Check out this Coconut Shirataki Rice with Sweet Adzuki Bean recipe by our in-house chef Norie! Using our Shirataki Rice, Organic Coconut Milk or Cream, Organic Rice Syrup, and Organic Azuki Beans. Top it off with your favourite seasonal fruits, and you have the perfect guilt-free dessert or snack. Ingredients (4 servings) ------------------------------- ◘ 2 packets Spiral Shirataki Rice ◘ 1.5L hot water ◘ 1C Spiral Organic Coconut Milk or Cream ◘ 1 can (400g) Spiral Organic Adzuki Beans, drained ◘ 1/2C Spiral Organic Rice Syrup ◘ Seasonal fruits, sliced or chopped METHOD ------------- 1. In a small saucepan, add Adzuki beans and 1/4C rice syrup, heat and stir until the liquid has evaporated. Set aside and let cool at room temperature. 2. In a mixing bowl, mix coconut milk/cream with the remaining rice syrup. If the coconut has separated, warm slightly and stir to combine. 3. In a pot of boiling water cook the shirataki rice for about 10-15 minutes then drain. Add to the coconut mixture while its hot and stir through. 4. Place the coconut rice mixture into a serving bowl, add the sweet Adzuki beans and seasonal fruits on top. Recipe (makes 3 servings) Ingredients: 14oz [397g] firm tofu, frozen and thawed to room temperature 1/2 small red bell pepper, 1/2 small green bell pepper, 2 tablespoons chopped onion 1/2 cup pineapple chunks 2 tablespoons ketchup, 2 tablespoons sugar, 1 tablespoon rice vinegar, 1 teaspoon salt, juice of 1/2 lemon, 1¼ cup water + 1½ teaspoon corn starch Tofu coating: 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 tablespoon cornstarch plus more dusting Break the tofu into pieces and season with salt, pepper, and rub tofu cubes with cornstarch. Fry or air-fry tofu until golden brown and set aside. In a heated non-stick pan, add 2 teaspoons of oil and sauté the onion and bell peppers for about a minute. Dish out and set aside. Using the same pan, add in the water with cornstarch, ketchup, rice vinegar, sugar, and salt. Bring the mixture to a rolling boil while stirring continuously. Then, lower to simmer and cook until the sauce is slightly thickened. Add the pineapple and sautéed veggies and stir to combine, then cook for about 30 seconds. Finally, place in the cooked tofu and toss everything together until well combined and season with salt. Sweet and Sour Tofu 400 gr firm Tofu, cut into cubes 1/4 onion, Julienned 1/3 cup Pineapple cubes 1 small bell pepper, cut into chunks 1 tbsp oil 3 bird’s eye chili, thinly sliced (optional) Oil for deep fry Sauce 1 tsp hoisin sauce 2 tsp oyster sauce 1/2 cup water 1 tbsp Chili sauce 3 tbsp ketchup 1 tbsp soy sauce 2 tbsp honey 1 tsp minced garlic 1 tsp rice vinegar 2 tsp cornstarch Garnish Thinly sliced Green onion sesame seed Combine sauce ingredients into a bowl, mix well and set aside Rinse and pat dry tofu using paper towel. Heat oil in a pan, deep fry tofu until golden. Drain and set aside heat 1 tbsp of oil in a pan/wok, saute onion until translucent, add bell pepper and bird’s eye chili (if using) and cook for a min Add in sauce mixture let it comes to a gentle simmer and thicken, add fried tofu and pineapple cubes stir to combine for another min and remove from heat. Taking a break from my go-to fried rice for sweet n sour chicken + veggies 🤩 This really hits the spot after you’ve been in the lab for hours on end and want some good ol comfort food 🥘 tastes like the real deal 😍 I added red and green peppers, beans, mushrooms, and cabbage to pack it with alll the veggies, plus a lil 🌶 kick! Try this one out, I promise you won’t be disappointed! Ingredients 2 chicken breasts diced 1 cup green beans 1 cup sliced mushrooms 1/2 each red and green pepper 2 cloves garlic minced 1 cup shredded cabbage 3 tbsp ketchup 2 tbsp soy sauce 2 tbsp vinegar 3 tsp honey 2 tbsp water Salt and black pepper to taste To make 👉🏼 Pan-fry 2 chicken breast with 1 tsp oil and cook for 5-7 minutes each side. While chicken is cooking, dice all the veggies and cook in a pan with a little oil until tender. Add veggies to the chicken. Mix all sweet n sour sauce ingredients together and pour onto the chicken and veggies. Sofreímos la cebolla y el ajo un par de minutos e incluimos la heura congelada 2. Cuando ya esté descongelada, añadimos el pimiento y seguimos cocinando hasta que todo esté de color tostado claro 3. Oil Butter Finely Chopped Coriander 1 Block of Paneer 1 Finely Chopped Onion 1 Finely Chopped Tomato Tomato Puree 1tsp Fennel Seeds 1tsp Coriander Powder 1tsp Chilli Powder 1tsp Turmeric Powder Salt to taste 4 Cloves 1 Cinnamon Stick 2 Cardamom Pods Water 2 Garlic Cloves Ginger Peppers (optional) 1 Green Chilli (optional) . Method: 👨🍳🔪🍽️ . 1. Heat some butter into a pan, once melted, add in your chopped onions and fry for 1 minute on high heat. . 2. Turn the heat low and then add your cloves, cinnamon stick, fennel seeds and cardamom pods and cook for 5 mins. . 