While we are closed we have been doing lots of maintenance and r&d for some jarred products 🥳. Bamboo shoots are in season for a few weeks this time of year so we’re getting as much as we can and stocking the larder. We first boiled these with rice bran and dried chilies to extract the bitterness of the shoots. Then our first round of tests were: 1)bamboo shoots marinated in a seasoned dashi 2)a charred jalapeño and onion bamboo shoot pickle and 3)bamboo shoot barigoule with mirepoix and sake/mirin. Once we have a good amount made and jarred we will start selling them!! Thank you @penrynorchardspecialties for harvesting fresh shoots and sending them to us. These are easily the nicest and most tender and delicious ones we have ever seen in this country. We are so lucky to have such dedicated farmers we can continue to support in these weird ass times. It’s the time of year when the tomatoes won’t ripen because of the cold and you have a bunch of green ones left on the plant. I love making this green tomato relish. Dice green tomatoes, peppers, onion. Make a light golden caramel from 2 parts sugar 1 part cider vinegar, add 4 gloves sliced garlic, 1 tsp chili flake, 1 TBLS mustard seed, 1 tsp celery seed, cook 1 minute, add tomatoes, peppers, onion, turn to low and simmer for about 10 minutes, chill down, adjust with vinegar. This is a great condiment for charcuterie or roasted pork. I am using it today for our fried chicken sandwich @catalystrestaurant staff meal. - @williamkovel on Instagram

This technology uses R-744 refrigerant which has a Global Warming Potential (GWP) of just 1. Commonly used units, such as those we replaced have a GWP of 3922 (swipe right to see a graph of this). We understand we are the first retail store to use this technology in New Zealand! With many restaurants closed or with reduced volume of guests, local farmers who supply these restaurants have been hit extremely hard by the pandemic. In June, we identified a goal to source 10% of the ingredients in each MCK meal we make from local farmers. By August, we brought that number up to 25%. Feeding Minnesota isn’t just about getting food on the tables of Minnesotans.
