Not gonna lie, the thought of autumn arriving soon has given me so much to look forward to in these uncertain times. 🥺🧡 It is by far my favourite season – I love the cool crisp air, the colourful leaves, and feeling all cosy in warm knits. Something about the changing of seasons feels so rejuvenating. 🍂 Last year I participated in #helloautumnweek, a drawing challenge, and it was such positive experience. It helped me get over a creative block I was experiencing at the time and make some big breakthroughs in my creative process. Chickpea curry is surprisingly simple to make at home with a few basic veggies and pantry ingredients - especially in the Instant Pot! Good for the body, good for the soul. Vegan and gluten-free! Hit SAVE to keep the full recipe, and add this to your plan for next week! . INGREDIENTS 2 tbsp olive or coconut oil 1 small yellow onion, chopped 3 medium carrots, peeled and chopped 2 tsp fresh ginger, grated or minced 3-4 medium cloves garlic, minced 2 tbsp curry powder 2 tbsp garam masala 1/2 tsp salt 1 (14 oz) can full-fat coconut milk 1 (14.5 oz) can fire-roasted crushed tomatoes 1 (15 oz) can chickpeas, drained and rinsed 1 red bell pepper, chopped 2 cups kale, chopped honey rice and/or naan ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INSTRUCTIONS Warm oil in the Instant Pot on sauté; add onion and carrots. Cook, stirring frequently, 2-3 minutes. Add ginger, garlic, curry powder, garam masala, and salt. Cook 30-60 seconds, stirring constantly. Stir in coconut milk, tomatoes, and chickpeas; scrape bottom of the pot well to release any browned bits. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Seal and cook on high pressure for 5 minutes. Naturally release for 5 minutes, then quick release. Leave on keep warm, open lid, and stir in the chopped pepper and kale, along with 1 tbsp honey. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Taste the curry; if you find it bitter, add an extra 1-2 tbsp honey, or add it to taste w/ portions. Get yourself best friends who send you recipes all day 🍽 my bestie @arielle_lauren sent me this @delish recipe and I was super excited to try it, especially after finding my late grandma’s @lecreuset Dutch oven in the garage. Perfect for those chilly nights, a few tweaks makes this already yummy dish super delicious. Creamy Parm Tomato Soup 🍅 🍲 1 tbsp. butter 1/2 onion, diced 2 cloves garlic, minced 4 tsp. @centofinefoods Italian seasoning 1/2 tsp. red pepper flakes 3 tbsp. flour 5 c. chicken broth 2 (14.5-oz.) can fire roasted diced tomatoes 3 tbsp. @centofinefoods tomato paste 4 c. cheese or meat tortellini (I did 2 cup chicken 2 cup cheese tortellini) 1/3 c. cream 1 c. freshly grated Parmesan 3 c. spinach, packed Freshly ground black pepper, salt to taste Basil or parsley to garnish In a large pot over medium heat, melt butter. Add onion and cook until translucent. Add garlic and cook until fragrant. Add Italian seasoning, red pepper flakes, and flour and whisk to combine. Add broth, tomatoes, tomato paste, and tortellini. Bring to a boil, and then simmer until tortellini is cooked, about 10 minutes. Add the cream and Parmesan and stir to combine. Add spinach and let wilt. Season with salt and pepper. Garnish and serve! Note: if the soup seems too much like tomato sauce, add more chicken broth to thin it out. CREAMY HONEY MUSTARD SHREDDED CHICKEN + MASHED CARROT BOWL 🍯 ▫️▫️▫️ Talk about comforting! This bowl had all the cozy, warm feels. I used my crockpot to slow cook this creamy, dairy-free honey mustard chicken that paired perfectly with the sweet mashed carrots 🥕 So creamy + delicious! Not a carrot