Post number four in Hurricane’s Climate Justice series is all about ocean acidification (OA) and its potential effects on our beloved scallops! In shellfish aquaculture, ocean acidification (which is caused by excess CO2) affects juveniles the most severely - causing thinner and weaker shells and stunted development, which lowers their rate of survival to adulthood. As you might know, Hurricane’s research team is currently growing thousands of scallops (each with 200 eyeballs a piece, which means they’re also growing millions of eyeballs👀👀👀!!!!). Along with the rest of the scallop aquaculture community in Maine, they will need to find innovative ways to protect their babies and their research. Hallie Arno, former Research Intern, did a project in the summer of 2019 about the potential for kelp aquaculture to mitigate effects of OA at our aquaculture site on our scallops! Crispy, crunchy and crackly Carciofi alla Giudia. I don’t consider my food to be fully Roman but, I didn’t think it would take me a good two weeks of quarantine to learn how to prepare proper Carciofi alla Giudia. They’re called “Alla Giudia” or, the Jewish way, because the dish’s origins belong to the Roman Jewish ghetto. There, after a day-long fasting, Jewish housewives would prepare artichokes to celebrate the end of Kippur, day of atonement and repentance. Specifically, they’d use a popular variety of artichokes called “cimaroli”, characterised by a pronounced, large and thick foliage. The other night I decided to commit to a 19-minute-long video where @officinacruscaurbana (Barbara Frangi), surely a Roman cuisine’s connoisseur, explained how to clean, trim, avoid oxidation, fry and then fry again these beautiful artichokes. It was a revelation to understand how to achieve that golden, crispy, flower shape. In short, if you dont intend watching the video, you basically have to fry the artichoke twice. First, whole and submerged in oil for about 13-15 minutes at a medium heat. Then, opened up as a flower, head down in the oil for another 10 minutes. It takes a while, I know, but itll be a total luxury to eat these carciofi at home. Köstlich und gesund, was will man mehr? 😊 Für eure Pestobasis eignen sich zum Beispiel: 🌿 Brennnesseln 🌿 Franzosenkraut 🌿 Fünffingerkraut 🌿 Giersch 🌿 Wiesenbärenklau Als extra Geschmackskick könnt ihr eure Basis mischen mit würzigen und aromatischen Kräutern, sowie solchen, die man nicht in großen Mengen isst: 🌿 Gundermann 🌿 Sauerampfer, Sauerklee 🌿 Beifussknospen .... Eure Kräuter mixt ihr mit gutem Olivenöl. Die Qualität des Öls entscheidet wirklich sehr mit, wie und ob euer Pesto schmeckt. The Basque Coast Geopark is a showcase to one of the most wonderful history books ever written. The pages in our history book were formed under the sea and today, layer by layer, form a continuous book of more than 13 kilometers of cliffs, where geologists can study the records of more than 60 million consecutive years of the Earths history. The mass extinction of the dinosaurs at the end of the Cretaceous or the great global warming at the beginning of the Eocene are some of the critical events recorded in the written history in these rocks. After decades of scientific research the flysch on the Geopark Coast has been recognised by the International Union of Geological Sciences (IUGS) and UNESCO as one of the planets great geological outcrops. We must also mention the spectacular process of erosion that gives rise to a shoreline, where we witness a succession of excellent examples of cliffs, significant rock fall, shallow intertidal flats and beautiful sandy beaches to relax on and from where we can enjoy the surroundings. Tiny Pea Crabs 🦀 from the Southern New Zealand waters are making their menu debut next week. I have been working on sourcing this product fresh / live for the past few years and finally we have them for the season. So tiny and special while packing an intense sweet crab favour. We are frying them in crab fat and remind me of tiny soft shell crabs. Growing up in the far north my brother and I would get taken out to the black rocks by my father thrown in the crazy sea and rip green lip mussels off the rocks for the family to eat. А внушительнее, когда тебе говорят что ты распечатал 4-й десяток=)) Если так задуматься, то для многих людей именно этот период оказывается самым переломным...Для кого-то он оказывается роковым, у кого-то наступает кризис, а у кого-то наоборот творческий прорыв. А знайте, что пугает еще больше? То, что еще 30 лет и, мать его, уже 60....а там уже покупай себе кресло качалку и крем от гемора, сиди попёрдывай перед телеком (честно говоря я к такому не готов😅). Но....все это не об этом. Вернемся к нашим цифрам. 30 лет...много ли это на самом деле? При всей своей внушительности, это ведь не так и много...Просто подумай. Мы рождаемся и первые 3-5 лет нашей жизни проходят в неведении, мало найдется тех, кто помнит вообще что-то из этого периода. Затем 11 лет школы...ну почти все через это проходит...ты отдаешь 11 лет неведомо чему, под предлогом получения знаний. То есть...