Yup, I am a focaccia kind of girl and sourdough focaccia is one of my favorite breads. There is something intensely grounding in the way this bread smells, feels and tastes, and also the process of making it is just about the same – simple and fulfilling. This is Focaccia Cacio e Pepe – Pecorino Romano and freshly cracked black pepper (you’ll find the recipe and crumb in my previous post). Despite how it looks, there is actually very little cheese in it -- 100 grams even less, because a little goes a long way. I like simple focaccias – no elaborate toppings (after all, isn’t that what pizzas are for?) -- and I like to bake focaccia outside the pan, it makes for a more rustic look and feel (if you use strong flour and work out the dough properly, even with extreme hydration the bread will hold its shape nicely). Another classic combination is parmesan and rosemary, and if you are ready to go a bit further, a touch of lavender. Tortilla z jabłkiem i bananem❕ Kto powiedział, że tortille mogą być tylko w wersji wytrawnej? 🙈 Jedliście już tortille na słodko? Jak nie to polecam! Są szybkie i łatwe 🙂 Potrzebujemy ⚪ Jabłka - około 250 g/ 2 sztuki ⚪ Banan - 90g/ 1 duża sztuka ⚪ Tortille - 2 sztuki ⚪ Woda - 2/3 łyżki ⚪ Cynamon - szczypta ⚪ Sok z cytryny - kilka kropel ⚪ Skyr/ jogurt - 150 g (opcjonalnie) Jabłka obieramy i kroimy w kostkę, a następnie wkładamy do garnka. Dodajemy niewielką ilość wody, szczyptę cynamonu oraz kilka kropel soku z cytryny. Całość gotujemy pod przykryciem kilka minut, aż jabłka zaczną się rozpadać. Dodajemy pokrojonego banana i gotujemy jeszcze około minuty. Na tortille dajemy jabłka z bananem. Składamy według uznania, a następnie podpiekamy w opiekaczu. Podajemy ze skyrem lub ulubionym jogurtem. Ja dodatkowo użyłem niskokalorycznego sosu o smaku brzoskwini od @sklep.sfd który wrzucę na story. Ingredients For Pesto 4 tbsp Peanuts/Pine nuts 2 cups Fresh Italian Basil 2 Cloves Garlic Sea Salt, to taste 3 tbsp Olive Oil For Soup 3 tbsp Olive Oil 2 Bay leaves 2 tbsp Garlic, chopped 1 ½ Cup Onion, chopped 1 cup Carrots, diced 1 ½ cup Celery, diced ¾ Cup Kidney beans, boiled 1 tsp Oregano, dried 1 tsp Italian seasoning 1 sprig Rosemary 4 Large Tomatoes, chopped 1 cup Zucchini, diced 4 tbsp Tomato Puree 750ml Vegetable stock 1 tsp Black Pepper powder Salt, to taste 1 cup Cabbage, diced 1 Cup Parmesan Cheese ¾ Cup Penne/ Marconi pasta . . . . Process 1.For pesto, combine all the ingredients and blend it to a coarse paste. Keep aside. 2.Heat oil in a large pot. Add bay leaves and saute garlic for few seconds. 3.Add onions and cook till translucent (do not brown them). Add carrot and celery, sweat them for few minutes. 4.Once the vegies are cooked, add kidney beans, oregano, Italian seasoning, rosemary sprig and tomatoes. Saute everything until it realises nice aroma, for about 5mins. 5.Now stir in zucchini and tomato puree. Now fill the pot with vegetable stock and 1 cup of water and season with salt and pepper. Let it come to a boil, then simmer for 8mins. 6.Add cabbage, parmesan cheese and pasta. Turn the flame to high and let it boil till pasta is cooked. 7.Switch off the flame. Garnish with parsley and parmesan. All credit to @kaylieshealthyrecipes at https://paleoglutenfree.com/recipes/two-ingredient-paleo-cauliflower-tortillas/⠀ ⠀ ⠀ INGREDIENTS⠀ 2 cups minced raw cauliflower really fine- like flour⠀ 1 cup cassava flour⠀ 1/2 teaspoon sea salt optional⠀ ⠀ ⠀ INSTRUCTIONS⠀ In a food processor, mince cauliflower until it reaches fine rice or flour-like consistency, then transfer to a towel and squeeze out excess water. Put it back in food processor and combine with cassava flour for 2-4 minutes until it reaches dough consistency and clumps together (you will have to either shake the food processor while it blends or pause and scrape down the sides in intervals to ensure even mixing). Divide dough into 10 pieces and roll out into about 5 tortillas 1/4 thick. Heat a skillet over medium heat and drizzle lightly with olive oil. Für die Spieße: 500 g Rinderhack 1 Zwiebel 1 Knoblauchzehe 1/2 Bund Petersilie 1/2 Teelöffel Kreuzkümmel 1 Teelöffel Paprikapulver Salz, Pfeffer Für die Joghurtsauce: 100 g Joghurt (3,5 %) 1 EL Zitronensaft 1/2 Knoblauchzehe 1 Zweig Minze Salz, Pfeffer Schaschlikspieße Für die Joghurtsauce Knoblauch schälen und zerstoßen. Minzblätter abzupfen und fein hacken. Knoblauch, Joghurt, Minze und Zitronensaft vermengen und mit Salz und Pfeffer abschmecken. Für die Köfte-Spieße Zwiebel und Knoblauch schälen und fein hacken. Petersilie fein hacken. Alle Zutaten für die Spieße miteinander zu einer homogenen Masse vermengen. Den OptiGrill einschalten, das Burger-Programm auswählen und mit „OK“ den Aufheizvorgang starten. In gleich große Portionen teilen und als längliche Fleischrollen um die Spieße drücken. Shakshouka - Indian Version👌👌 This dish is basically originated from Israel ,Made up of dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onion and garlic, and commonly spiced with cumin, paprika, cayenne pepper, and nutmeg. The dish has existed in