosos tintos! Il y a quelques jours, j’ai vécu un grand moment d’émotion et de partage au domaine @champagnepouillon en compagnie de @flobeaume, @champaniaque et @dylanfreitasdossantos 🥂 Un domaine incontournable qui se situe en plein cœur de la Vallée de la Marne, à Mareuil-sur-Ay. Fabrice Pouillon, à ce jour à la tête de ce vignoble d’environ 6ha, effectue un travail méticuleux à la vigne et au chai pour élaborer des champagnes gastronomiques. Ce dernier expérimente de nombreuses techniques afin de se rapprocher de l’excellence du Champagne. Ses vins sont précis, complexes et révélateurs de leur terroir. Depuis 2007, sa philosophie est d’élaborer des cuvées parcellaires avec des cépages adaptés. Sa cuvée Solera est le résultat d’un assemblage de vins issus de millésimes allant de 1997 à 2014 : une réelle explosion saveurs et d’arômes. Merci d’avoir dégorgé à la volée ce pinot meunier 1996, c’était une première pour ma part de déguster un champagne aussi assagi. Next to Champagne, Cava is one of my favorite sparkling wines. The best part is that they are inexpensive. This bottle of Jaume Serra Cristalino Brut Rose Cava was $10. Boy I could saber a case of that! . The Cava is a blend of 60% Pinot Noir and 40% Trepat. Trepat is new to me and is a red wine grape indigenous to the Catalonia region of Spain. It is mostly used in Cava. . Lots of fresh red berry on the nose with raspberry and cherry standing out. Fresh, clean, strawberry and cherry on the palate. pARTISAN CRU 2018 is getting real. #blendingsession You know why the name pARTISAN CRU? Well, there were two brothers Eduard and Peter on Majer at the begining of the 20th century. Our Grandfather Eduard always loved music and never wanted to be a farmer. So Peter, his younger brother was the one who was supossed to be the future head of the farm. But then fascists came and both brothers joined the Slovak National Uprising in 1944 and became partisans in Slovak mountains. Eduard survived, but Peter died. The truth is.. he wouldn’t fulfill his dream anyway because shortly after the WWII the fascists were replaced by the communists and nationalized all the private land for the next 40 years. Sitting comfortably on the spectrum between light red and dark rosè, for those that need easy access refreshment but with the bite of a red from warmer climes. Romaine Le Bars - Pousse Cailloux After a 7 year stint with heavy weight vigneron Eric Pfifferling Romaine now tends to 1.5 hectares in the little known Gard region of southern Rhône. Deeply expressive Syrah / Grenache carbonically macerated. Light in colour bold in flavour Limited quantities of this one Ramon Jané - Cabories A blend of almost forgotten Indigenous varietals (Mando, Sumol, Xarelo) grown in calcareous clay soils in Northern Spain. This is a bright & red fruited postmodern take on what is normally strong rooted winemaking traditions in Penedes. Happy Monday wine people! I don’t know about y’all, but I had a packed weekend and I’m really tired this morning! When I spotted this Arnot-Roberts Gamay on the shelf I had to grab it! I had only had Gamay from Beaujolais before and was excited to try it from a different terroir. This fruit was sourced from two high elevation vineyard sites in El Dorado County in CA. This one is totally a chillable red, with bright fresh tart cherry, raspberry and cranberry fruit and a really intriguing peppery and spicy note on the finish. If you like Cru Beaujolais you would enjoy this, the Gamay character really comes through. Now I’m sad that I only bought one bottle and I’ll have to see it the shop still has any left. Erfreulicherweise fokussiert sich Prinzenhaus komplett auf ökologischen Weinbau, so dass die vom Weingut @fethwein gefüllten Weine alle Demeter zertifiziert sind. Folgende Sorten / Weine gibt es im aktuellen Sortiment: Last Wednesday I had the opportunity to taste the current range of @prinzenhauswein in the team: All dry easy drinking wines, i.e. uncomplicated, but still with a certain standard. Fortunately Prinzenhaus focuses completely on organic viticulture, so that the wines bottled by the @fethwein winery are all Demeter certified. 🍊 Vin Orange ?! ❕Entre effet de mode et engouement pour cette 4ème couleur?! 📝 Récemment mis en avant, le vin orange ne date pas dhier: il serait né en Géorgie, il y a 6 000 - 8 000 ans. - Le vin orange est un type de vin issu de cépages blancs vinifié de la même façon qu’un vin rouge. - Cest en fait un vin blanc de macération : la fermentation sopère avec des raisins entiers (égrappés ou non), le jus est donc en contact avec les peaux (polyphénols et aux anthocyanes), les pépins, parfois les rafles, pendant un temps plus ou moins long. - C’est donc la macération et l’oxydation qui donnent au vin sa couleur orange. Grâce à sa singularité, le vin orange est considéré comme la 4ème couleur. 👍 Pour mon premier Pokage orange, je me suis naturellement tourné vers @byjeffcarrel (4ème mention en 40 posts 🤣). 