The wait is over! Join us in following the journey of the Cayuga White grape from Vine to Wine! . . The first step in making sure we always put our best grape forward is collecting and testing samples of the grape. Head Winemaker Chris Stamp took samples of the Cayuga earlier this week and had this to say: “To take grape samples we walk down several rows of the vineyard block and pick berries from both sides of the canopy, ensuring not to select the biggest or ripest or least ripe. We want our berry sample to mimic what would be harvested by our machine picker. In the samples we are looking at the sugars, acid, and ph. That all gets done in the lab. Of course we taste the grape too! We want to make sure that it is at the optimal ripeness for the wine we are making. In Cayuga we are looking for some peach flavors and about 9 grams/liter of acid which gives our Candeo a nice tartness. We don’t want the sugars too high because it’s not a high alcohol wine. The Cayuga lends itself to lighter style wines and works well for carbonated wines!” . Happy Tuesday wine lovers! I thought it’d be fun to do a harvest series this week… First up, let’s talk VINEYARD SAMPLING 🍇 Prior to actually harvesting the grapes, the winemaking team is out in the vineyards daily assessing the fruit. 1️⃣ Using the senses 👀👅 🤲🏻 🍇Considering how the grapes progress from veraison to maturity 🍇How thick/thin are the skins? 🍇Has the skin softened? 🍇Is the flesh separating from the skin 🍇Are the seeds green or brown (brown indicating ripeness)? 🍇How do they taste? 🍇Are they getting too much sun or not enough? 🍇Are the plants still healthy and looking good…. The senses can often tell you more pertinent info than lab results alone. 2️⃣ Vineyard sampling for the lab 🤓The grapes are sampled (see stories) & assessed in the lab for: 🍇Brix: refers to the number of grams of sucrose per 100 grams of liquid. 1 gram of sugar converts to around 1/2 gram of alcohol. Generally, Brix x 0.59 gives you an estimated alcohol (but conversions range) 🍇🍇 Note - Countries outside America also use baumé, babo and/or density (the latter of which is most accurate, but we’ll save these for another post.) 🍇pH: plays a critical role in different aspects of winemaking, most notably a wine’s stability. (pH measures the strength/concentration of dissociated acids present & is calculated using the concentration of hydrogen ions) 🍇TA: titratable acidity which gives an approximation of the total acidity (I.e. a measure of perceivable acidity. Total acidity on the other hand more accurately measures total acid content.) Among other things. Depending on the winery, the decision for when to pick is based on the results of lab analysis, what you saw/tasted/touched in the vineyard, or a combination of both. Pick times are then scheduled based on the weather + other factors. If it’s hotter than hell that day, grapes will be harvested in the early hours of the morning before the ☀️ comes out to maintain freshness. Robert 2020 Royal St. Robert Is showing beautifully. Without question the cluster quality and overall vine health is as good as we have seen since beginning RAEN. The years dedicated to permaculture and biodynamic farming principles are now just starting to show 🙌. The first couple years under our guidance were challenging as the soil microbiome began to regenerate along with the vine roots and surrounding microflora. Now the canopy, fruit zone and soils beneath have found harmony making the journey here so worth while. It comes during a difficult year for all of us but the future is bright. The Northern Hemisphere is in the depths of harvest season right now. Its an interesting one this year. Its been a warm year across most parts of Europe and so the yield and fruit quality is larger and on a whole, exceptional. There are for some regions a few stock issues, with previous vintages still waiting to be sold off into the market, and this has seen a lot of wineries turning their wine into industrial alcohol... Probably not a bad thing, all things considered. With these sorts of issues in mind, a lot of regions are looking to impose tighter levels of production, so expect great quality, little quantity and hefty price tags next year (especially after crashing out without a deal). Some good news relating to bunches of grapes though! After weeks of maceration that follow the alcoholic fermentation, when the wine in the making is ready to be aged, the cellar master launches the devatting stage.The day before, the free-run wine is taken out of the tank and on the day, we enter the tank to take out the grape pomace... with a fork. Physical work ... but always in a good mood to beat the record of 42 minutes to devat a tank of 294 hl ! LO SCOPRI-UVA 29: 🍇NIEDDU MANNU NERO 📝NOTE 29ha vitati (Istat 2010) Sinonimi: Nero grande, Bovale di Spagna, Bovale Mannu Autoctono coltivato in Sardegna dove, sotto il nome Nieddu, si trovano diversi vitigni con caratteristiche differenti Le prime citazioni di NM risalgono al 1780 tra le varietà di uve nere coltivate nel sassarese. Nel 1887, nel Bollettino ampelografico del Min dell’Agricoltura, viene descritto tra le varietà coltivate nel Sassarese e nel Cagliaritano sottolineando “la frutticazione sicura e abbondante, …la sua produzione totale in confronto delle altre uve coltivate… per essere molto mostoso e perché fa buon vino e non è mangiata dagli insetti”. Condivide parte di patrimonio genetico con i Bovali e la Nieddera Presenta una variabilità elevatissima in termini di colorazione delle bucce: nel Campidano risultano essere nella migliore delle ipotesi adatte per la produzione di vini rosati. Più ricche in antociani e polifenoli risultano le accessioni ogliastrine e ancora più ricche quelle del Mandrolisai e, soprattutto, due stupefacenti accessioni provenienti dal Barigadu capaci di dare vini rossi. Nelle osservazioni comparative eseguite nel campo sperimentale, alla raccolta ha mostrato: -Valori medi di pH 3,7 -Acidità totale 4,4 g/L di acido tartarico -Contenuto in solidi totali solubili (24 °Brix), superiore alla media delle altre varietà comparate. La dinamica di crescita degli zuccheri è risultata lenta e costante lungo tutta la stagione di maturazione e gli alti valori di ottobre non sono dipesi da disidratazioni della bacca. Highlands Ranch now contains all three estate grapes: Chardonnay, Pinot Noir & Syrah. Syrah until 2020 was only at KW Ranch but on May 25th a few acres of Pinot were grafted over to Syrah and you can already see in 2.5 months it’s even trying to set fruit. About a mile south of Fairview Rd on River Rd you can’t miss the vineyard with the few acres of solar panels that sit along the ride across from Tondré Grapefield. We use this Pinot for the rosé & Chard for both still & sparkling wines. Thank you to José (pictured) and Chris Morisoli (5th generation, and man behind the camera), for harvesting these beautiful grapes! The Morisoli family have been farming this vineyard in Rutherford since 1902 and has now passed through 5 generations. Gary Morisoli (4th generation) is the current owner, alongside his son, Chris (5th generation) who are vintners of the land. Its neighbors are Scarecrow, Inglenook, and Phelps vineyards, pretty impressive eh? We count ourselves lucky that we have the opportunity to source from their newest plantings (early 1980s). No, not wente clone Chardonnay, this is dry farmed no till in a drought year Chardonnay. Quite possibly the highest quality fruit Jack has ever farmed. So proud of the hard work he has done on the little vineyard tucked away next to soscol creek in Napa. Jack farmed this vineyard from start to finish almost completely just him.
