Late breakfast 🥚 I baked an aubergine the other day (pierce with fork all over bake 45 min at 200 c or until wrinkly & collapsed!). Then add lemon juice, garlic clove, sea salt & drizzle of olive oil. I use a mini @kenwoodworld blender (also fabulous for stiff egg whites!). A soft boiled egg from @riverfordnwlondon and Dukkah from @spicemountainuk. Aubergine caviar is just the tastiest thing ever. Try it, totally vegan without the egg and may as well use multiple aubergines to make a big batch. Add to sandwiches as a spread, straight from the spoon or as a dip 💛 - @dotscookin on Instagram
