‘ALL BARK, NO BITE’ Reishi mushroom & cacao nib tea steeped with charred orange peels & dehydrayed cherries, Liber & Co. kola syrup, Giffard’s non-alcoholic aperitif cordial and a single (but essential) dash of Angostura bitters. Non-diluted but chilled & served over a big rock. - I have not created an original cocktail in well over a year. First, I’ve got a phenomenal & creative team and they are much better at recipe generation than I am. In recent years, I’ve come to learn I am a far better editor than I am creator. Second, my business requires my attention in too many other areas. Third, I’ve been in a real creative rut because ::gestures broadly at everything:: I mean...cocktail recipes. Now? Woof. Easy to fall down the “who gives a shit?” rabbit hole. I did, however, have my interest piqued by the proliferation of non—alcoholic cocktails. That, combined with my own diminishing consumption means that sometime around mid-Summer, I got hell-bent on creating a spirit-forward tasting drink that was, in fact, spirit free. I’ve been tinkering away at this for a good long spell and I’m finally happy with a finished product. The flavors were always there - getting the texture (and financial viability) right was tricky. Here is my California Negroni! Just with ratios I prefer for these specific bottles, plus just a little something extra, all in a chalice fit for cocktail royalty (picked up from our good friend Emily @thethriftedtable ). Beautiful local gin backbone full of botanicals. Delicious local vermouth, lightly sweet and packed with layers of herbal notes. Campari for that delightfully bittersweet kick. Plus a couple drops of orange blossom water to bring the whole thing together and waft that heady aroma! Finished with a beautifully dried orange wheel gifted from @thecocktailgarnish ! Cheers! Don’t worry, riffs coming! . California Negroni 1 oz gin (@graywhalegin ) 3/4 oz Campari (@campariusa ) 1 1/4 oz Red Vermouth (@twhollisterco ) 4 drops orange blossom water Twist of orange and a dehydrated wheel! . Add gin, Campari, vermouth, and 2 drops of orange blossom to a mixing glass with plenty of ice. Stir Until well chilled about 20-30 seconds. In a rocks glass (or chalice) with a large cube express a twist of orange and rub around the rim. Strain cocktail into the glass over ice. Add the remaining drop or two of orange blossom, give a quick swirl to spread and garnish with a dehydrated orange wheel. It’s Thirsty Thursday and today I’m enjoying a nice big g&t with a new gin that arrived on my doorstep today. This gin comes to me from the fabulous kids @oldyoungsdistillery and is the first gin issued to members of their Juniper Society. I think you’re all going to love the name of this one, even if it is a bit naughty. This special, limited-release small batch gin is called “F*ck COVID”. Yep, it’s been crafted to send a big “F You” to the virus that has hit the whole World so hard. The virus that has had a HUGE impact on all businesses, small and large, and all people, old and young (see what I did there?). At 60% abv this gin is a big one but oh man, it is soooo smooth (thanks to the inclusion of the distillery’s own honey). With healing things like ginseng and a nice helping of Tasmanian pepperberries, this gin is savoury, smooth, spicy and delicious! GIN SMILES • Looks like my drink is pretty happy with the spices! With the mad popularity of the GnT theres been an increasing tendency of going overboard with the fruits, flowers or spices (some of them looks more like gardens than drinks!). You end up almost being assaulted by all the contrasting aromas and end up losing the Gin. So instead, pick one or two things (remember with Gin infusions, less is more and for spices, less is moooore!!) that would either lift the Gin botanicals or even contrast them in a fun way. I kept it simple here with some @suntory_rokugin on Ice. Dropped in some Pink Peppercorn and Long Pepper, stirred for 15 seconds and thats it! The Glenrothes Soleo Collection ⠀⠀ Single Malt Scotch Whisky ⠀⠀ Since 1991, Speyside’s @theglenrothes has been known for the vintage statements found on their single malts. However, in 2018 the distillery pivoted and moved towards the