Mediterranean cultures for centuries. Inspired from @kabitaskitchen - YouTube channel @youtube Ingredients required * Tomatoes (mandatory) - Tomato puree * Capsicum * Desi spices * Onion(2-3) * Garlic(8-10 cloves) * Green chillies(4-5) * Eggs (as per no of persons) * Coriander * Indian herbs( I used oregano) * Cheese (optional) * Salt n black pepper Process * Make a puree first from the tomatoes * Take a nonstick pan or non stick cookware. Add oil, garlic, green chillies. Saute * Add onions. Saute. Cover it with a lid for 2 mins in low flame. * Add capsicum. Saute. Cover it with a lid for 2 mins. * Add tomato puree. Saute. Cover it with a lid for 2 mins * Add the masalas. Saute . Again cover. * Add water n let it cook. Cover it for 2-3 mins * Check the color and consistency. * Now take a small bowl. Pour the egg into the bowl * Make spaces in the pan to pour the eggs. * Pour the eggs. Let it cook for 4-5 mins. Add salt on to the eggs. Pepper powder . Ingredients For the stuffing: - 200g Pulled oats - Spring onion, 2 tbsp chopped - 1 tsp minced ginger - 1 tbsp soy sauce - 2 tsp sesame oil - 5 tbsp water - salt and sichuan pepper to taste . For the wrappers: - 2 cups of flour - 1/2 cup of water plus some extra tsps if needed . For the sauce: - half cup chilli oil - 1/4 cup soy sauce - 2 tsp garlic, grated - 1 spring onion, chopped . Method: - Lightly saute the pulled oats on low heat in sesame oil. Add all the other stuffing ingredients and fry for a min. Set aside to cool. - Mix the sauce ingredients in a bowl and set aside. - Then add the stuffing and steam for 3-4 mins. - Add it to the sauce and serve with a sprinkle of chopped spring onion. Wrap n’ Bake Samosas by @thevegansara 💛 Recipe: Ingredients⠀ 4 cups of Yukon gold potatoes diced into 1/3 inch cubes ⠀ 1 cup frozen peas⠀ 1 tbl oil⠀ 2tsp mustard seeds⠀ 2 tsp cumin seeds⠀ 1/2 tsp turmeric⠀ 1 tsp chili powder⠀ 1 garlic clove minced⠀ 1/2 inch grated ginger⠀ 1tbl finely chopped cilantro⠀ 1/2 tsp of Garam Masala ⠀ 8 count 10 in flour tortillas⠀ 3 tbl flour mixed with equal parts water for flour paste.⠀ ⠀ Instructions⠀ Cover potatoes with water in a saucepan, bring to a boil, reduce to simmer cook till fork tender about 8 min⠀ Using large frying pan add oil on med heat then add mustard & cumin seeds. Cook until seeds begin to brown & pop, about 1 min⠀ Add garlic, ginger, turmeric & chili powder, stir 2 min⠀ Add potatoes, cook 5 minutes, stirring frequently, add peas half way through ⠀ Mash potatoes a bit, you don’t want the pieces too big, but not too small. Add salt, cilantro, and Garam Masala, mix, let cool⠀ Cut Tortilla in 1/2. Take one of the halves place the straight edge closest to you. Take left corner bring it up to the top of the crescent so it forms a triangle. Take right corner so it crosses over the first fold and forms an equal sized triangle on top.Use the flour paste to seal the edge of the seam. Press firmly. Hold the folded shell upright so it is in the shape of a cone.Add 2 tbl potato filling to the inside of the cone. Then seal the top of cone with flour paste. Press firmly to ensure you have a good seal.Repeat.⠀ Mist with oil. Bake on parchment lined baking sheet seam side down at 400 F for 8 min, flip samosas,bake for another 4 min. 🌿VEGAN NAAN🌿 ⠀ We are waiting for your like❤ ⠀ ✅Ingredients: ▪️260g thick coconut yogurt (or any thick vegan yogurt) ▪️250g self rising (self raising) flour (gluten free or regular) ▪️1/2 tsp baking powder ▪️1/2 tsp salt (optional) ▪️Toppings: garlic infused oil, fresh coriander, salt 👩🍳How to: ▶️Add all your ingredients into a bowl and mix together. I initially just do this with a spatula and then as it starts to come together I use my hands to ensure its all pushed into a big ball. ▶️Knead the dough briefly so its smooth and combined (you will need a little flour if its a bit sticky, it shouldnt be) ▶️Cut the dough into 3 pieces ▶️On a lightly floured surface use a rolling pin to roll out your dough. I roll mine to just over 0.5cm thick in a sort of naan shape! ▶️Heat up a frying pan - no oil needed. ▶️Carefully lift up your rolled dough and place it in the heated frying pan. Allow to cook on one side for a few minutes, you should start to see some puffing up. ▶️Once some golden browning has occurred, flip the naan and cook for slightly less time on the other side. ▶️Brush the naan with a little garlic oil, add some chopped up fresh coriander and a little salt. ▶️Repeat for additional naans. ⠀ Enjoy! ⠀ by @beckyexcell - @vegfoodspace on Instagram

Super soft, porous Dahi Vada - it is one of my most favourite chaats that I can eat any time of the day. But, personally i do not like the one with topped with spicy and sweet chutneys. I made a very big batch of vada for about 1 kg of Urad dal a day prior to Eid. As I am crazy fan of Dahi Vada , I tend to freeze the vadas so that I can assemble in no time whenever i want to eat it. This method also works best for the sudden arrival of guest or if you are planning oarties or get together. The vadas freezes very well for good 4 months.