🍷 Chat Gris Vin Orange by Jeff Carrel / 100% Grenache Gris, titre à 15%. - Macération en cuve de quelques jours avant départ en Fermentation / Pressurage / Passage à froid / Fermentation naturelle en fûts de 2 à 3 vins. - Elevage seffectue en fûts non-ouillés, assemblage de fûts après élevage de 18 à 40 mois. 😉 Jolie robe orangée, le nez est intense sur de légères notes oxydatives, noix et écorce de mandarine. 🤤 La bouche ample et dense se développe sur des épices, on y retrouve des écorces dagrumes et ces notes de rancio, noix et caramel. Treats from the weekend, Saturday and Sunday. The rosé de macération from @champagnebonnetponson is super tasty. Not challenging at all, something we keep going back to and drinking way more than we should! Delicate red fruits, minerals and salts. And it was completely elevated with some Mortadella - most wines taste better with food, but this was definitively an excellent combo. Highly recommend a bottle and a few slices! 2015 Les Mines from domaine Andrée takes me straight back to the Loire Valley. It’s a proper wine, serious rather than fun. I instantly felt like I was back in a tiny restaurant in Saumur called Bistro de la Place, in the middle of winter, eating l’onglet and frites. There’s something about the smell of Cabernet Franc when it’s this good, it feels old school and warming, charming and inviting. Definitely worth a look if you get the chance. Côte de Val Vilaine from Cédric Bouchard is always a great drop. This was from the 2016 vintage. Pinot Noir with delicious tiny berries. Quite sweet fruit this year, which made me think of dosage, but it has none. More concentrated than some other years, but still tasty as always, and a Champagne that I never hesitate to buy. 2018 en remont from @julie.balagny is young but so tasty. Darker profile, with chocolate, tamarind, spice, charcoal and blackberries. That signature texture and that constant change as it opens up. Love to drink these periodically to see how they evolve. And if course the wonderful dinner from @osteriailaria for our lockdown date night at home. So delicious, very easy to put together, and ultimately satisfying. A special moment in every winemaker’s life is when they witness their first grapes (fermented into wine) guided into bottles. It was surreal and relieving. And of course no bottling day would be normal without the typical “something going wrong”. And today it was the labeler breaking down for the Vermentino, so all 58 cases were labeled by hand! LIQUID MEMORY - Saurwein Chi Riesling 2020. If you have been following my ‘pour decisions’ for some time; this is a wine that pops up over and over. I had never paid much attention to Riesling until I was first blessed with a sip of Jessicas 2018 Chi. It was one of those wine moments that youll never forget. The wine took me by surprise; I had naively assumed all Rieslings were on the sweeter spectrum and smelt like vaseline! The Chi Riesling however, was bone dry, vibrant and intoxicating, with an inoffensive racy acidity. It is only apt that Jessica would draw my attention to this noble varietal, as a self-proclaimed Riesling warrior and at the forefront of a South African Riesling Revival. Two vintages later, and I am now no stranger to the wine, nor its beautiful maker. Tonight was the highly anticipated launch of the 2020 Chi Riesling. Follow the link in my bio for my liquid memory. TNOW Wine list 🍷📖 - Teaser #4 . La Porte St Jean, run by Sylvain Dittiere, the son in law of Charlie and Francoise Foucault covers 8.5ha around Montrueil-Bellay. Sylvain started making wine in Montreuil Bellay in 2010 when he had the opportunity to buy some Cabernet Franc vineyards. He also makes two whites Saut-Mignon (Sauvignon Blanc) and La Perlée 📸 ⬆️ (usually in Saumur but more frequently in Vin de France designation) made from 60 to 90 year old Chenin Blanc. . Wine ageing is Sylvain’s signature and he is able to take advantage of a magnificent buried tuffeau stone cellar from the 16th century whose temperature remains constant. Second hand barrels come from Haut Brion and Clos Rougeard and new oak from burgundy. Ageing is long, 24 months on average. . Were on a level rarely achieved in the Loire region with the purity of the fruit picked ripe, energy worthy of great wines & exemplary balance. Untied, complex, delicately spicy and tapered. Is there anything more quintessentially British than a cold, damp August Bank Holiday? We can’t pinkie promise to make the clouds disperse or make the mercury rise but we can offer you a little bit of English wine that is pure bottled sunshine. For this weekend only it will be £26 per bottle to celebrate the last weekend of summer, no matter the weather. Made by hand - and the occasional foot - by @gavmonery in our own Battersea winery from grapes grown within an hour of London. We could’ve called it ‘Murmuring Cherub’ or ‘Sighing Seraph’ but we’re not trying to copy what they