Sperimentare è nel DNA di Valle Reale ed è così che è nato il desiderio di creare con il nostro Montepulciano un Ratafià, vino liquoroso tradizionale in Abruzzo come in Piemonte, Val d’Aosta e qualche regione oltralpe. L’etilmologia della parola ratafià deriverebbe dallespressione latina rata fiat l’accordo è concluso per l’usanza di consumare questo vino liquoroso alla ratifica di un trattato. Abbiamo finalmente trovato le piccole amarene selvatiche di montagna che abbiamo lasciato appassire su graticci prima del periodo di macerazione con il vino. Fra qualche giorno recupereremo il prezioso liquido e lo prepareremo per l’affinamento che terminerà indicativamente a Natale. La produzione è molto piccola e per questo la dedicheremo ai nostri amici e all’autoconsumo. Experimenting is in the ADN of Valle Reale and that’s why we decided to craft with our Montepulciano a Ratafià, a traditional fortified wine in Abruzzo as in Piedmont, Val dAosta and other regions beyond the Alps. The etymology of the word ratafià derives from the Latin expression rata fiat the agreement is concluded, for the habit of consuming this liqueur following the signing of a deal. We finally found the wild small sour-cherries from the mountain, and we let them dry on mats before the maceration in wine. In a few days we will get the precious liquid and prepare it for the aging that will end approx at Christmas. These radishes are the last from the garden this year. They’re not particularly beautiful like the French Breakfast, Saxas, etc. we harvested early on, but we didn’t plant these for their fresh flavor and beauty. We planted them for the late harvest to use as an ingredient in other dishes throughout the year. When cooked (I usually pan roast them) they develop a rich, buttery, peppery flavor that adds character to soups, sauces, gravies, and braising liquids. Soups like Salmon Bisque or Smoked Whitefish and Sweet Potato Chowder. Sauces like the Farmhouse Radish Bernaise sauce I created recently (see my post on July 2, 2020). Or other dishes like a the Cassoulet I made last week, or Roasted Root Vegetable Medley with potatoes, beets, turnips, onions, and sweet potatoes. So for now I’m off to vacu-seal the last of them and tuck them away in the freezer. How about you? Do you cook with radishes? We are opening the blueberry fields for Pick Your Own TODAY! • • • The minimum purchase for adults will be two quarts of blueberries and one quart for each child. We are implementing a minimum to emphasize that blueberry picking this year is about safely harvesting food, not just a leisure activity. We are looking for our best blueberry customers to come pick this year! • • • The price is $7.50/quart. People who want to pick more than the minimum will pay $2.95/lb and can bring their own containers or pick into one provided by us. • • • 10% Discount if you pick over 20 lbs! • • • We will require masks in the field as it is very difficult to always maintain 6’ distances. Eating is not permitted in the fields, and masks must be warn while picking. • • • We will assign customers to row, in order to maximize social distance in the field. Rows are flagged with alternating colored flagging. • • • Maximum of two children per adult. Children MUST stay within arms reach of adults. Children under 2 do not have to wear mask, but cannot handle or pick fruit in the orchard. • • • We will learn a lot the first few days about what safe practices work and rules may change as things evolve. I remember, back in my omnivorous days, I really enjoyed complex meals. The more ingredients - the better, the more stimulating - the better. Thai and Indian curries were a favorite and I so enjoyed dining at Warsaw’s ever changing multitude of trending restaurants offering exotic cuisines. Oftentimes I didnt feel good the next morning, but I stayed in denial about it (just so that I could keep on doing it) and just pushed thro the day, functioning at 50%. And then I read ‘The 801010 diet’ by Doug Graham. There I learned that its not about variety in one meal or variety during the day but rather seasonal variety during the year. There I read that come mango season, some mango fans will sustain themselves mostly on mangoes. I couldn’t wrap my head around this for a long time. That a serving of one type of fruit, say grapes, eaten as much as your hear desires in a sitting, can me a meal, and that not only it is ‘enough’ but it’s actually better for your digestion. It was just all so different than the starch-protein-veg model of the plate that has been battered into my head for as long as I can remember. Also, heavily reliant on the ‘award’ system of eating stimulating, complex foods for dinner (to reward myself after a day of work I never really wanted to go to) and relying on the food to put my into the much needed food coma in front of the TV and later Youtube, I didnt think a plate of grapes would ever seem appealing to me as a meal - I didnt think it could get me off. Luckily, I was wrong 🍇 ‘Seasonal variety over the year, rather than variety on a plate’ 🍇 And what are the seasons whispering to me right now at the end of the summer? We’re taking extra pleasure in familiar things in these extremely abnormal times. Wonderful fruit and vegetables are here — from our garden and local farms — and we’re regularly changing our menu to feature the best of the season. We’re sourcing as high a percentage of local, organic, or fair-trade as ever in our 13 year history — last month they made up 94% of our purchases! . But that’s about the only thing that’s normal for us right now. Summer is usually our busiest time, and while we are buying to the highest sourcing standards we’ve ever hit, we’re buying less food than ever before. Our cafe business in July was operating at 27% of last July’s sales. Catering (which in normal times makes up about half our business) was at 7% of last July, and we only hit that by offering home deliveries of baked goods, prepared food, produce, and grocery items. . Running any restaurant, but especially one like ours with values that are expensive to uphold (paying people fairly with benefits, sourcing local and organic at the highest standards possible, not cutting corners), requires near constant adaptation. Since opening in 2007, running Common Roots has been a repeated lesson in how to figure out new ways to do things a little bit more efficiently and constantly reinvent ourselves. That has been a skill and a mindset that has served us well in the pandemic, since every week seems to bring another pivot. Another skill I have learned running this restaurant is how to face working really hard and still losing money. Many years the numbers simply don’t work out. The difference this year is that we know that there is no chance to make it up — no amount of hustle and adaptation can fix the problem and there are no busy catering stretches to make up the difference. . We know that we’re among the lucky ones — we’re still here, still plowing forward. We’re just moving forward and celebrating that each week we get through is one week closer to a post-pandemic world. These are the roasted grapes that go into the freekeh salad (see last post for recipe!). Simply coated in olive oil and seasoned with salt and pepper, the unroasted grapes look like glass marbles. Roasted, they deepen in color and flavor and have a multitude of uses. Use the best grapes you can find, full of juice and snap. Growing up with ties to Hawaii, we ate a lot of dried salted plum. It’s one of those flavors that brings back a flood of memories. This summer, I found myself with more small plums from a friend’s tree than I knew what to do with. I remembered the salted plums and decided to make umeboshi. The process involves salting, fermenting, and drying in the sun. The flavor is a unique salty sour zing that pairs well with the traditional shiso mint leaves or orange slices.
