The seeds are dark brown in color, and crackles on being heated in oil. Because of its sharp pungent smell and crunchy taste, most Garhwalis prefer jakhiya over cumin and mustard seed for tempering. It is used in tempering of harasaags, vegetables, curries, pulses and of course in aalo k gutke. . . 📷 2 is actually the story which I posted few months back when the seeds were green and now within a span of few months they turned dark brown. Today’s Homemade Dinner “Dong Po Rou with Bok Choy” 🇨🇳 Donpo Rou is Chinese braised pork belly. I have never had Donpo Rou before. I had no clue how the taste was like... so this was a kind of my kitchen experiment!👩🏻🔬 I followed the recipe from famous Korean Chef Yeonbok Lee. I simmered pork belly in water until cooked and seared it. It was supposed to be deep-fried but too dangerous to do it at home. 😱Then, I sliced and braised it in the aromatic liquid for 6 hours. I almost ran out of patience BUT it was worthy 🥰 Nice flavor and tender! Next time, I will find better pieces of pork belly and slice it thicker ❤️. Quick broccoli kimchi makes a crunchy, gingery, fiery treat out of one of my favourite vegetables. Fermentation without salt/Dehydration. One of the fermentation technique in my latest book using no salt was done with Curly Dock (Rumex crispus) and probably the technique could be done with other ingredients with large edible leaves (black mustard, etc.) Not many people forage dock locally. The only people I’ve seen doing so are from Armenia and often in their seventies or older. It’s interesting that the older generation is still in touch with the land and its bounty. Their preparation technique is quite interesting, too. Once the leaves are gathered, they are taken home and braided together in long strings about 3 feet (1 m) long, which are hung up to dry in a dark location with a decent airflow. Once dried, the strings can be stored for months and used as the main ingredient in a traditional soup. The Armenian name for the sorrel is aveluk; I can even find it sold at a local Middle Eastern supermarket under the name “Mountain Sorrel.” If you do some research online, you’ll find videos and various recipes for aveluk soup. Originally, my approach was to simply dehydrate the leaves at room temperature instead of braiding them, but the smell and flavors of the dried leaves were completely different from the “Mountain Sorrel” I purchased at the store and used as a reference. I tried again and braided the leaves, then left the rather fat string hanging in my open garage until they were fully dried. The smell and flavors were identical to the store-bought product, and I finally understood what I was dealing with. Because of the large braiding size and the time it takes to dehydrate, the leaves will ferment and smell a bit like tobacco. I was dealing with two preservation methods: dehydration and fermentation due to the lacto bacteria present on the leaves. The end result is quite sour and tangy. This lichen provides food and nesting material for animals, its fibers have been used for diapers, bandages, and clothing decoration, and it was reportedly used in Russia during the 1930s to make a sugar substitute when beet sugar supplies ran low. Saturday was world jollof rice day and I missed it. 😕 I was offline most of the weekend. Rice is a staple food for over half the worlds population and as of 2019, 486.62 million metric tons of rice are consumed annually worldwide. China and India alone account for ∼50% of the rice grown and consumed. What’s even more interesting is that rice is expected to grow by 1.1% annually through 2025. That means a whole lot more of us will be eating a whole lot more rice. It is reported that there are over 40,000 varieties of rice that are being cultivated around the world. One rice plant can yield anywhere as low as five to above 300 kernels or grains of rice depending on the variety. Imagine how many plants are required to fill a one kilogram bag! In Nigeria (where I live) and across the Continent of Africa, rice has gone from a luxury food item to a daily staple. Nigeria is currently the largest producer of rice in Africa. What does that tell you? We love our rice! 