Couldn’t resist posting a couple more pics of this chestnut flush out of the bottom of a pepper pot and talking a little bit about how resilient mushrooms are. We routinely use our spent mushroom blocks to amend soil for planting and sometimes get surprises like this. What’s most interesting is that the normal fruiting temperature range for #chestnutmushrooms is 50-60 degrees(during the summer months our growing room usually hovers around 67) but this chestnut flush happened outdoors in Colorado where the average daytime temps have been in the low 90’s with nighttime temps in the mid 60’s. Well outside of what’s considered the optimum fruiting temp range. Mushrooms truly are amazing and once you think you have a certain strain figured out, you get thrown a curve ball like this. Good morning!🌞 Yesterday I cooked this Asiago peppercorn pork loin and it was amazing. I cooked it on low heat for 4 1/2 hours in the slow cooker. - with white mushrooms, olive oil and fresh garlic. I dusted everything lightly with dark chili powder and tossed in a handful of red pepper flakes. đŸŒ¶ I love using my slow cooker it allows the freedom to not rush the process and every time you walk in the house your mouth waters. 😋 For the little red potatoes- I washed them and put them in a shallow glass pyrex dish - drizzled them with olive oil, sea salt and restaurant style black pepper. (I like using black pepper with large flakes) I then diced up half of a small white onion and added it on top of the potatoes with two cubes of salt free butter. Bake in the oven at 350 for 1 hour. Then I bumped the oven temp up to 425 and let them cook for 15 minutes longer before pulling them out. I wanted the potatoes to be really soft on the inside but crispy on the outside. 😊 Not pictured is the Broccoli crowns.. the teen grabbed them and started munching. 😂 Hope this dish makes your mouth water! We had been planning a rooftop garden for @rosellasushi for a good while, especially after working with @joelorsini in Dallas. Covid showed us just how important it was to move forward with a concept based around not just sustainable fish, but a sustainable business concept that includes eliminating waste and growing as much of our own product as possible. It’s a young garden but she is a real beaut and pumping out more herbs and veggies than we could have hoped for. This Week in Pittsburgh Food: Two Sides of the Coin The pain the restaurant industry is feeling keeps getting deeper. We saw two responses to the emergent crisis this week. @safeservicepgh launched on Monday. The organization looks for best practices to promote the general health of staff, guests and the general public by offering well-organized lists of science-based resources to restaurants and catering companies. Check out my @pittsburghmagazine story for more about it. On the same day, we also saw a group of restaurant owners gather, maskless and without any physical distance, to “protest” Gov. Wolf’s handling of the crisis. His response has been imperfect, for sure. His seemingly snap decisions, while in the interest of the public health (if there is a viral spike you can’t just chill for a week; you really do need to close things immediately), no doubt cause grave financial and emotional distress. I get that. But do you think a no-mask, science-is-bad-so-let’s-just-open-up fauxtest is going to help? No. Do you want to eat at a restaurant owned by someone who believes this? I sure don’t. Nor will I want to after we get through this. The owners of @mixtapepgh announced they were closing their outstanding bar for good. Earlier this week I had the opportunity to visit Clint Brauer and see his farming robots in action. Clint was born and raised in Kansas but ended up in the robotics industry in California. Upon returning to Kansas, he took up farming and put his robotics skills to work developing robots that are trained to kill weeds, leaving time for he and others on his team to do other tasks on the farm. The robots target and kill the weeds using fire – not pesticides. Clint has put this technology to use at MG Honor Farms, where he grows both vegetables and traditional crops outside Wichita. We kicked off our spring flow monitoring project this week with our partners at TPWD and UT’s Bureau of Economic Geology. In some Minnesota towns, booya is as sure of a sign of fall as changing leaves and cooler temperatures. Last year, the annual booya in Hackensack, population 300, drew 200 people. But when COVID-19 hit, Hackensacks booya makers almost canceled this years festival. Almost. Instead, they decided to make it a drive-thru event — and still managed to draw a crowd last Friday. Booya — sometimes spelled booyah — is a longstanding tradition in some Midwestern communities. It’s a thick, hearty stew made from a variety of meats, vegetables and spices. It’s made in vast quantities and cooked outside in a large kettle, sometimes for several days. No two booya recipes are the same. We would like to thank the generous people at @ezclone for donating machines for our restoration project and propagation efforts! These are uniquely designed as they bypass traditional rooting mediums in lieu of a constantly-misted aerial chamber in which stems are kept suspended and evenly moist. The top portion has soft neoprene inserts that cuttings are placed into, while a portion of the stem hangs below and is suspended above a basin of water being constantly circulated and misted upwards. This provides an always-moist and never-anoxic or waterlogged environment for roots to emerge and grow in. We first heard of these machines successfully propagating difficult and novel species at the bio greenhouse. We have since had luck rooting Rosa californica, Baccharis salicifolia, Ribes amarum, Symphoricarpos mollis, Frangula californica, Venegasia carpesoides, and most recently the locally rare Atriplex watsonii which was nearly extirpated from Goleta Slough when State Route 217 was built.  We plan on trying the EZ-Clone on the critically endangered Arenaria paludicola next, which we are hoping to establish new populations of in our natural areas! #ccber #ucsb #ecologicalrestoration #plantpropagation #biodiversity #californianativeplants #ucsbgreenhouse - @ccber_ucsb on Instagram

THE NEEDS OF NEW ENTRANTS Between April and June 2020, the Landworkers’ Alliance ran a survey to better understand the needs, demographics and barriers facing new entrants to agriculture. Here are some key findings: - The most popular enterprises were those that provide a high turnover from a small area including vegetables, fruit, poultry, plant nurseries, processing and some livestock. Only 3% currently run dairy or arable enterprises, but 16% and 11% aspired to do so with the right support. - The respondents indicated very significant barriers to setting up and scaling up their businesses with 61% struggling with accessing land, 46% struggling with accessing finance and 54% experiencing access to relevant training as a barrier. - Only 15% have accessed grants and 8% had accessed loans so far, but 94% indicated that a grant would help them transform their enterprises. Manu here with a WYA Wednesday book review ‘THE GIFT OF THERAPY, An open letter to a new generation and their patients’ by Dr. Irvin Yalom. As a mental health clinician, I am reminded of the absolute privilege it is to collaborate with the clients I work with. In this book, Dr. Yalom gives us 85 very short essays on what he has learned in 35 years of practice as a psychiatrist, a therapist, and as a client in therapy. He offers up advice for therapists that are both thought-provoking and authentic. He shares his struggles and shortcomings as a therapist, such as combatting a lifelong feeling of imposter syndrome. I love that Dr. Yalom reminds his readers that therapists are human too and that we bring our own experience along with us in our work. Therapy is oftentimes an intimate and mutually influencing process that requires commitment and vulnerability on all involved. Purposeful self-disclosure by the therapist is beneficial when it serves a therapeutic purpose for the client. Yalom states that “the therapist must strive to create a new therapy for each client.” That is, you cannot use a one size fits all when working as a therapist. We are complicated beings and in order for our work to be effective, we must be sensitive and adhere to our client’s experiences without judgment. Dr. Yalom also offers up advice on how to listen without judgement, how to empathize, and how to be fully present with a client. What I appreciate most about this book is that Yalom humanizes the experience and struggles that therapists go through. As I continue on my path of becoming a more well-rounded and culturally competent clinician, Yalom reminds me to always practice self-compassion! Seaweed! Ever since @perry_falter introduced met to fresh seaweed at the organic market 7 years ago there has never been a menu without at least one dish involving this versatile ingredient. In the late 90s at Lof restaurant where I worked back then seaweed (allthough in a dried version like kombu, hijiki and wakame) was really common and allready a personal favorite. So either dried or fresh, savory or sweet (!) .. seaweed hits all the spots for me. Especially in vegetarian dishes it’s a miracle worker adding texture, umami and complexity and therefore an important staple in our kitchen at @chouxrestaurant. In this case we start building the dish with some Opperdoezer ronde potatos which we boil in kombu stock. (The leftover kombu is smoked and transformed into a super savory smoked kombu oil we drizzle on top of the dish and the kombu-potato-stock we use as a saline base for our sauce) On top of those potatos some crunchy fresh leaves of bib lettuce and then a salad of chopped kombu, dulse, sea lettuce, salicornia, sea purslane and codium. For added aromatic acidity some pickles (in this case unripe black currant capers and elderflower), crown dill and chive blossom from our abundant garden.
