This organization’s mission holds a special place for her. “For 30 years, I worked for Headstart, a pre-school program for families with an incredibly low income. All of these families are hungry. My experience always was that these families would head to a pantry and select dry or canned goods. That was it. Every now and then, there was a bowl of fresh produce. Its official: Fall is here! Were ready for pumpkin spice lattes and sweaters even on the days we dont really need them (thanks, Texas) 🍂⠀ ⠀ Celebrate on this gloomy day with a comforting red curry butternut squash soup using local produce from @gundermann_acres.⠀ ⠀ Ingredients: ⠀ 1 Butternut squash⠀ 2 tbsp Vegetable oil ⠀ 1 Onion⠀ 4 Garlic cloves⠀ 2 tbsp Red curry paste⠀ 1 tsp Tumeric⠀ 1 tsp Cumin⠀ 4 cups Chicken (or veggie) stock⠀ 1/4 cup Coconut milk⠀ 1 tsp Soy sauce⠀ 1 tsp Honey⠀ 1 tsp Salt⠀ 1/2 tsp Pepper⠀ ⠀ Instructions: ⠀ Preheat oven to 400 and line a baking sheet with parchment paper.⠀ ⠀ Cut the squash in half (lengthwise), scoop out seeds, and place face down on the sheet. Bake for 25-35 minutes until the squash is tender.⠀ ⠀ Add the vegetable oil to a pot on medium-high heat. Add onions and garlic and saute for 3-4 minutes. ⠀ ⠀ Once the squash is tender, remove it from the oven and let it cool just enough to handle. Use a spoon to scoop out the flesh into the pot. ⠀ ⠀ Stir and add the curry paste, turmeric, cumin, salt, and pepper. Add vegetable broth, coconut milk, soy sauce, and honey and bring to a boil. Reduce heat to low, then cover and let simmer for 15 minutes.⠀ ⠀ Transfer the soup to a blender (or use an emulsion blender) to puree.⠀ ⠀ Garnish with cilantro and sesame seeds if youre feelin a little special and enjoy! - @farmtotabletx on Instagram

As part of our new People of Market of Choice series, we’re featuring some of our many talented teammates and their inspiring stories. We hope you enjoy them! Fruits, vegetables and other produce have always been a part of Patty’s life. Growing up in Molalla, she spent summers picking broccoli with friends. On weekends, she ran a small produce stand that her mother owned. Fast forward to today and Patty is now the produce manager at our Belmont Market in Portland, working with fruits and vegetables every day. Its a career that brings her joy, she says. I love merchandising produce – especially new produce at the beginning of the season because its so colorful and exciting. When you get the colors looking so complementary and the display looks so inviting, it’s very satisfying. But to her, it’s about much more than organizing bell peppers into visually appealing patterns. Shes always had a passion for fresh, nutritious, locally sourced fruits, vegetables, herbs and spices. Growing up, she had a large garden and enjoyed harvesting and preserving her own food, and still does today. I was raised with a very good work ethic,” Patty says. And working the produce stand led to this path I’m on now. Working her way up from bottle clerk at another grocery retailer to a produce clerk at the same store, Patty later joined the Market of Choice team and became an assistant produce manager, then produce manager. Eleven years after joining the Market of Choice family, she says she feels right at home. I really love the family values that are at the core of this company. I have seen the support that is given to employees who have faced tragedies – that goes a long way. I think a lot is done for our employees. Those values keep me here. When she’s not working, Patty loves to camp, kayak, ride her bike and spend time with her family. Como ustedes saben, amigos agricultores, no es fácil encontrar una calabaza que de frutos, y mucho menos frutos tan grandes y ricos como este!. . Después de haber intentado la siembra de distintas calabazas y fracasar 😐, decidimos probar con esta. . Ella llegó a nosotros un día en el que se alinearon los astros, y nosotros recolectábamos semillas de una granja en California 👩🏻🌾. . Cuando la sembramos, nunca imaginamos que su genética era tan buena, y nos sorprendió cuando después de solo dos meses de haber nacido, dio luz a dos florecitas hembra y macho y a la tercera, se asomó el primer fruto. . Ese fruto creció poco, pero decidimos esperar al segundo y al tercero. Luego al cuarto y al quinto. Una sola planta, nos dio alrededor de 8-10 frutos medianos, y uno grande. . ¿Por que da uno grande? ✨What an amazing past couple weekends we have had at this little farm! • • Thank you all for coming out and spending your weekends with us. It truly means so much to me and all of the vendors. 