After weeks of maceration that follow the alcoholic fermentation, when the wine in the making is ready to be aged, the cellar master launches the devatting stage.The day before, the free-run wine is taken out of the tank and on the day, we enter the tank to take out the grape pomace... with a fork. Physical work ... but always in a good mood to beat the record of 42 minutes to devat a tank of 294 hl ! Azienda che nasce nel 1971 quando Arnaldo Caprai acquista 45 ettari a Montefalco, ed oggi il figlio Marco gestisce più di 130 ettari, valorizzando il vitigno Sagrantino, infatti erano state fatte poche ricerche sul Sagrantino prima dell’ inizio degli anni Novanta, quando appunto Marco Caprai, inizió i suoi sperimenti in vigna e in cantina, riscuotendo un successo a livello mondiale, dimostrando che il Sagrantino è una delle grandi uve d’ Italia.🍇🔝🌱🍷 Questo Montefalco Rosso 2017 composto da Sangiovese 70%, Merlot 15% e Sagrantino 15% che fa un affinamento di 18 mesi e si presenta al naso con profumi di mora, liquirizia e ginepro; in bocca una buona freschezza ed alcolicità. Oggi vogliamo portare sul tavolo una di queste bottiglie. La cantina @santacristinawines è di per sé una garanzia, dal 1946 produttori di vini di qualità, sono situati in un’alta collina della Toscana non lontano da Siena e Perugia. E’ proprio il nome della regione a comparire in etichetta, evidente l’intento di valorizzare il territorio, con ispirazione allo stile francese di portare in etichetta il nome del cru. Toscana IGT 2018 è un blend di diversi vitigni: Merlot, Syrah, Cabernet e Sangiovese. Ogni varietà viene vinificata separatamente in acciaio inox 🍷 👀 Alla vista si presenta rosso rubino con riflessi violacei che preannunciano un vino giovane e fresco. 👃 Al naso sorprende per la sua potenza e complessità, emergono infatti sentori fruttati e floreali, note speziate di pepe ed erbacee come la foglia di pomodoro. Tale varietà di sentori è data probabilmente dalla grande varietà di vitigni che compone il blend (nota speziata dallo Syrah, erbacea dal Cabernet). 👄 La stessa potenza avvertita in precedenza la troviamo anche in bocca, è secco, deciso, con una spiccata acidità accompagnata da una giusta sapidità, un tannino avvolgente ed un tocco di morbidezza dato dall’alcool (13 gradi). La chiusura ricorda la mandorla amara, piacevole e abbastanza persistente. La bottiglia viene proposta ad un prezzo che riteniamo davvero ottimo rapportato alle qualità di questo vino e ci sentiamo di consigliarvela. Del Nonno 2018 Coda di volpe 100% @aziendaagricoladellangelo H ποικιλία Coda di Volpe (Ουρά της Αλεπούς – έχει αυτό το όνομα εξαιτίας της μορφής του τσαμπιού που μοιάζει με Ουρά Αλεπούς) είναι γνωστό ότι καλλιεργείται κυρίως στο Tufo και στους υπόλοιπους 7 δήμους της DOCG. Η νομοθεσία επιτρέπει στην παραγωγή του Greco di Tufo την χρήση της ποικιλίας σε μέγιστο βαθμό 15% (τουλάχιστον στα χαρτιά, γιατί σήμερα όλοι οι παραγωγοί παράγουν τα κρασιά τους με 100% σταφύλια από την ποικιλία Γκρέκο). Η ποικιλία Coda di Volpe χρησίμευε για τον μετριασμό της έντονης οξύτητας που έχει το Γκρέκο. Μέχρι πριν λίγα χρόνια, η περιοχή με τα αμπέλια που βρίσκονται στο Tufo με τα πλούσια κοιτάσματα θείου, είχε σχεδόν μηδενιστεί, γιατί στα χρόνια του μπουμ με τα κρασιά από το Τούφο κανένα από τα μεγάλα οινοποιεία δεν ήταν πρόθυμο να πληρώσει την ίδια τιμή με το Γκρέκο, για τον λόγο αυτό η παραγωγή της σχεδόν μηδενίστηκε. Το 2014 ο Angelo Muto αναφύτεψε περίπου 3 στρέμματα σε ένα μικρό οικόπεδο που ανήκε στον παππού του (Nonno Angelo από εκεί και το όνομα της ετικέτας) στην τοποθεσία του Σαν Μάρκο. Λόγω του παγετού του 2016, έπρεπε να περιμένει τη συγκομιδή του 2017 για να έχει τα πρώτα τσαμπιά, ενώ από την συγκομιδή του 2018 κυκλοφόρησαν και τα πρώτα μπουκάλια. Το δόγμα της οινοποίησης δεν διαφέρει πολύ από αυτό που εμπνέει την παραγωγή τόσο του greco di Tufo Miniere όσο και του Torrefavale, η οποία προβλέπει 12 μήνες παραμονή στις οινολάσπες. 