do in Provence with this wine. This is one real passion project. With real texture and actual flavour. No way would we settle for making an anaemically challenged, neutered at birth, devoid of interest rosé. That’s not the way we do things at Vagabond. While half of the juice was fermented and aged in neutral steel tank, the other half went on an adventure into old oak barrel. That allowed it to blossom and gain a precocious amplitude. The French call the process of ageing wine ‘elevage’, which is the same word they use for the process of educating, or bringing up children. We think it sums up that barrel proportion. It’s like it went to university while the steel tank half got a tutoring in a trade. Put them both together though and you’ve got a complex and versatile whole. The previous vintage was lauded by Master of Wine Richard Hemming as ‘England’s best rosé’. Needless to say our 2018 harvest was even better. Although September is just around the corner we often forget that it’s the month we should call ’Summer Part Two’. The Eimi 2016 from Tenute Lombardo is a bone-dry, medium bodied red wine from Sicily in Italy. It has a clear, deep ruby appearance and a clean, well-developed nose that reveals delightful notes of gooseberry, raspberry, blackberry, jamminess, blackcurrant leaf, white pepper, leather. The palate is sublime, with high flavour intensity, medium-high acidity, high alcohol, medium-high tannins, and a long finish. Today, I present to you an extremely rare wine! This is the Corton Grand Cru white whose surface area is very small, around 4 ha. Not to be confused with Corton-Charlemagne, its illustrious neighbor which represents approximately 58 ha. . Mark and Gilles Moustie from Domaine de la Douaix have the chance to vinify a few bottles of this Corton Blanc. I was lucky enough to get a bottle and it is this wine that I am presenting to you today. For this Grand Cru, a cellaring period of 5 to 10 years is recommended in order to gain in complexity. What comes out in general will be, mineral, butter, crumb, cinnamon ... supple and round, elegant and pure, the Chardonnay is quite similar to its famous neighbor. . We 🧡 Meinklang Fact: we don’t import the Meinklang-wines ourselves, @coenecoopwinetraders is doing a great job there. Still we are extremely happy to be able to work with this biodynamic Austrian winery, run by the Michlits family. One year ago we had the pleasure of visiting them in Burgenland, tasting the wines in the garden and cellar, walking along the herd of black angus cows - you’ll see them on the label. Not that Riesling is overrated by any means, but Silvaner is definitely underrated! And while @kellerdalsheim ‘s is delicious (obviously - and don’t sleep on the basic one either) there’s a plethora of great old and new school Silvaner to explore. So drinkable and refreshing. Absolutely brilliant trio of bottles had over the weekend. 1996 Clos Rougeard Poyeux was by far the most youthful bottle of 1996 I’ve had from the estate. It took several hours to really get going, but had that brilliant combination of intensity without weight and tannins that are perceptible, but ever so fine. 2001 Kalin Pierres Blanches did its magic. Almost coloured like a rosé, this just exploded aromatically in the glass with dried rose petal, orange rind, spice and plenty of red fruit. Finally, the wine of the weekend: 2002 Roumier Cras. @azn.spice insisted on decanting and he was right. The last glass (5hrs after it was decanted) was by far the best and everything you could want from red Burgundy: floral, lifted aromatics with pine needles, superb detail that just has you coming back for more. On the palate this was still very youthful, with very powdery tannins, plenty of cool fruit and perfect balance. Last Sunrays before they fade to grey🥂🍾🤗... •Las Envidias• made by bodega Barco del Corneta. Very special dry white wine of 100% Palomino Fino grape variety but originating from the region Castillo y Leon (DO Rueda) -Valladolid, and not as to be expected DO Cadiz..😱😳 What an extra ordinary suprisingly elegant and interesting complexity! Great choice for these extra days of summer&chill. These Palomino Fino grapes are harvested 750mtrs above sealevel in a continental climate with cold and dry winters. The grapes are harvested manually. After 12-18hrs of maceration, the whole grapes are pressed and fermented in oak barrels with native yeasts. After fermentation it stands for 12months in these same barrels under a veil of yeast. Just a bit how sherrys are made from this grape variety only not within a solera system. This wine making allows to develop nutty aromas and light toasted notes on the palate with that slightly saline caracter with raisins and dried fruits known for sherry wines, But still with a very well balanced acidity for a complex very dry white wine with a velvet and looong very pleasant finish...just like these last summer, beginning of autumn days.