💜 • • This is only Lovely Hollow’s second season. Last year if we saw 50 people on a Saturday we were lucky. • • We are seeing up to 2,000 people on vendor Saturday’s. Opening Day in June, I was bawling in gratitude 15 minutes into the gates being open. I had no clue this little farm could touch so many people. • • Truly, from the bottom of my heart- thank you. We love you. • • At least one more weekend of flowers left . When the nights get below 32 degrees ; the flowers die. A Tromboncino Squash from our garden 🎺 ⠀ ⠀ Weve still got all sorts of other whacky summer squashes in the shop for you to try. ⠀ ⠀ Maple Farm tip: We love @rivercottagehq s squash, shallot and mushroom tart recipe. Its so simple, but so tasty, and great for sharing. All you need is:⠀ ⠀ - Squash ⠀ ⠀ - Shallots (around 4 medium) ⠀ ⠀ - Mushrooms (150g)⠀ ⠀ - Ready-rolled puff pastry (or your own!) ⠀ ⠀ - Cheese (i.e. @fenfarmdairy Baron Bigod), herbs & seasoning ⠀ ⠀ Roast the shallots and squash in chunks with olive oil and herbs for 30 mins at 190C. Stir in your mushrooms and cook for 20 mins more. Remove. Turn the oven up to 200C. Lay the pastry out on a tray, score a 2cm border, and pour the roasted veg on leaving the border clear. If you go by the calendar, summer is transitioning into fall, but @the_chefs_garden_ohio will still have deliciously farm-fresh summer squash available in the autumn. What’s wonderful about this vegetable, besides its amazing flavor, is how many parts of it can be used in dishes. The journey towards using more of the plant began for us more than three decades ago, when a chef who was classically trained in French cuisine came to the United States from Europe. Her name? Iris Bailin. And, after @farmerleejones talked to her at a farmer’s market near Cleveland, the farm began cultivating squash blossoms for her—and then for other chefs, as well. We are delighted to have Acorn Squash ready to harvest in the kitchen garden at the Nathan Hale Homestead. Acorn Squash has a long history in the new world, as does most of the popular squash here in the United States. It is thought that acorn squash originally derives from either South or Central America. Acorn Squash is a versatile vegetable. You can bake it, stuff it (our personal favorite way to eat it), sauté it, or mash it. But have you ever used it as a dessert? Here is an old recipe that has been passed down. Acorn Squash Cobbler aka Acorn Squash Pudding Filling: 2 cups cooked acorn squash (Split and remove seeds from squash. Spray cut side with butter. Place side down on a cookie sheet and bake until tender). 1/2 cup sugar 1 teaspoons ground cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon ground or freshly grated nutmeg 1/8 teaspoon ground cloves 1/8 tsp salt 2 eggs 1 cup evaporated milk Topping: 2/3 cup flour 1/3 cup brown sugar 1/3 cup butter chilled Mash squash or process in food processor. Add all filling ingredients. Mix well. Pour into 7 wide, deep casserole and bake one-half hour at 350 degrees. In a separate bowl mix the topping ingredients. After a half hour remove the filling from the oven add the topping and return to the oven for 25 minutes. I enjoyed growing tromboncino, it was a good producer for me. They were grown vertically on a diy structure. Some were picked while they were young, less a foot long for cooking, and I left some to mature to store away for winter. Hoping it’ll taste as good then as when harvested young. I just chopped it up and cooked it along with diced onions, eggplant, yellow bell, in a cast iron skillet, and seasoned it with Greek seasoning. My mind is thinking of different ways to cook them, maybe tromboncino fritters or lasagna made with them 🤔 The plant made the longest tendrils, and I just have a thing for them 🤷🏻♀️ - @inmyhomeandgarden on Instagram