🥂🍷I RAMPLJUSET 🍷🥂 🏞 Vingården Boschkloof köptes 1995 av familjen Borman, och namngavs efter den naturliga ravinen (kloof på tyska) på gården. Från början styrdes gården av pappa Jacques Borman, men numera har ägorna överlåtits till sonen, tillika en av Sydafrikas mest lovande unga vinproducenter, Reenen Borman. 🍇 Jorden på gården består mestadels av sönderdelad granit och kaffeklipp. Från början odlades mestadels Riesling på fälten, men numera hittas här istället druvor som Syrah, Cabernet Sauvignon och Chardonnay. 🇿🇦 Gården, som är på 25 hektar, grundades ursprungligen 1679 av kommendör Simon van der Stell som en ny bosättning för de holländska kolonisterna vid Godahoppsudden. Harvest series continues with 🍇✨🍷FERMENTATION✨🍷⁣⁣ ⁣⁣ The very process that turns grape juice into the wine we love! Wouldn’t be possible without magical little yeast that consume sugars, turning them into alcohol (plus carbon dioxide & some other byproducts). ⁣⁣ ⁣⁣ This is the most complex part of winemaking. Not to mention that there’s countless yeast strains to choose from depending on variety and a whole other number of factors. ⁣⁣ ⁣⁣ So, let’s keep it simple for this post with a few winemaking considerations around fermentation. ⁣⁣ ⁣⁣ 🍇✨ Spontaneous fermentation vs. yeast inoculation ⁣⁣ All grapes have yeasts naturally on their skins & there are yeasts in the winery, so fermentation will begin spontaneously. Some winemakers may choose to inoculate with yeast cultures to start fermentation or for desired effects certain yeast strains may have on a wine. ⁣⁣ ⁣⁣ 🍇✨ Fermentation Vessel - winemakers can choose from a whole range of vessels for fermentation⁣⁣ Steel tanks (the easiest to clean!), Concrete tanks (allow for the tiniest bit of micro-oxygenation),Concrete Eggs, Oak barrels (barrel fermentation gives a softer, rounder mouthfeel & texture), amphorae...⁣⁣ ⁣⁣ 🍇✨ Cap management ⁣⁣ As CO2 & heat are released during fermentation, the grape skins are pushed to the top of the wine, forming a cap. Punch downs or pump overs are used to wet the cap & ensure the grapes skins stay in contact with the juice. ⁣⁣ ⁣⁣ Pump overs are a bit more gentle, taking juice from the bottom of the tank & pumping it back over the cap. Piegage is also a gentler form of punching down, using your feet to break up the cap. ⁣⁣ ⁣⁣ Punch downs/pump overs are usually done 2x per day AM & PM, depending on the winemaker’s goals. Temperature & brix measured 2x daily to monitor fermentation. A quiet week in the distillery while we wait on our agave to finish fermenting means climbing up barrel racks to pull a sample and see how things are progressing. No complaints here! This particular pull is of some High Rye Bourbon. It is incredible how much the barrel has rounded out the rough white spirit in only a few months. Sparkling Rosé of Carmine is back, baby! The 2019 harvest felt like a throwback to some of the classic cooler seasons in the Willamette Valley. While these ripening conditions are part and parcel for Pinot Noir, the sun-loving Carmine requires more heat and time on the vine to achieve full maturity. In years where ripeness isn’t quite there for a red wine, can pivot to make a rosé. We foot crushed the grapes after harvesting to pull color into the juice, pressed, and fermented in stainless. This process allows us to capture the bright red fruit flavors