more common releases found in the industry featuring age statements. The Soleo Collection is The Glenrothes new standard bottling line, replacing both the Vintages and Reserves. ⠀⠀ The Soleo Collection is about sherry casks, and while sherry casks have been integral to the distillery for years, this is the first time the they have been used exclusively (90% of the casks currently maturing at the distillery previously held sherry, with 70% of those being first-fill). The collection is named after the process of sun drying Spanish grapes before pressing them to make sherry. Each whisky in the series has a different color label, reflecting the different stage of the grape’s maturation. ⠀⠀ The initial collection includes: ⠀⠀ The Glenrothes 10-Year-Old (40% ABV) – Matured exclusively in sherry seasoned oaks casks, the yellow label denotes the color of the grape at the point it is plucked from the vine. ⠀⠀ The Glenrothes 12-Year-Old (40% ABV) – Matured exclusively in sherry seasoned oaks casks. ⠀⠀ The Glenrothes Whisky Maker’s Cut (48.8% ABV) – The only non-age-statement whisky in the collection, it is matured entirely in first fill sherry casks. “Bob’s your uncle” is a funny expression that basically means “and there you have it.” As in, “To make a Negroni, combine one part each gin, Campari and sweet vermouth … and Bob’s your uncle…” . . This Negroni riff was going to start with Rock and Rye replacing the gin. Rock and Rye dates back to the turn of the last century and originally involved adding rock candy (hardened sugar) to rye, usually with citrus and sometimes also spices. The recipe I use calls for caramelizing a sliced orange with 1 cup sugar and 1 cup water for about 30 minutes. Then you take that reduced caramel-orange syrup, about half a cup, and mix it with a liter of rye, from which you’ve removed half a cup (so it fits back in the bottle. . . I next had my hibiscus-infused Campari ready for the Campari (obviously) component, and for the”vermouth” component, I meant to use half red wine syrup and half Amaro Abano…until I had a few mishaps… . . Blame it on the new stove’s extra hot burners, but I overcooked the syrup a bit, giving it a “burnt orange” quality. Then, don’t ask how, but I grabbed a bottle of bourbon instead of rye and only realized it after I had already added half the bottle to the burnt orange syrup. Instead of Rock and Rye, I now have Burnt Orange Bourbon, which I will dub BOB. . . Next, I mistook the syrup jar for the Campari jar and added a full ounce of it to my BOB. Instead of tossing it and starting over, I skipped the Campari and went with a full ounce of Abano. . . That’s how I discovered that if you want a lovely, port-like cocktail to sip after dinner, combine an ounce each of BOB, wine syrup and Amaro Abano and…. . . So very sad to hear the news about Milk & Honey closing today - yet another casualty of Covid measures. It was the first proper cocktail bar I ever went to. The secret door in Soho, the stygian gloom, the candles, the tinkly jazz, the bartenders who crouched down by your table to take your order, the impeccable service and flawless cocktails - it was a total thrill. An adventure. It’s where I took my future husband on our first date. I remember I drank a Sazerac because I wanted to impress him. It was a bar that spawned imitators around the world and launched so many bartending careers. I tried to get one last table this weekend but not surprisingly they were booked out. Cold Brew Coffee How to recreate my cold brew at home. . WHAT YOU’LL NEED • 200g of filter roast coffee • 2lts water • or adjust to 10:1 (brew water:coffee) . TOOLS • Toddy Cold Brew System (A French Press and filter paper will do the job) • Scales . METHOD 1. Insert felt filter into the brewers and rubber plug. 2. Grind 200g of coffee on a coarse setting slightly coarser than French press 3. Measure 2litres of water 4. Add coffee grounds and water to Toddy brew system (if you’re using a French press start here) 5. Set aside in a controlled temperature, I use a fridge, for 14hrs. 6. Release the plug to drain and filter into a carafe. (French press, filter brew through paper filter into a carafe) 7. Enjoy over ice. Kings County