Vision 2020: This morning’s dense fog is the perfect metaphor for our year. I’ve shared before that I permanently lost eyesight in my left eye last winter due to a bungee cord accident (please be careful folks). It was a terrifying winter of both literal and metaphorical blindness. Seeing our way forward in the midst of massive uncertainty, pain, and change felt impossible. So, we just did what we knew: grew flowers, prioritized family, worked hard. I Never thought we’d have a viable year, but saw no other way forward. Each of you has suffered loss this year- jobs, people you love, normalcy. The fog really has not lifted. The irony of Vision 2020 remains. And yet! Roots sold more bouquets than ever before, I had a crew of mighty humans who worked SO hard, we laughed, we made it! You will make it! I’m not sure the path will be clear for awhile yet. But maybe our Vision 2020 will be in hindsight. I look forward to hearing how each of you has come through this season of fog, change and uncertainty. Noen av dere foreslo faktisk at boken min burde ha Syltet rødløk i tittelen, og det kunne den nesten hatt😂 så neste bok vil hete En skikkelig digg syltet rødløk. Kanskje iallefall. Lag det! 🌟Ingredienser til en stor porsjon for hele uka🌟 4 rødløk i halvsirkler 1 dl 7 % eddik evt. eplesidereddik 2 dl sukker 3 dl vann 🌟Fremgangsmåte🌟 1. Kok opp eddik, sukker og vann, ta av platen når sukker har løst seg opp. Det tar bare et par minutter. 2. Del rødløken først i to gjennom roten. Lag deretter tynne skiver/halvsirkler. 3. Finn frem en tett beholder med lokk, og ha i all rødløken. Hell så eddiklaken over løken, og la avkjøle seg litt før du setter den i kjøleskapet. Den er ferdig etter en halvtimes tid om du har riktig tynne skiver, eller litt lengre om du ikke har kuttet så nøye. 4. Husk å bruke rent bestikk hver gang du tar opp løk av beholderen, da holder den seg frisk lenge. This is a very special jar of honey. Its from my very first beehive in the backyard of my college home in downtown Charleston, SC. It traveled with me to Savannah, Georgia for my first post-college job where I met @isabelwlewis, my fiance, in a honey shop. I gifted the jar to Isabel before we started dating, and now the jar lives in the cupboard of the third apartment weve shared together. And a cool honey fact: properly stored, honey will never go bad! Theyve found honey in Egyptian tombs that is still edible! . . . With its abundant blue flowers, the Californian Lilac is a wonderful evergreen shrub for a sheltered, sunny position. Officially known as Ceanothus, they are native to North America, especially the state of California, where its said that the native varieties can set seed that can lay dormant for a hundred years, awaiting a forest fire to trigger germination. The species is quite diverse in its habit, with varieties that lend themselves for different uses within the garden. For upright specimens we recommend Concha, Puget Blue and Skylark whilst Trewithen Blue is also good for hedging. For groundcover, try Yankee Point or Repens. For smaller gardens Blue Mound makes a perfect addition. For something unusual, a couple of good variegated cultivars exist. Lemon and Lime has a pale yellow leaf with a dark green splash whilst Silver Surprise is a dark green leaf fringed in cream. Flowering from late spring into early summer, they are mostly recognised for their abundance of blue flowers, but white and pink varieties also exist. Salad brassica, flea beetle and Enviromesh. Salad brassicas like mizuna, mustard, rocket and landcress add a punchy kick to mixed salads and we always try to include some of these flavourful leaves in our mix. These salad brassicas are known as long-day plants; with under twelve hours of uninterrupted darkness they will initiate reproductive growth and will attempt to flower. This is undesirable as we’re aiming to harvest the leafy vegetative growth of these crops. As hours of daylight increasingly surpass hours of darkness, we dedicate less time and space to growing these leaves. Another major challenge to growing these salad brassicas in late spring and summer is the prevalence of brassica loving flea beetle during this time of year. There are several species of flea beetle that feed on the leaves of brassica crops and we are not sure which flea beetle we have. All have similar life cycles. In autumn adult flea beetle hibernate in hedgerows, under trees, and in other sheltered positions. When temperatures rise in the spring the beetles come of out hibernation and soon begin to feed. The beetles mate and lay eggs towards the end of May. The larvae hatch, may feed on plant roots and form pupae after about 4 weeks. The pupal stage lasts for about 4 weeks and then adults emerge in late July when they again feed on the leaves of brassica crops. When temperatures drop in autumn