I run across claims of food additives and pesticide residues being “toxic” almost every day on social media. First, if they aren’t specifying what chemical is “toxic” AND at what dose it is toxic AND at what dose it occurs in foods, they either have no idea what they’re talking about, are trying to deceive you and/or are trying to sell you something. However, many times they will in fact cite a study, but if you actually take a look at the study it’s usually a large amount of whatever it is they are claiming is “toxic” that is being administered to rodents, but at doses hundreds to thousands of times above what you’d find in foods. These rodent studies can be very helpful and are utilized in many cases to determine the No Observable Adverse Effects Level (NOAEL) and subsequently the Reference Dose (RfD) or Acceptable Daily Intake (ADI) and tolerance levels in the case of pesticide residues or maximum usage levels for food additives in food products. So, these types of studies are necessary when determining what levels can safely be used in foods. What happens is that people intentionally or unintentionally use these studies to try to back false claims of pesticide residues or food additives being “toxic” or cancer causing, when in fact they are well below these established safety levels in the studies they’re citing. I’ve said it many times, but I’ll reiterate it here once again...the dose makes the poison. I posted recently about how I’ve even seen people cite Safety Data Sheets (SDS) to back claims for an ingredient being “toxic.” But again, SDSs are listing out potential effects due to toxic doses, not the levels actually in foods. One of my favorite examples is naturally occurring formaldehyde in foods such as apples and pears. Obviously formaldehyde can be quite harmful to humans in large doses, and you could cite rodent studies showing harm at high doses, but an apple or two a day is not “toxic” because it contains formaldehyde.