fan? Try this with mashed sweet potatoes or cauliflower! ▫️▫️▫️ Ingredients: - 1 large or two medium-sized chicken breasts - 5-6 large carrots - 1/2 cup canned coconut milk - 1/3 cup raw honey - 1/4 cup yellow mustard - 3 tbsp stone ground mustard - 1 tsp fresh lemon juice - salt - 1 garlic clove, pressed - butter or ghee (I used dairy-free butter) - optional garnish: fresh chopped parsley ▫️▫️▫️ 1. Place your chicken breast in your crock pot and salt well. 2. In a separate dish, mix together the coconut milk, honey, yellow mustard, stone ground mustard, and lemon juice. 3. Pour mixture over your chicken and set on Low. Cook for 3-4 hours. 4. Use two forks to shred up your chicken. 5. Peel and chop your carrots. Boil them in a pot of boiling water until super tender. Drain water and add to safe bowl. 6. Use a masher to mash up your carrots with some butter + salt + garlic + small squeeze of lemon juice. *I finished mine in my food processor to get them a little bit smoother. 7. Rosti Style Huevos Rancheros 😍 1. Fry 1 large potato spread out in the pan for 3-4 minutes each side, season well. 2. For the salsa - In a separate pan add 1 finely diced red onion, 2 finely chopped birds eye chillies, 1 finely diced red and 1 green pepper, 30g sweetcorn (from a tin drained), 8 fresh chopped tomatoes keep the seeds, 150ml tomato passata, 250g washed and rinsed tinned kidney beans. Fry everything in oil and butter for 5mins in a frying pan or sautee pan (needs to have a lid). Add some chopped coriander. 3. Spoon over the rosti, crack in 3 eggs, into holes you make in the salsa. season and cover. 4. Cook until the eggs are just done (3-4 minutes) 5. Mix 1 crushed avocado with the juice and zest of 1 lime and 30g sour cream. 6. When done spoon on the avocado mix, top with sunflower seeds and coriander and some lime wedges. 7. Harira with morels! _ Harira is a Moroccan chickpea and lentil soup thats popular for breaking the fast after Yom Kippur and for the iftar dinner during Ramadan. _ Today instead of making harira with meat, I added morels, which have a meaty texture and a distinctive flavor. Actually, I wasnt planning to add them until Yakir came into the kitchen to photograph the soup and asked, Why not add morels? _ Often harira is flavored with the North African spice blend ras el hanout, which contains over a dozen spices & varies from one family or spice company to another. _ First I sauteed a diced zucchini in olive oil & removed it from the saucepan. I heated more olive oil in the pan, added chopped onion and cooked it until light golden. Next I added minced garlic, sauteed it briefly, and added vegetable broth and a whole organic baby Jewel yam in the soup. When it was tender, I removed it & sliced it. _ Next I added 1/2 cup Italian canned organic crushed tomatoes, 1 tsp spice blend & the soaked dried morels & a few tablespoons of their soaking liquid and cooked them in the soup for 5 minutes. Not only was it a fun Fall activity and great for Letter Recognition and beginning sounds but it’s so good for Fine Motor development and hand eye coordination and who doesn’t love just hammering? I made some holes to make it a little easier for my little one as she was struggling a little with the initial holes. She picked out a letter , found it and hammered a plastic golf tee into the letter. She made the sound of the letter and tried to think of a word that began with the letter. Roast, turning apples, until squash is tender and apples are golden brown (25 min for apples and 45 min for squash). 4️⃣HEAT 1 tbsp olive oil in a pot over medium heat. Add the onions and garlic and cook for 6 min. 5️⃣ADD the chicken broth & bring to a simmer. 