The end of this month marks my final days with not just a restaurant but a whole community of people that, for just short of the past two years, have been my closest confidants, friends, colleagues, and loved ones. When I first moved to Bangkok at the end of 2018, I had no idea that my path would lead me to where I am now. Now, almost 2 years later, I have grown into someone that I am incredibly proud of. Someone I can look in the mirror everyday and know that I made the right decisions to be exactly where I am. Along the way we had great victories (2 stars and 4th Best in the World to name a few), incredible accomplishments, and we weathered the storms together, teaching me a sense of resilience and strength that I didn’t know I had. I’ve met some of my greatest mentors and dearest friends and most importantly I’ve learned more about myself than I ever thought possible. Thank you to everyone for the last couple years and all of the love and energy we put into creating something truly special and rebellious. All good things must come to an end, and thus this is where I say my goodbye. To all of the incredible guests I had the pleasure to meet, the folks who came to the bar for an after-work glass, to the people that travelled far and wide so that I may pour you wine with your dinner, thank you. Roasted garlic — a secret weapon to uplevel your cooking. It’s easy, cheap, healthy and luscious. Plus: It makes your kitchen smell a-maz-ing. Add it to sauces, salad dressing, marinades, egg dishes... anything and everything. Here’s how: Slice off the top of a head of garlic, just enough to expose the cloves. Drizzle with olive oil. Wrap in foil and bake at 400F until the cloves are very tender, golden brown and fragrant, 40 to 60 minutes (start checking at 40; don’t worry if it takes longer). Remove from the oven. Preserving such precious jewels this way not only helps to reduce waste by making making such things instead of buying them ready made with packaging but also provides the dry store with food in the barren months to reduce the need to buy lesser quality ingredients from further afield. In the kitchen chefs often pretwnsiously talk about a mission to transform food to be a higher quality, but working with such high quality produce gives a great perspective lesson in that here we seek nothing more than to preserve what is already good about the raw produce that come through the door. This week I also waited in a 45min line for Uncle Tetsus (@uncletetsucanada) famous $10 cheesecake. I had to know if the hype was worth it for myself! Conclusion: it is a yummy well-priced cake, a crowd-pleaser to bring to a party Im sure. Is it the best cheesecake on the planet? No. Is it worth a 45-min line for? Probably not. It is a unique soufflé style cheesecake that definitely has its perks (I.e. no regretful dessert-belly), but it didnt personally satisfy my need for a super dense, moist American-style calorie-dense cheesecake!
