Made this beauty again! There is just something about how everything works out so well and balanced in this salad! A complete meal with a lots of nutrition! . Serves : 2 ______________________________________ . Ingredients: . For the salad: 1 cup cooked quinoa 4 chopped cocktail cucumbers 10 cherry tomatoes 1 avocado chopped . . Dressing: 1 tbsp extra virgin olive oil 1/2 tsp minced garlic 1 tsp minced ginger 2 tsp lemon juice 3 mint leaves 1 tbsp chopped parsley Salt and pepper to taste . . Garnish: 1 tbsp chopped walnuts 1/2 tbsp dried raisins . . Method: 1️⃣Add all the veggies (except avocado) into a large mixing bowl. 2️⃣Into another small bowl, add the dressing ingredients and give it a good mix. 3️⃣ Add the dressing and the avocado into the vegetables and quinoa. Give it a good mix until we’ll combined. 4️⃣Make sure not to over-mix.