6️⃣STIR in yogurt and mix until soup is thick. 7️⃣SCOOP half of squash into blender w/ half of apples and half of broth mixture. Purée until smooth. Repeat w/ remaining ingredients. 8️⃣SEASON soup to taste. Throw in cinnamon. Making a curry at home has never been easier thanks to the wonderful consistency of cream of mushroom soup!⁣ ⁣ Ingredients:⁣ ⁣ • 1 ¼ lbs. boneless, skinless chicken thighs ⁣ • 2 T. olive oil⁣ • 1 T. curry powder ⁣ • 1 (10.5oz.) can cream of mushroom soup⁣ • ½ c. milk⁣ • 2 lbs. sweet potato, peeled & cut into 1-in. pieces (about 4 c.)⁣ • 8 c. loosely packed spinach or kale⁣ ⁣ Method:⁣ ⁣ Step 1: Season the chicken as desired. Heat the oil in a 12-in. skillet over med-high heat. Add the chicken and cook until browned on both sides. Remove the chicken from the skillet.⁣ ⁣ Step 2: Add the curry powder to the skillet and cook and stir for 1 min. Add the soup and milk and stir until smooth. Add the potatoes and heat to a boil. Reduce the heat to low. Cover and cook for 25 min. or until the potatoes are tender.⁣ ⁣ Step 3: Return the chicken to the skillet. Add the spinach. Cover and cook for 5 min. or until the chicken is cooked through and the spinach is wilted, stirring occasionally. You guys know I’m obsessed with roasted carrots and the restaurant dish I miss most since leaving NYC are the roasted carrots from @vicsnewyork! We’re obsessed, but I recreated them at home thanks to this month’s box of goodies from @calorganicfarms! . Oh and if anyone ever tells you that a vegetable is too high in sugar, please run far from that advice! Recently a popular diet was talking sh*t about carrots, and well, I gotta defend these babies! They’re full of fiber, beta carotene, antioxidants and more! 🙌🏼 . 🥕 DILL ROASTED CARROTS: Preheat oven to 375F. Toss 4 cups sliced carrots (~1/4” thick on the diagonal) and 1/2 red onion thinly sliced in 1 tbsp olive oil and 3 tbsps chopped dill. Spread onto a parchment paper lined baking sheet and roast for 35-40 minutes, until soft to fork. Transfer to a bowl and toss in another 2 tablespoons fresh dill and 1 tbsp capers. Enjoy! . Veggie coconut soup by @VeganReset 🌱 Full recipe 🌱⠀ ⠀ (serves 4)⠀ ⠀ Ingredients:⠀ 1 large onion⠀ 2 garlic cloves, minced⠀ 3 large carrots⠀ 4 cups pumpkin or butternut squash, peeled and cubed (not puréed), seeds removed⠀ 1 small kohlrabi, peeled (optional)⠀ 4 cups of water + 1 tbsp vegetable broth paste (or 4 cups of vegetable broth)⠀ Sea salt to taste⠀ 1 leek, white part only (you can add the green part too, it’ll just slightly modify the color & taste of the soup)⠀ 1 orange or red bell pepper, seeds removed⠀ 1 can of full fat coconut milk (400mL)⠀ ⠀ Toppings:⠀ ⠀ Olive oil drizzle⠀ Freshly ground pepper⠀ Chopped fresh parsley⠀ ⠀ Directions:⠀ ⠀ 1. L A T E S U M M E R As the summer heat cools, we can feel the energy of the earth element. The earth element represents the fifth season, known as Late Summer 🌞. Late Summer spans August to mid-September, and is categorised by a mix of warm summer rays ☀️ and storms ⛈.⁣⁣ Late Summer is when we should focus on nurturing our centre, grounding ourselves and preparing for the season of harvest before the winter months. The organ pair associated with the earth element are the stomach and Spleen. Foods that target these organs are surface vegetables, rounded, yellow-orange colour and naturally sweet in flavour - think pumpkin 🎃, squash, onions 🧅, sweet potatoes, chickpeas, lentils, oats. We should start to include more longer cooking methods into our diet, such as soups, stews and broths that add more warmth into the body. A