this new generation of beetle heads for shelter and hibernate. Damage to plant roots from the larvae of flea beetle is typically superficial at worst. Damage to brassica leaves from adult flea beetle, resulting in a peppering of holes, can look unsightly, particularly on salad leaves, and can hinder plant growth if excessive. Our salad brassicas seem to be much more susceptible than our other brassica crops like our Red Russian Kale which seems to be hardly affected by the species of flea beetle prevalent in our market garden. Here is a behind the scenes look at how I make blue/purple rice. I start with Butterfly Pea flowers, send to me from my mother’s garden in Thailand. I soak the flowers in warm water, remove the flowers and add the rice. After soaking the rice overnight I steam it in a classic bamboo basket, mix with sweet coconut milk and server with ripe mango. Since the beginning of summer season, vegan garums have been on the top of our project list. Our ambition was to integrate vegan ferments into the Lab’s inventory, going beyond conventional garum flavors. Combining both cooking techniques and fermentation, our plan involved adapting plant based ingredients to a meat garum recipe. ⠀⠀⠀ The first step involved substituting animal protein with nuts, seeds and legumes. We opted for chestnuts, pumpkin seeds and lentils, respectively. We then combined these ingredients with the sweet, smokey qualities of charred beets and sapidity of earthy mushrooms. To achieve greater depth of flavor and showcase the power of vegetables, we eventually added a percentage of wheat koji. ⠀⠀⠀ Through its protein- and starch hydrolyzing activities, koji aids in accelerating traditional garum production. Therefore, working with an adequate protein content was key in allowing koji-derived enzymes to produce free amino acids - for umami rich, deeper flavours. ⠀⠀⠀ Adjusting fermentation temperature (T) to 60°C was another essential step in this process. A higher T not only limits microbial activity in the vessels but also increases enzymatic processes, ultimately cutting down the total aging period. Fermenting our garum at 60°C also let Maillard reactions occur. A Maillard reaction is a sugar condensation process catalyzed by free amine components in food. In this case, as koji enzymes hydrolyze vegetable starches, they allow more sugar to react, resulting in nutty, roasted aromas. ⠀⠀⠀ Garums have allowed us to reverse the role of animals and vegetables here at Noma, so meat becomes the seasoning and vegetables are the stars. With these vegan garum trials we hope to expand the versatility of plant based products, using them as stepping stones to new, delicious and more responsible ways of eating. - @nomaferments on Instagram

Zwerfvuil? Dat pakken we samen op! Zo luidt de titel van een pakkende flyer die vrijwilligers van BZZV (Brummen Zonder Zwerf Vuil) vandaag aan iedereen in het dorp Brummen uitreiken. Eerder deze week overhandigden Marga Brummelman en Paulijn Snijders het eerste exemplaar aan wethouder Cathy Sjerps, die binnen het college verantwoordelijk is voor het onderwerp afval. Sjerps liet weten goed op de hoogte te zijn van de activiteiten van de Brummense club enthousiaste zwefvuilrapers. “Samen zorgen we er voor dat onze leefomgeving schoon en veilig is”, aldus de wethouder. Al enkele jaren is er in het dorp Brummen een groeiende groep vrijwilligers actief onder de naam Brummen Zonder Zwerf Vuil (BZZV). Deze werkgroep is verbonden aan de Dorpsraad Brummen die samen met de gemeente de vrijwilligers ondersteunt. Eenmaal per maand gaan de vrijwilligers op pad, voorzien van een herkenbaar hesje, handschoenen, prikstok, vuilniszakken en de speciale ‘afvaltrolley’. Diverse gebieden in en om het dorp Brummen worden dan ontdaan van zwerfvuil. Hoewel er in september al afval geraapt werd, grijpt BZZV vandaag aan om hun flyer aan mede-inwoners aan te bieden. “Vandaag is het ‘Wereld Schoonmaakdag’, een uitgelezen dag om het goede werk van onze groep bevlogen vrijwilligers onder de aandacht te brengen. Via deze flyer en een persoonlijk gesprek hopen we dat meer mensen zich bij ons aansluiten,” vertelt Paulijn Snijders. “Maar een echt schone omgeving bereiken we pas als er geen vuil meer op de grond gegooid wordt!”. Use what youve got! Went for an amazing hike in my backyard. Its a forest attached to the #beaverriver and was one of our most favourite hikes. • 𝗦𝗲𝗮 𝗛𝗼𝗹𝗹𝘆 • (𝗘𝗿𝘆𝗻𝗴𝗶𝘂𝗺 𝗮𝗺𝗲𝘁𝗵𝘆𝘀𝘁𝗶𝗻𝘂𝗺) Eryngium amethystinum, the amethyst eryngo, Italian eryngo or amethyst sea holly, is a clump-forming, perennial, tap-rooted herb. Its stem is 30 to 50 cm long and is light blue to purple in colour. It has a basal circle of obovate, pinnate, spiny, leathery, mid-green leaves. It flowers in mid to late summer with cylindrical umbels, 2–3 cm long atop silvery blue bracts and branching stems.
