This year has sure been a challenging one on many different levels... Have had to take days here and there to reflect and recharge. Justice Ginsburg has passed away - a strong, independent trailblazer who dedicated her life to gender equality and civil rights... She was an inspiration and her memory and legacy will live on 💖 The other day I baked up a couple loaves that were 50% spelt - such a luxuriously silky, extensible dough to work with (see previous post for more detail about this grain). One loaf I gave away and one I kept for myself 😋 I used a mixture of bolted and whole grain spelt (bolted flour is a sifted flour that has some of the bran and germ added back in; whole grain flour contains the entire milled spelt berry). Spelt gives such a delicious nutty flavor which I love, but it can sure be a challenge to work with. I kept my dough at approximately the same hydration I normally work at for this experiment, but I would generally recommend dropping down the amount of water youre adding in to give the dough more strength. Even at lower hydrations, you may notice that the dough needs more coil folding to help build strength 🙂 Specs: autolysed 2 hours: 275g flour (75g @meadowlark_organics bolted spelt + 75g @centralmilling wholemeal spelt + 125g @centralmilling Electra Light strong bread flour) + 230g water. Hand mixed in the just-peaked levain (20%/55g), then 30 min later the sea salt (2%/6g). Performed lamination 30 minutes later as you see in the previous post, and then a coil fold as needed (I like to do a coil fold every time I notice the dough has gone slack and loose in the dish). For this particular slack dough, I was performing a coil every 30 to 45 minutes throughout the rest of bulk (see videos in previous post). Total bulk for this dough lasted 5.45 hrs at 74°F. Final shaped the dough, final proofed at 38°F 12 hrs. Baked one loaf as usual using my @challengerbreadware pan, and the other I steamed my oven and baked on a baking stone (Please see the link in my bio and scroll down for more tips on every part of the process including my various home baking setups) 🥰🌾 - @fullproofbaking on Instagram

Bahan roti Terigu protein tinggi 200 gr Terigu protein sedang 50 gr Gula pasir 50 gr Ragi 7gr Kuning telur 2 butir Susu full cream dingin 100 ml Unsalted butter 50 gr suhu ruang . . Isian : salted butter sesuai selera. Karena saya ukuran nya kecil2 saya potong2 seberat 3 gr, kalo teman2 buat ukuran besar beri isian lebih banyak ya . . Cara buat - saya buat pakai mixer, gunakan whisk yang model nya seperti ulir itu ya - campur terigu, gula, ragi, aduk rata - sambil di mixer masukan telur lalu masukan susu sedikit demi sedikit sambil di mixer hingga kalis - masukan butter mixer lagi hingga kalis elastis - bulatkan adonan, proofing 1 jam, tutup dengan plastik atau serbet lembap - kempeskan adonan, bagi adonan sesuai ukuran yang diinginkan diamkan 10 menitan tutup dengan plastik atau serbet lembap. (Saya bagi jadi 8, lalu saat beri isian di bagi 2 lagi jadi total 16 bj) - pipihkan adonan lalu beri isian salted butter, pastikan tertutup rapat ya supaya butter tidak bocor saat dipanggang - proofing lagi selama 30 menit, tutup plastik / serbet lembap - beri topping bagian atas nya - panggang suhu 200 celcius selama 10-13 menit atau hingga kecoklatan. Oven sudah di panaskan sebelum nya ya di suhu 200 celcius 10-15 menit . . Topping - unsalted butter 100 gr suhu ruang - gula halus 70 gr - telur 1 butir - Terigu protein sedang 80gr - 1 sachet kopi instant campur dengan 3 sdm air panas (saya 1 sdt kopi instant) - pasta kopi 2 tetes . . Quem aí gosta de bolinho de chuva? Tem sabor de infância, é delicioso e melhor de tudo é saudável Bolinho de chuva Low carb ✅Ingredientes 30 g de farinha de amêndoa 10gde farinha de coco 1 pitada de fermento em pó 1 pitada generosa de canela em pó 1 pitada de sal 50g de leite de coco 7g de manteiga sem sal 10 g de eritritol 1 ovo, pequeno (25-30 g) Óleo de coco (untar e borrifar) ✅Para pulverizar depois de pronto. 2 colheres de sopa de eritritol pulverizado 1 colher de chá de canela em pó ✅Modo de Preparo: Pré aquecer o forno em temperatura alta e untar uma forma com óleo de coco. Em uma tigela, combine a farinha de amêndoa, a farinha de coco, o fermento, a canela e o sal e misture bem. Em outra panela, leve ao fogo o leite de coco, a manteiga e o adoçante. Misture tudo e retire do fogo assim que a mistura ferver. Adicione a mistura de farinha e com uma espátula, misture tudo e continue mexendo fora do fogo até que fique consistente (cerca de 2 minutos). Quando a mistura estiver fria, adicione um ovo e misture para formar uma mistura pastosa (mas não muito molenga!). Misture o adoçante e a canela em pó em uma tigela média e reserve. Com o forno já quente, vá formando bolinhos com a ajuda de 2 colheres e colocando em assadeira previamente untada com óleo;leve ao forno bem quente, vire os bolinhos com a ajuda de uma escumadeira ou um garfo caso necessário Faça isso com bastante delicadeza, já que os bolinhos são bem frágeis. Passe os bolinhos já assados na mistura do adoçante e canela. Espalhar uma camada de açúcar na superfície de um prato e colocar as rodelas por cima. Seguir intercalando plantas e açúcar. Deixar em ar ambiente (aqui chamamos de sereno), em um local protegido, coberto com uma peneira. Na manhã seguinte, recolher, coar e guardar em recipiente adequado. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Modo de tomar ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Entre 6 meses e 1 ano: 1/2 colher das de chá, 3x ao dia. De 1 ano a 6 anos: 1 colher das de chá, 3x ao dia. De 6 anos a 12 anos: 2 colheres das de chá, 3x ao dia. Sourdough Brioche using Sweet Stiff Levain😍😍😍 . Its the same one that I posted on August 13th. This time, I didnt braid but shaped as normal sandwich bread so that I can show how lovely texture it has. So soft and so delicious! Love it!! I think I can apply this to buns. Gonna try soon🤓Recipe adapted from @thru1lense, July 30-31, and I adjusted the amount and time a bit. Thank you so much for the great recipe!🙏❤️❤️ . 한국어는 다음 포스팅에 있습니다! . Sweet Stiff Levain 60g starter+66.5 bread flour+32.5 water+ 10g sugar Mix all and leave it to become triple Fianl Dough All the stiff levain+250g bread flour+50g sugar+2 eggs+20g veg oil+30g butter+50~60g milk+2g salt+40g cranberries+20g orange peel+some of orange zest(I forgot🙄) 1.The night before, prepare sweet stiff levain and leave it to become triple. 2.The next morning, start kneading by using a stand mixer all final dough except veg oil n butter until it gathers a ball. Add oil first and when fully incorporated add butter. And knead at medium speed until window pane stage. Then add cranberries and orange peels(soak them into rum or cointreau water) and mix at low speed. 3.Let it ferment for 5~6 hours at RT(25C) with 2 lift n folds with 1 hour interval. 4.Punch down dough to degas and devide it into 3 and round them. Bench time 20 mins. 5.Shape and tuck them into the pan(Mine is wxlxh=10x22x9.5) and let it ferment at 28C for about 2~2.30 hours. 6.Eggwash before baking. 7.Bake in the preheated oven at 165~170C for 20 mins with water tray.
