Right out of the gate I taste Jalapeño and hints of the maple syrup which give the sauce a bit of a fruity quality. The brine definitely brings the salt to the party, which was a bit too turned up for me, I got a lot of salt. The vinegar rounds this out creating a pretty unique flavor. Many times when I see maple syrup in a sauce I am always left trying to find it, there is no doubt that it is in this sauce and it truly adds to the flavor of this one and I like that. The heat level is mild, there is a slight burn on the roof of the mouth but is not overpowering, I think it could hit just a bit harder. 🌶 I added this sauce to my ham and swiss egg beater omelette. The briny flavor woke up my breakfast and brought a bit of heat and the Jalapeño/Maple combo brought some sweet, fruity flavor. 🌶 Thank you for sending this one to me @scottsauceforall, the sauce is tasty and I love the squeeze pouch. 🌶 Heat 3/10. Keep on reading and leave a comment! ✎ ✎ ✎ ✎ ✎ ✎ ✎ ✎ I’ll admit, I don’t fully understand or know all the science behind coffee but I am slowly learning. My understanding of why we grind coffee is to make it easier for water to dissolve or extract its flavour. Sitting behind this statement is some interesting chemistry. Coffee beans are the roasted seed of the coffee fruit or cherry which contains solubles such as complex sugars, fats and acids. These solubles are developed through the coffee roasting process. A soluble can be dissolved (or extracted) by a solvent. Water is a solvent. It dissolves the solubles, the sugars, fats and acids, in the roasted coffee beans to make the coffee we drink! However, water can only extract or dissolve the solubles it can touch. For example, if you placed a whole bean into water to brew then the water could only ‘touch’ the surface area of the bean. However, if we grind the coffee we increase the surface area which the water can touch and therefore, the amount of solubles which can be extracted. Interestingly, I only 1 to 2 per cent of a cup of filter coffee will be made up of these solubles. This means that most cups will be 98 to 99 per cent water!! Did you find this interesting? I always like to offer a turkey burger at my outdoor barbecue for friends who no longer eat red meat, says Bobby. Luckily poultry is a perfect canvas for many big flavors, and this combination of tart goat cheese, sweet Meyer lemon-honey and peppery arugula makes for one outstanding burger. Ingredients Meyer Lemon-Honey Mustard: 1/4 cup Dijon mustard 1 heaping tablespoon clover honey 1 tablespoon fresh orange juice 1/2 teaspoon lemon zest 1 teaspoon fresh Meyer lemon juice, from Meyer lemons, if possible Salt and freshly ground black pepper Burgers: 1 1/2 pounds 90-percent lean, freshly ground turkey (not all white meat), chilled Salt and freshly ground black pepper 8 slices goat cheese, sliced 1/2-inch thick 4 sesame seed hamburger buns, split and lightly grilled Watercress, for serving Notes Cooks Note: If you are unable to find Meyer lemons, mix 1/2 teaspoon fresh orange juice and 1/2 teaspoon fresh lemon juice. For the Meyer lemon-honey mustard: Whisk together in a small bowl the mustard, honey, orange juice, lemon zest, lemon juice and season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow the flavors to meld. For the burgers: Preheat the grill to high. Form the meat into four 6-ounce burgers. If you are not going to cook right away, keep the burgers cold in the refrigerator. Sprinkle the burgers on both sides with salt and pepper. Grill until cooked through, 3 to 4 minutes on each side. During the last minutes of cooking, add 2 slices of cheese to each burger, cover the grill and let the cheese soften slightly, about 1 minute. Put the burgers on the buns, drizzle with some of the Meyer lemon-honey mustard and top with a few sprigs of watercress. Serve with extra mustard on the side.
