Let’s talk about phytonutrients! A couple days I posted about why it’s so important to “Eat the Rainbow” and it’s because different foods have different health benefits and phytonutrients. The word phytonutrient literally means plant nutrients. There are more than 25,000 types of phytonutrients but I’m only going to talk about some of the more common ones by food color: Red – Foods that are red in color are high in lycopene and anthocyanins. Lycopene is important for heart health and anthocyanins are a powerful antioxidant. This includes foods such as tomatoes, strawberries, raspberries, red apples, and cabbage. Orange – Foods that are orange in color are full of beta-carotene, which is a powerful antioxidant (important for your immune system). This includes foods such as carrots, yams, mangos, and pumpkins. Yellow-Orange – Foods that are yellow-orange in color are rich in Vitamin C, which is essential for your immune system and for detoxifying. This includes foods such as lemons, grapefruits, oranges, and pears. Green – Foods that are green in color are high in indoles and lutein (and folate). Lutein is important for vision and indoles are important for reducing the risk of cancer (found in cruciferous vegetables). This includes foods such as broccoli, brussels sprouts, cabbage, kale, spinach, leafy greens, lettuce, peas, kiwi, spinach, kale, and collards. Blue – Foods that are blue in color are full of anthocyanins and phenolics, which are both powerful antioxidants (important for destroying free radicals). This includes foods such as blueberries and plums. Purple – Foods that are purple in color are high in resveratrol, which is an antioxidant. This includes foods such as grapes, red wine, and berries. White / Tan / Brown – Foods that are white/tan/brown in color have a lot of allicin, which is helpful for heart health, and flavonoids, which are powerful antioxidants for cancer prevention. This includes foods such as garlic, onions, leeks, scallion, cauliflower, jicama, tea (white and black), soy, tahini, and chives. For the tofu I used: 1 block extra firm tofu 1 heaping tbsp cornstarch 1 tsp onion and 1 tsp garlic powder 1/2 tsp salt 1 tbsp cooking oil (I used grape seed oil) 1/4 cup general tso sauce * (see below) As well as: 1 cup cooked quinoa 1 head of broccoli 1 large handful of tender green asparagus Sesame seeds (Makes 2 servings) _________________________________________________ Cut tofu into big chunks and add them to a bowl together with the cornstarch, spices and oil. Toss carefully until evenly coated. Spread cubes on a lined baking sheet and bake them at 375 F/190 C for 30-45 min (depending on size and desired level of “crispness”), giving them a stir once or twice in between to ensure even baking. Add the baked tofu chunks to a non stick pan, pour sauce over it and stir on medium heat for a couple minutes until pieces are slightly sticky and caramelized. I love doing my food prep because it frees up so much brain power for other more important things during the week. If I had to figure out what to eat every time I was ready for a meal, I’d feel much more stressed, and certainly wouldn’t make us healthy of decisions! But the way I do it, I still have some wiggle room to throw together a few quick meals, fit in grilling, and accommodate cravings or events that come up. It works perfectly for me, but it came through lots of trial and error! Here’s what i made for this week (bottom to top): ➡️ Breakfast hash (sauté half an onion and 1.5 tablespoons minced garlic in 1 tablespoon ghee. Add 1 lb 99% lean ground turkey, crumble, and sauté until cooked through. Add one bag broccoli slaw, one huge diced zucchini, and one huge diced bell pepper. Add seasonings to taste- I used 2 teaspoons cumin, 1.5 tablespoons garlic herb seasoning. Cover, add 1/3 broth or water, and simmer until veggies are cooked through, 15 mins or so. Makes 4 servings) ➡️ Salads with 3 types of greens, roasted broccoli and asparagus, and salmon avocado salad (mash 2 cans @wildplanetfoods salmon and 1 avocado, plus 1-1.5 tbsp everything but the bagel seasoning. Use your hands to mash- it’s easier! Form into 3 balls for 3 servings.) I just use this as dressing but you could add a dressing like @tessemaes green goddess! I topped with green onions to use them up. ➡️ African spiced cauliflower rice! I sautéed 1/2 onion and 1.5 tbsp garlic in 1 tbsp avocado oil. Add in 6 cups cauliflower rice and 1 cup rehydrated mixed veggies from @iyafoods . Add 1 heaping tbsp @iyafoods cauliflower rice spice (it’s an awesome Black-owned business that sells authentic African spices, which I found a few months ago! This seasoning has a kick and I love it!) and salt to taste. Cook until cauliflower rice is soft. I added 3.5 oz cooked baked chicken breast to each of 4 servings. ➡️ extra roasted broccoli ➡️ veggie packs What’s the #1 reason you food prep?!? - @thelyonsshare on Instagram

Asian Turkey Bowls. Apart from the Kielbasa Bowls with Rice and Beans, this recipe might be the quickest on the website @themealprepmanual I love the flavors in this dish. You can make it spicy or mild and add sweetness or not. It’s a solid basic Asian style meal that can be customized to many different meals. You can make this recipe in the time it takes to cook a pot of rice. It’s so easy and good. It used to be my go to on Football Sundays when I had a traditional job. There is nothing worse than having to be in the kitchen when all you want to do is sit on the couch and watch football. Add this recipe to your arsenal if you are looking for quick Sunday recipes to set you up for your work weeks. Swapping turkey for beef is an easy way to lessen the calories in your meals. It’s one swap you can make that takes almost no thought, change in cooking techniques, or change in volume. It should be noted that if the leanness of the two meats are equated then the caloric load will be nearly identical. However, I rarely ever seen turkey that is fattier than 93/7 at the store and I never buy beef leaner than 85/15 because otherwise it gets too expensive. Optimising meal timing to further muscle gain. Multiple meal frequency, meaning eating meals throughout the day has proved its test of time in the bodybuilding and fitness world in aiding an efficient muscle building pathway. However, just like all things in life it has gone under fire and there are a lot of people out there who say it doesnt really matter or equate to anything more, or less. What matters is total calories/macros for the day. Personally, in most cases I totally disagree if your main goal is to optimize a muscle building environment. Of course different loading bearing sports and exercises impact muscle tissue break down differently. However, I’m talking about high demanding muscle fiber activation loads which go hand in hand with your time in the gym. **Before I explain, let me quantify the above statement. Different clients may have different meal frequencies, however if your personal goal is to be building new connective muscle tissue and increase strength your need for total Macro’s will always be higher than a normal person. Some of my clients will consume 5 meals, others may have 6-8 meals in there waking hours depending on a number of factors.
