The pursuit of making foods last longer led to the birth of everything from the dosas, vadas & idlis, to all the various styles of achar, fermented dairy beverages, shrikhand, pulses-based dhokla, handvo, and closer home, basi pakhala (rice fermented overnight in water), badi, tentul rasa, and khatta. This potato salad in a jar is so good to rustle up on a Sunday afternoon and, as it keeps in the fridge for 4-5 days, its perfect for a quick weekday lunch. And with this gorgeous autumnal sun looking like its staying for at least the next couple of days, it will leave you with a bit more time to spend outdoors if you can! ☀️ Method: Make a dressing with finely chopped chives, olive oil, apple cider vinegar and honey then season with a little bit of salt and pepper. Fill up your jar by layering the different ingredients: potatoes and eggs are first, then the dressing. You can then add cherry tomatoes, pepper and green beans. Add red onions and black olives and top with a handful of micro greens. Make sure you keep the jar standing upright in the fridge so the dressing doesn’t mix with rest of the ingredients. It seems like we have spent every free second refreshing mother, folding and shaping bread, and tending the wood fired oven. LOCKDOWN PICKLES If ever there were a time for pickling, now is it 🥒 (and don’t forget to keep the pickle juice for pickle backs) - 5 cucumbers, sliced 1 onion, sliced 80g salt - BRINE 300ml vinegar (cider if poss or white wine) 200g sugar (brown if poss) 2g ground cloves (or 5 cloves) 5g ground turmeric 5g mustard seeds 5g fennel seeds 5g coriander seeds - Slice the onions and cucumbers into 3-4mm thick slices. - Salt the mixture, cover with cling film, and allow the resultant liquid to drain away for about four hours. - Pour away the liquid. Rinse the slices and leave to dry. - Add all the brine ingredients to a stainless steel saucepan and stir to dissolve the sugar as the liquid is brought slowly to the boil. - Add the cucumber and onion mix to the brine and cook for a couple of minutes, then allow to cool. Place the pickles in sterilised jars and keep in the fridge until needed - preferably for a good couple of weeks. - @pittcueco on Instagram

Family Cooking for the Academy community is like cooking for family. We come together each day around the table to partake in the ritual of a shared meal. It is where cross disciplinary conversations happen, sharing not only the food but also sparking new ideas. Although our fellows will not be arriving until January this year, and normally we would be expecting them any day now, we can still preserve the flavors of the Roman summer to welcome them to this special place. Does anyone else have a favorite dill pickle canning recipe that they love to improve on each year? 🔥🥒 Add a spicy KICK to your pickles by adding a teaspoon of Montana Mex Jalapeño Seasoning to each jar. Do you have a secret ingredient you like to incorporate into your canning recipes? We’d love to hear about it and get inspired by you, fam! Yield: 14 one quart jars Ingredients: 50 unwaxed, 3-5 inch pickles (aboout 15 pounds) 2 quart white vinegar 1 ½ cup kosher salt 4 quarts water Dill Garlic Montana Mex Jalapeño Seasoning Instructions: Soak pickling cucumbers in cold water for at least one hour to help keep them crisp. Combine vinegar, salt and water in a pot and bring to a boil to help combine the salt. Drain and slice cucumbers into quarters. Sterilize 14 wide-mouth quart jars, then add 3-4 cloves of garlic, 1-2 dill flower heads and 1 teaspoon Montana Mex Jalapeño Seasoning. Pack the cucumber spears into the jars, tightly. Pour the hot vinegar mixture over the cucumbers, leaving about ¼ inch headspace. Seal with jar lids and rings, finger tight. Process in boiling water bath for 12 minutes. Dragi moji, jeste li i vi počeli praviti salate? Evo ja sam otvorila sezonu, polako počinje da se puni špajz. Ovo je inače moja omiljena salata. Ja je pravim po maminom tajnom receptu. Pošto ste vi moji drugari i vama ću je otkriti, biće to naša mala tajna 🤫🤫♥️ Potrebno: 3kg paprike roge 3 kg naribanog kupusa 1 kg mrkve 1.5 kgkrastavaca 1 kg zelenog paradajza 1 litar sirćeta 4 litra vode 250g soli 100g šećera 1 vinobran 1 konzervans Biber u zrnu Lovorov list **Ukoliko imate, možete ubaciti i 0.5kg narandžastih paprika Priprema je vrlo jednostavna. Povrće dobro oprati i očistiti. Zatim ga isjeći na željene komade u neku veću posudu( ja sam koristila šerpu od 20l). Kad ste isjeckali svo povrće rukama dobro izmiješati da se dobije ujednačena smjesa. Puniti tegle tako što ćete povremeno ubacivati biber u zrnu i lovorov list (ja sam ubacivala oko pola kašike bibera na jednu veliku teglu). U jednu veću posudu sipati vodu i u nju dodati sirće. Potom dodati, so, šećer, vinobran i konzervans te dobro izmiješati da se rastope šećer i ostali sastojci. Ovom smjesom preliti povrće u teglama. Bitno je da se tegle dobro napune( pritiskati rukama što više). Tegle dobro zatvoriti i ostaviti ih na tamno mjesto. Nakon 5-6 sati otvoriti tegle i dosuti kiseline ukoliko je potrebno. Weve created Feast City Helps as a way to help our out-of-work friends make some money. Whether it’s giardiniera, sauces, BBQ rubs, marinades or cookies and cupcakes, we want our friends to get some cash in their pockets by making what they love. .