Distillery was founded in New York City in 2010 by Colin Spoelman and David Haskell. This makes it the oldest distillery in the city and the first since prohibition. The Bees Knees is a classic gin cocktail with honey, lemon, sometimes orange juice and bitters, so for my play on these flavours I added a gin with notes of orange, white chocolate liqueur, and the honey element from @BarenJagerHoney liqueur imported in the US but @NicheImportCo who are supporting this month’s contest . Bärenjäger is a 35% ABV liqueur stacked with natural honey on a base of vodka, the recipe dates back to 18th Century Germany and takes its name from the Deutsche for Bear Hunter! The honey comes from Mexico and there’s a few hidden ingredients too! Apparently concocted to lure bears out of caves, nooks and crannies it became a favourite tipple of the hunters . Hopefully this recipe will lure a few bees and chocolate lovers too! . BEARS KNEES! 45ml #Tanqueray Flor de Sevilla #Gin 15ml #Bärenjäger honey liqueur 10ml White Crème de Cacao 20ml Fresh Squeezed Lemon Juice 7.5ml #XecoWines Amontillado #Sherry Dash #MsBettersBitters Chocolate Bitters Garnish: Dehydrated orange, Beeswax, #MilkyBar . Repost from @choccoffeewine • Let’s feel the groove because it’s Saturday yay. I knew that I am going to make a classic negroni before this week was over. It took me a while to decide what chocolate to pair with it. But then I thought - lets do an impromptu funky pairing. It started with being inspired by a cocktail called Amaro di cocco, created by Ryan Lotz for Shore Leave in Boston, Massachusetts. Its name translates from Italian to Coconut Bitter. This cocktail is mash-up of a Kingston Negroni and a Piña Colada, almost as if both were made separately and then combined at the end. So, as decided I did make a classic negroni. Then tasted a vegan milk chocolate smoothie bar from @bixbychocolate , which is made with coconut milk and imbued with dried dragon fruit , finishing with coconut and chia seeds. CONGRATULATIONS! to the @tkriders on their 4th @cplt20 Title! 🏆 ⠀ When I set out to make a Cricket Cocktail, it was quite the challenge! How could I replicate cricket in a cocktail? ⠀ Well heres the answer!⠀ ⠀ Bat & Ball - 1.5 oz @eldoradorums - 0.5 oz @camparitrinbago - 1 oz Grapefruit Juice⠀ - 0.5 oz Simple syrup⠀ - 2 dashes Peychauds Bitters⠀ ⠀ ⠀ Ok, the Ice Ball, thats what you are here for!⠀ ⠀ Get a spherical ice mold and fill it with water. Place in the freezer for about an hour and a half. Heres the backstory: 123 years ago, small distillers wanted a way to certify to the consumer that what they were buying was authentic, full-proof, well-aged whiskey authored by the distiller and distillery on the label. In those days, BiB communicated to consumers they were buying whiskey as the distiller intended, not diluted or adulterated. Today, it says that a distiller made the whiskey, not a branding company, an ad agency, or a venture capital fund. We started making bonded whiskey in 2016 and helped reignite an interest in this historical style which highlights transparency and authenticity. Last years whiskey of the year from @whiskyadvocate was @georgedickel bottled-in-bond, the first release from @nicolemarieaustins tenure as distiller there. She began her whiskey career at Kings County, the first example of one of the big, legacy distillers hiring from the craft world, and it would make sense that distillers large and small would share a commitment to the craftsmanship and transparency that BiB offers. Distillers are proud of their work, and bonded whiskey shows that best. Ours is rich and full-bodied with notes of chocolate, molasses, and vanilla—rich deep low notes offset by honey, cinnamon, and baking spice. Its a bold whiskey even within the category—indeed this won best small batch bourbon under 5 years from @sfwspiritscomp (the Oscars for spirits) and a rare gold medal from @craftspiritsus in 2020 and many other awards over its history. Released twice a year, this whiskey is becoming well-known and even scarcer. While this was often on hand from the distillery in the past, those days are gone as these limited-release, allocated whiskeys are sought after and go fast.