perfect dish for the season we enter is this veggie chilli made with chickpeas & canellini beans. Full of protein, fibre and other nutrients - its a super easy and nutritious dish to make thats great if youre running low on fresh veg. How to: - sauté garlic, chilli & onion in oil in a pan - add 2 x cans tinned tomatoes, 1 tbsp maple syrup & a squeeze of tomato puree - add in drained pulses of choice (I used chickpea & canellini beans) - add in veg (I used broc as that was all I had!) - season with salt, pepper & chilli flakes - allow to simmer for 15 on low - serve with rice, or gluten-free pasta! (I had it with corn pasta and it was delicious!) 😋 BEEF SEAWEED SOUP 🥣 (aka MIYEOK GUK 🇰🇷) INGREDIENTS FOR KOREAN SEAWEED SOUP, 3-4 SERVINGS MAIN 15 g / 0.5 ounces dried seaweed (Miyeok / wakame) 120 g / 4.2 ounces beef chuck or round steak, sliced into smaller pieces 1/4 tsp fine sea salt (or more to taste) A few cracks black pepper 1 Tbsp sesame oil 1 1/2 Tbsp soy sauce (I used regular Kikkoman soy sauce) 1 tsp minced garlic 5 cups water HOW TO MAKE KOREAN BEEF SEAWEED SOUP 1. Soak the dried seaweed in cold water for 5 to 10 minutes while allowing it to expand. Drain the water away and rinse the seaweed a couple of times in running water. Drain/squeeze the water out. (If you’re using non pre-cut dried seaweed, cut it with scissors – about little finger lengths). Set it aside. 2. Combine the sliced beef with the salt and black pepper in a small bowl. Mix them well and set aside until needed. 3. Pre heat a medium pot over medium heat (about 20 seconds). Add the sesame oil, seaweed and beef. Stir them well until the beef is partly cooked (about 2 mins). Add the soy sauce, garlic and water. Cover the pot and boil over medium – medium high heat until the meat is fully cooked (10 to 15 mins). Adjust the taste with more salt if needed. 4. Spanish-Style White Bean & Potato Stew Ingredients 1 tablespoon olive oil 1/2 medium onion diced 2 cloves of garlic finely diced 1 teaspoon dried basil 3/4 teaspoon smoked paprika 1/4 cup (60 ml) dry white wine 1 can (14 oz / 400 ml) whole or diced tomatoes  1 cup (250 ml) vegetable stock 2 medium potatoes peeled and diced 1 can (14 oz / 400 ml) white beans drained and rinsed 2 large handfuls chopped spinach 1/2 teaspoon salt or to taste pepper to taste Optional garnish: fresh basil Instructions Heat the oil in a medium pot over medium heat. Add the onion and sautee until tender then add the garlic and sautee until soft. Add the basil and smoked paprika. Stir for just a couple seconds to release the flavour but no more than that because paprika can burn easily. Add the white wine and allow to simmer for about 2 minutes to evaporate the alcohol. Add the tomatoes. If using whole tomatoes, break them up with your spoon into chunks then add the stock and potatoes. Bring to a simmer then cover and reduce the heat to low. Simmer until the potatoes are tender, stirring from time to time to make sure it’s not sticking - about 15 minutes. Uncover and add the beans, spinach, salt and pepper. Simmer for a couple more minutes to heat the beans through and wilt the spinach. I’m sharing the recipe for this Easy Vegetable Stew (vegan & gf) with you today - takes 45 mins to make and will leave you with 4+ portions for the week. It’s one of my favourite stew recipes ever - so hearty, rich and delicious. Perfect for when the days get slightly cooler! Recipe below👇🏻and on the blog (link in profile). As always, if you make it I’d LOVE if you could leave a star rating on the blog - makes all the difference to how google ranks my recipes and I’d be so grateful. 