and gorgeous pink hue. This is our first release of a sparkling wine made from Carmine since 2012. The success of the sparkling hinges on the acid profile. Wines with softer acidity are usually better balanced for still wines, whereas wines with crisp acidity make better sparkling wines. We found such balance in 2019, and voilà--the Celebrate Rosé of Carmine makes a return after seven years. Mai essere così snob e prevenuti da evitare le aziende che hanno scritto la storia di interi territori. Visitare @contratto1867 è unesperienza che tutti gli amanti del vino e dei metodo classico dovrebbero fare almeno una volta nella vita. Luogo di un fascino unico. Nei suoi 151 anni di storia, la Contratto è passata dal produrre Moscato e vini fermi, agli Spumanti Metodo Classico, tonici e Vermouth. La cantina storica, ora patrimonio UNESCO, è a dir poco suggestiva. Una vera e propria cattedrale sotterranea si estende per più di 5000 metri quadrati; scavata nella marna che compone la collina alle spalle della piccola città di Canelli, arriva a raggiungere una profondità di 32 metri. Lazienda produce solo vini non dosati (rarissimamente capita di avere un residuo di fermentazione ma non viene mai aggiunta liqueur). Avevo avuto qualche delusione in passato dai vini di questa realtà ma da quando sono arrivati i Rivetti (nel 2011) la qualità dei vini è salita e continua a crescere. Zum Beispiel den bekannten und sympathischen Wiener Schneckenproduzent Andreas Gugumuck. Sério, dêem uma olhada no site deles que só tem coisa boa lá, todos aprovados pelo povo que entende muito do riscado!). Este Pinot da @vinicola_torcello foi uma experiência muito legal! Vinho como o vinho tem que ser. Vinho para matar a sede e vinho para ser contemplado. Notas de vindima do Enólogo David Ferreira: A Vindima das castas brancas começou muito cedo este ano, no início do mês de Agosto, cerca de 15 dias antes da data habitual. A uva encontrou-se sã e com excelente equilibrio entre acidez e açúcares. Já foram vindimadas as castas Sauvignon Blanc, Moscatel Galego, Fernão Pires e Verdelho, em vinhas inseridas numa zona de solos arenosos que denominamos “Vinha da Lagoa” e a “Vinha do Ninho”. Entramos, agora, na vindima das castas tintas. Montecucco is us! 🍷 From the harshness of rural life comes the name of the farm that we introduce today: Poggio Stenti (Stenti is the Italian word for efforts). From the grandparents of the Pieri family comes the heritage guarded over the years. The farm, today run by Carlo, covers 30 hectares of land among vineyards - mainly Sangiovese and Vermentino grapes in the heart of the Montecucco DOCG (Montenero dOrcia) production area - olive groves and arable land of barley, spelt and wheat. The Pieri family also breeds animals and does it with organic feedstuffs produced by the same farm, to guarantee the animals a correct diet and the right wellbeing. ❓Guess The Winery❓ Quella che sto per raccontarvi è una storia che nemmeno il più ottimista dei favolisti classici sarebbe riuscito ad immaginare. Nasce tutto dal sogno di una coppia di mezza età di trascorrere la propria esistenza in un luogo di pace, immersi nella natura. E così che nel 1984 Virgilio e Rita decidono di acquistare quella che in pochi anni diventerà una delle aziende più rappresentative del panorama vitivinicolo italiano e mondiale. Un rudere da ristrutturare, 9 ettari di terra di cui soltanto 1 di vigneto, una passione per il vino e per la campagna che cambieranno per sempre la loro vita. Ultimo indizio: laffresco che vedete tra le barrique è del pittore toscano Raffaele De Rosa, a cui si devono anche tutte le etichette dei vini dellazienda.