🙋🏽♀️ No party is complete without it. I love rice because it’s an easy in to plant-based eating. Add some vegetables at a minimum and you have a meal. It’s also one of those ingredients you can’t go wrong with. I have a number of varieties in my pantry, long-grain white and brown, basmati white and brown, jasmine, Nigerian red, Nigerian ofada, sushi, arborio, wild rice (which isnt actually a rice). Und auch heute passt er toll in Salate, Suppen, als Topping auf eine (schon fast herbstliche) Suppe oder in (veganen) Kräuterquark. Bei unserer letzten Wanderung haben wir mit dem Wildkraut die Suppe gewürzt und junge, frische Blätter in die Energy-Balls gegeben. ⠀ Wir finden ihn selbst im Winter. Er breitet sich sehr schnell aus, weshalb ihn Golfrasen-Streber am liebsten loswerden möchten. ⠀⠀ Doch Gundermann ist nicht nur lecker, sondern auch wirkungsvoll. Die Pflanzenheilkunde empfiehlt ihn bei Entzündungen im Magen und Darm, bei Blasenleiden und grippalen Infekten. Auch den Stoffwechsel soll er in Schwung bringen. RECIPE We’re slowly finding our way back into the kitchen after having heavily relied on food deliveries for some months. Even when working from home, it’s hard to leave work to attend to domestic responsibilities. . I find myself returning to dishes that don’t require a la minute preparation. One of the ones I fall back on is braised chicken wings. This cut of meat is forgiving and I don’t run the risk of overcooking it. It also keeps well and tends to develop depth of flavour when it’s left to stand and sort of age over the course of the day. Plus, it takes very little active time in the kitchen to put together. . Swipe for the ingredients list. The night before, toss the wings in corn flour and marinade before sticking them in the fridge. Steep the dried shitake overnight (I love the Korean ones available at @culinacomodempsey . They have a lovely honeyed soy flavour when they’ve been reconstituted). . The following day, remove mushroom stalks and discard. Halve the mushroom caps. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bring the master stock (deets in stories highlights) and mushroom steeping liquid to the boil (I prefer using a cast iron pot). ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Add the chicken wings along with the marinade and mushrooms. Return to the boil, then turn heat down and simmer (covered) for about 30min or until the wings are tender. Simmer for longer if you prefer for the flesh to fall off the bone. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Set aside in the covered pot to sit in its own heat until cool (I often leave it overnight. Or I cook the dish first thing in the morning for dinner on the same night). ⠀⠀⠀⠀⠀⠀⠀⠀⠀ When ready to serve, prepare any additional ingredients such as carrots, potatoes, leeks, napa cabbage, fresh mushrooms or tofu. Have you ever thought of roasting your own hojicha? It’s been on my mind since I saw a horouku (焙烙) tea roaster last year. After months of contemplation, I finally caved because I figured it’s a good way to convert my old sencha into yummy hojicha. Hojicha is probably the youngest tea in Japanese tea history - it was invented in 1920s in Kyoto when tea farmers decided to experiment with the twigs and old sencha by roasting them in charcoal. The result was a huge success as the roasting process altered the catechin and caffeine content which turned it into a much gentler tea (yet with robust flavor) that’s suitable to be drank at all time by all ages. In Japan, you are often served one at the end of the meal. Making your own is actually rewardingly easy. All you need to do is to roast some sencha, bancha or kukicha under low heat for a min or two, and your whole kitchen would be filled with this sweet and nutty aroma. Freshly roasted hojicha has a heavier caramel flavor which gives this already delicious tea more oomph. I also grind it into powder form for making latte and dessert. Yum! Per la pasta 180 g di senatore cappelli @molino_cofelice 20 g di cacao amaro in polvere 2 uova intere Per il ripieno 250 g di ricotta 50 g di parmigiano