🤗 Easy Vegetable Stew - Ingredients •1 medium onion, finely chopped •1 large stick of celery, diced •2 medium potatoes, chopped into 2cm cubes (3 heaped cups) •2 large carrots, diced •1 tbsp ground dried sage •1½ tbsp ground dried rosemary •1 vegetable stock cube •1 cup uncooked red lentils (soaked for 2 hours if preferred) •4-5 cups water •3 cups broccoli, cut into small florets •½ tbsp Braggs soy seasoning, or tamari (soy sauce) •1 cup dark leafy greens, like collards, kale or spinach (optional) •Salt & pepper to taste Instructions In a large saucepan with a lid, steam sauté the onion in a small amount of water for 5 minutes on a medium heat. If it begins to stick, just add a bit more water and keep stirring. Add the celery, potatoes, carrot, sage, rosemary, stock cube, lentils and water to the pan and bring to the boil. Reduce the heat and cook, covered, for 10 minutes, stirring now and then. The potato should be just tender. Add the broccoli and cook for a further 10 minutes (or until the lentils have become mush), stirring occasionally. Add the Braggs, salt and pepper to taste, and the leafy greens. Cook for 3 more minutes, or until the greens have wilted. Serve immediately in bowls. (Also keeps well in the fridge for several days. Reheat when needed.) - @vancouverwithlove on Instagram

Save this post👇 📷 and recipe from @minimalistbaker Who’s excited for soup season?!🍜 There is an abundance of squash at the market right now, and you can swap out for pumpkin or acorn if that’s what you have available🎃 Curried Butternut Squash Soup Ingredients: •1 Tbsp coconut or avocado oil •2 medium shallots (diced) •2 cloves garlic (minced) •6 cups peeled & chopped butternut squash (~6 cups) •1 pinch sea salt + pepper •1 1/2 Tbsp curry powder •1/4 tsp ground cinnamon •1 can coconut milk •2 cups vegetable broth •1-3 Tbsp maple syrup •1-3 tsp chilli garlic paste For Serving: •toasted pumpkin seeds •chilli garlic paste •full fat coconut milk Instructions: 1. Heat large pot over medium heat. 2. Once hot, add oil, shallots, and garlic. Sauté for 2 minutes, stir frequently. 3. Add squash and season with salt, pepper, curry powder, ground cinnamon. Stir. Cover and cook for 4 minutes stirring occasionally. 4. Add coconut milk, broth, maple syrup, and chilli garlic paste. 5. Bring to a low boil and then reduce heat to low, cover, and simmer for 15 minutes (or until squash is fork tender). 6. Using an immersion blender or blender and purée on high until creamy. Return soup back to pot. 7. Taste and adjust seasoning. Continue cooking for a few more minutes over medium heat. 8. Serve as is or with garnishes mentioned above. Store leftovers in fridge for 3-4 days or freezer up to 1 month. ¿Qué les parece una sopa de zanahoria, jengibre y coco para la cena? Aquí les dejamos la receta que nos comparte @gabriella.reginato para que la prueben en casa: Ingredientes 3 Zanahorias medianas 1 Cebolla blanca 2 Dientes de ajo 1 Pieza de jengibre 4 Tazas de caldo de vegetales 1 taza de leche de coco ½ Limon 3 Cucharadas de aceite de oliva Sal y pimienta al gusto Preparación En una olla agregamos el aceite de oliva e incorporamos la cebolla en cubos, ajo y las zanahorias en cubos igualmente, damos toque de sal y pimienta y cocinamos por unos 7 minutos. Luego incorporamos el jengibre y el caldo de vegetales. Dejamos hervir, tapado, por unos 20 minutos. Apagamos y dejamos reposar por unos 10 minutos. Luego llevamos a licuar, agregamos la leche de coco y el zumo de limón, damos toque de sal y pimienta. I absolutely love making and experimenting with soup recipes, especially this time of year! Soups as so nourishing for the body and