врядли это можно назвать жизнью ради себя и своей реализацией. Кому-то повезло больше и его родители отдали еще в спортивную секцию или какой-нибудь кружок, и зачастую, не туда, куда хочет чадо, а куда родители считают нужнее. Затем....5 лет универа в среднем и дай бог, что это будет опять же выбор ребенка)) А почему универ....ну ведь надо же куда-то идти учиться...такова система....ну и бонус: 1-2 года армии:) итого, считаем: в среднем человек освобождается в 22-24 года от всей этой принудиловки и уходит в свободное плавание...то есть на работу....и отнимаем это от 30...капец! по сути, я прожил всего лишь 6-8 лет...осознанной, своей жизни, жизни проб и ошибок, где ты все делаешь сам, а не по указке родителей....Поэтому...не знаю к чему этот весь разговор...но, на самом-то деле....30 лет, это оказывается и не так-то и много:)) #философиянаночь #городнаходка #25регион #30лет🎉 #мыслимысли - @gorovois on Instagram

White Currants Due to the perishability of more delicate fruits like berries and currants, more often than not these are imported before they reach maturity in ripeness. These white currants were still too tart when we received them, but it’s such a waste to cook them down just to balance its flavours! Cattail pollen collection, will be used as a type of flour in making flatbreads or pastries - We dont really have seasons for cattail in Southern California, it seems to simply depend on the rain, water availability and weather. This year, I was able to collect some during early Spring and there is a new generation already available. Last year, I distributed seeds in the stream where I usually teach. We already had cattail there but I thought planting more would be a good idea. Today I was lucky enough to have a nice harvest. In the old days, I used to shake the flower (male part) loaded with yellow pollen in plastic bag but these days, I like to pick them up when they are about to release the pollen - you can see it from the color of the flower (yellowish) then take the harvest home and let them dehydrate slowly at room temperature. Within a week, I end up with very little waste and a huge amount of pollen. Shake carefully and strain into a jar. Much easier then going from cattail to cattail and shaking them in bags. Cattail can be found in many parts of the world, its a bit of a forgotten food in Europe. Every single part of the plant has uses including the roots which are an excellent source of starch. But anyhow...today, Im just collecting the pollen. My simple use is as a flour additive but Im sure that if you research the subject online, you can find tons of other culinary uses. - @pascalbaudar on Instagram

This discovery by @peconicgoldoysters in the Long Island Sound warrants a #FishyFriday shout-out! It’s not every day that we find a seahorse near a BOP oyster reef, but it’s more common than you might think. This large (potentially pregnant) seahorse appears to be a #LinedSeahorse or Northern Seahorse, which like the brackish waters found here in #NYHarbor. These adult seahorses grow 3-6 inches long and tend to be brown or gray. HOMEMADE NORI SNACKS My kids love these seaweed snacks so much. I like making them at home for a few reasons... 1. A LOT less packaging is used. 2. I can use extra virgin olive oil (instead of canola oil, which most store bought varieties use). 3. It’s almost 3 times less expensive! ($12.40/100g versus $34.38/100g) Nori Seaweed also offers many health benefits. - very high in EPA (omega 3 fatty acid), important in reducing risk of atherosclerosis. - High vitamin content, particularly vitamin B12, which is found mainly in animal products. Also high in vitamin C. - High mineral content, especially iodine and tyrosine, which support thyroid function. - Rich source of antioxidants. - High in the dietary fibre called Porphyra. Porphyra has high levels of choline and inositol, which both play a role in the utilisation of fats and cholesterol in the body, plus in nurturing brain cells. TO MAKE: - Place the sheets on baking tray. - Brush on the EVOO and sprinkle with salt (if desired). - Place in preheated oven (180 degrees) for 7 mins, flip and bake for further 5 minutes. - Take out of oven, allow to cool, cut with scissors into smaller strips and store in an airtight container. Since the on start of Covid-19 restrictions in Brunei, we received quite a few reports on ghost net sightings at our reefs (reports coming in at least once a month!). While many of us remain at home, some took the opportunity to head out to sea, casting nets over large areas including those of restricted zones. Whether or not they are for commercial purpose or leisure, we need to understand that these nets when left abandoned may get stuck on reefs or any hard surface along the seabed. This eventually damage or kill literally any marine lifes that get caught on them. Throughout this period, a team of heroes set out to sail to retrieve nets from the sea. Despite working in small numbers, these heroes managed to retrieve quite a huge amount of nets (on record, up to 36kg of trawling nets in one session!).