grattugiato 50 g di guanciale Mettiamo insieme farina, cacao e uova ed impastiamo fino ad ottenere un bel composto liscio, poi mettiamolo nella pellicola e facciamolo riposare almeno 30 minuti. Nel frattempo prepariamo il ripieno. Strizzano la ricotta in un telo a maglie strette, in modo da buttare fuori quanta più acqua possibile. Frulliamo il guanciale e poi mescoliamo tutto insieme al parmigiano. Andiamo a stendere il nostro impasto dello spessore di circa 2 mm per i fagottini ed 1 mm per le tagliatelle. Ricaviamo dei quadrati di circa 3x3, riempiamo e chiudiamo. Per il condimento suggerirei un burro e salvia oppure panna e noci e... Blackened pineapple skin... Blackened for one month and it has a nice smell and the aroma of licorice, anis, almonds (marzipan) and of course the characteristic flavour of a blackened ingredient. We usually use leftover pineapple skin to make kombucha or vinegar, but this time we tried blackening it which surprisingly worked really well. 最近は自分の中での新たな試みで色んなものを企画しているのですが、一年前からジワジワつくっていたものがもうすぐ完成。 まず僕が着目したのは「塗香」 皆さんは塗香って知ってますか? ● 塗香(ずこう)とは、仏像や修行者の身体に香を塗って、けがれを除くこと。また、その香。仏に捧げる六種の供物の一種。 数種の香木を混ぜて粉末にし、粉末のまま乾燥したものと、浄水と混ぜ練香としたものがある。一般には粉末にした、抹香状の薄茶色の香をさすことが多い。線香や焼香と違い、香を燻らせて供えるものとは違い、身体に塗る香である。 もともとの起源はインドにあり、香木から香料を取り、体に付けて体臭などを消すのに使ったという。ここから発展し、身体を清める、邪気を寄せ付けないという意味で仏教で取り入れられたとされる。多くは、修行に入る前や法要を執行する前に行われる。宗派により違いがあるが、一般に、先ず指ひとつまみの少量の塗香を左手に受け、右手の人差し指と中指に少しつけ、口に含む。次に香を両手で数度磨り合わせ、その後、その両手で胸(実際は衣の上)に当て塗る。身・口・意の三業を清めるとされる。 (Wikipediaから引用) 日本に居るなら日本の浄化方法で、しかも仏教における最強の浄化、全て天然の素材と聞き、ビビっときて、自分の塗香を作ってみようと思い、3種類の塗香を作りました。 そして更には、あんなことや、こんなこともしておりますので、また進捗お伝え致します。 #earthandstovezuko #earthandstove #塗香 - @daichi_1127 on Instagram

NEW PRODUCT for #jasminetea lovers at #sunsorganicgarden featured in our IGTV video last week. The base tea is a high mountain green tea from #Zhejiang province. The #teabuds are harvested in early spring (April) and then stored in a cool place until late summer when the best #jasmineflowers are harvested 🌱 #Jasmine flowers start to bloom around May, but the blooms used for premium grades of jasmine tea are not harvested until August - October. The jasmine buds are harvested closed, and at this point, the concentrations of essential oils in the flowers are at their highest. The harvested flowers open at night which is when the scenting process begins. Scenting the tea involves layering the tea between layers of Jasmine flowers in piles up to 20cm high. As the oxidation of the flowers releases heat and fragrance, the tea and flowers are mixed after a few hours to evenly disperse the heat and fragrance. Temperature control is very important in the tea scenting process and by morning, the flowers are separated from the tea to prevent any bitterness 🌱 Premium jasmine teas are scented 5+ times and #jasminepearls undergo the step of being handrolled to lock the floral fragrance into the #tea 🌱 Jasmine tea has been enjoyed since the Ming Dynasty and is a speciality of China. HOMEMADE NORI SNACKS My kids love these seaweed snacks so much. I like making them at home for a few reasons... 1. A LOT less packaging is used. 2. I can use extra virgin olive oil (instead of canola oil, which most store bought varieties use). 3. It’s almost 3 times less expensive! ($12.40/100g versus $34.38/100g) Nori Seaweed also offers many health benefits. - very high in EPA (omega 3 fatty acid), important in reducing risk of atherosclerosis. - High vitamin content, particularly vitamin B12, which is found mainly in animal products. Also high in vitamin C. - High mineral content, especially iodine and tyrosine, which support thyroid function. - Rich source of antioxidants. - High in the dietary fibre called Porphyra. Porphyra has high levels of choline and inositol, which both play a role in the utilisation of fats and cholesterol in the body, plus in nurturing brain cells. TO MAKE: - Place the sheets on baking tray. - Brush on the EVOO and sprinkle with salt (if desired). - Place in preheated oven (180 degrees) for 7 mins, flip and bake for further 5 minutes. - Take out of oven, allow to cool, cut with scissors into smaller strips and store in an airtight container.