great such a powerful healing broth. Their high water content from broth & vegetables can also help satisfy your appetite and keep you hydrated. Minestrone was always my favorite soup growing up so its no secret its my favorite now. I took my traditional Minestrone recipe & took it to the next level with a pumpkin twist. Pumpkin is high in vitamin A which functions as an antioxidant to reduce the risk of many chronic disease. It’s packed with other vitamins that help boost immunity, protect eye sight, is nutrient dense, and low in calories. This recipe also provides you with incredible immune boosting & antibacterial herbs. Sage has antimicrobial properties. This means they keep infectious bacteria, viruses, and fungi at bay. Nutmeg contains calcium, iron, potassium, manganese, etc., which are all essential for various functions in the body. 🍂 • pumpkin soup• 🍂 Nun ist er wirklich da, der Herbst. Um 20 Uhr ist es schon wieder dunkel und kalt 😕. Da braucht man dann wieder öfter eine wärmende Suppe. Wie wäre es mit dieser cremigen Kürbissuppe? Für zwei Portionen benötigst du: • 1 kleinen Hokkaido Kürbis • 1 Zwiebel • 4 cm frischen Ingwer • 1 Knoblauchzehe • ca. 600ml Gemüsebrühe • etwas Erdnussöl • Pfeffer, Salz, Muskatnuss, Paprika, Chili Den Kürbis abwaschen, Endstücke abschneiden, halbieren, entkernen und in kleine Stücke schneiden. Zwiebel, Knoblauch und Ingwer ebenfalls schälen, klein schneiden und im Erdnussöl andünsten. Anschließend die Kürbisstücke dazu geben und kurz anbraten. Gemüsebrühe aufgießen und ca. 15-20 Min. leicht köcheln lassen. Alles fein pürieren und mit Pfeffer, Salz, Muskatnuss, Paprika und Chili abschmecken. Getoppt habe ich die Suppe noch mit Kürbiskernöl und Kürbiskernen. Creamy Toasted Tomato and Carrot Soup by @youeatlikearabbit 🧡 A perfectly comforting and creamy bowl of soup to warm you on cold nights! 😋 ​_ ​Save this recipe for your next hearty meal!  _ 👉 WHAT YOU NEED⁣ roast:⁣ 5 tomatoes on the vine, quartered⁣ 5 cloves garlic, smashed with knife left whole⁣ 1/2 onion, roughly chopped⁣ salt + pepper⁣ olive oil⁣, optional ⁣ boil: 6 carrots, roughly chopped⁣ 4 cups broth⁣ ⁣ blend: 1 can chickpeas, drained and rinsed⁣ 1 cup water ⁣ 1 t salt ⁣ 2 t apple cider vinegar pepper, to taste⁣ ⁣ HOW TO MAKE Preheat oven to 425 degrees, place the vegetables on a baking pan and lightly drizzle with olive oil. Evenly season with salt and pepper. Bake in oven for 25-30 minutes. ⁣ ⁣ While vegetables are cooking, bring 4 cups of broth to a boil and add carrots. Cover and reduce to a simmer until fork tender. ⁣ ⁣ Transfer carrot/broth mixture to a blender. Blend on high for at least 1 minute until smooth. Transfer back into soup pot. Transfer roasted vegetables into blender next, along with the chickpeas, water, salt, pepper to taste, and apple cider vinegar. Blend on high speed for at least 1 minute, until smooth. Transfer to large soup pan with carrot mixture. Is it weird that I can call something this beautiful “a typical Monday dinner?” This might look like it took forever and was SO difficult but in reality, it’s a pretty simple meal just plated to look stunning! I got this idea from @jocooks and modified it a tad! This is a 3 pound pork roast rubbed down with olive oil, thyme, basil, parsley and a pinch of red pepper flakes. I then seared it about 3 minutes per side and roasted for an hour. Also on the plate is a crazy easy cannellini bean & bacon mixture. Seriously just cook up then chop bacon and add chicken broth, herbs, and red wine vinegar and simmer for 20 minutes. I served this with steamed haricot verts. And yeah - there’s your “casual Monday” dinner!