3. Then add your crushed ginger and garlic and cook for a further 5 mins. . 4. Add the Coriander, chilli and turmeric powder and fry gently for a minute. . 5. Add the tomato purée and stir in enough hot water to make it saucy. Bring to the boil and simmer, stirring occasionally for 20 minutes. Season with salt. . 6. Add the chopped paneer cubes into a frying pan with some oil and fry gently until golden brown. . 7. Add the paneer into the sauce with the chopped peppers and tomatoes and cook for a further 10 mins. . 8. Serve the Paneer and sprinkle with coriander leaves and 1 sliced green chilli. . 9. The perfect healthy dinner to end my weekend! This poke bowl was so fresh and so good! I used rice and mixed greens as the base, and topped it with salmon, carrots, cucumber, red cabbage, green onions, sesame seeds and ginger. You can add any other toppings you normally get on your poke. I served it with a spicy mayo, sweet chili sauce, and soy sauce! Salmon marinade: -1lb sushi grade salmon -1/4c soy sauce -1T sesame oil -1/2 garlic clove minced -1t ginger 1) cut the salmon into 3/4inch cubes 2) mix all of the ingredients together and marinade the salmon for at least an hour. the longer the better. 3) serve the salmon on top of rice or greens, and top with your favorite poke topping - @healthyishanddelish on Instagram

A qué no sabias que esto es tofu! 😏 una muy rica manera de prepararlo por @uchi.shares 👩🏾🍳 en el #retoseasonbox de su semana Tofu crujiente a la naranja [Estilo asiático]. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredientes: -1 paquete de tofu, fécula de maíz, sal, pimienta y ajo en polvo. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Para la salsa: - 1 cda. de salsa de soja, 3 cdas de miel, el jugo de 3 naranjas, 2 cm de jengibre picado, una pizca de ajo en polvo, pimienta y sal, 2 cucharadas de fécula de maíz y 6 cucharadas de agua. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1️⃣ Prensamos el tofu durante 1 hora para deshidratarlo. Luego, lo cortamos en cubos y lo sazonamos con sal, pimienta y ajo en polvo. Agregamos la fécula hasta que queden cubiertos por completo. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2️⃣ Doramos el tofu en un sartén caliente con un poco de aceite. Whats for dinner! This one is a life saver when we come home late and cant find anything in the fridge. But we do have ground beef (well, we use organic ground turkey as a health substitute) in the freezer and packets of @mccormickspice I got from @safeway (mild chili - swipe for pic). Its so easy and its kind of like a home cooked meal! - It takes a couple mins to defrost the ground turkey, and then I just brown it, chop up some and fry some onions, add a can of beans and diced tomatoes (maybe a small can of tomato sauce too), stir and simmer then in about 10 mins later we got dinner! And I must say its not bad! The ingredients on the packet look ok and not too many preservatives. It was such a relief to get rid of the “ugh-y muggy” weather finally. The rains, drizzle rather, accompanied by cool breeze was so refreshing and mood lifting. Lunch just had to be equally befitting. Cooked my favourite and probably the easiest one pot “Chilli Chicken” along with “herbed rice”. Ummm, just the kind of lunch I wanted. You can rustle them up in almost 30 mins...without having to slog in the kitchen. More about this insanely easy chilli chicken shall be up in one of my upcoming posts (I swear, you’d love it), but, the herbed rice is all about steamed (little more than par boiled) rice flavoured with some garlic-herbs butter, salt to taste and some garlic bread seasoning. Think this was the third or fourth round...⠀ ⠀ This dish is a famous street food eat in Sichuan Province, China. Where thin, freshly boiled noodles take center stage and slathered in a savoury, spicy sauce topped with crispy pork and crushed peanuts. The sauce is usually a thick broth made with chilli oil, with a bit of fried ground pork topping it all off. Weve been having a lot of rice since coming back from holiday... clearly I missed it! One of the easiest meals I can think of to serve with rice is char siu pork, which is basically Chinese BBQ pork. It can be made with different cuts of pork, but a fatty cut helps for retaining juiciness in the meat. I use pork belly slices so the fat goes all charred and melts in your mouth with the rich dark sauce... Yum right! The marinade varies a lot, but I use my mums recipe of course. Alternatively, if you are feeling lazy you can buy char siu sauce in a jar from an Asian supermarket. Ive included two recipes, one of which incorporates the pre-made sauce. The recipe is super super simple and quick! . ~ Serves 3-4 . ~ Ingredients: 500g pork belly slices A good crack of black pepper Sprinkling of sugar 2 tbsp dark soy sauce 2 tbsp hoi sin sauce And either: 1 tbsp yellow bean or soya bean paste (from a jar) 1-2 bean curd cubes (from a jar) Or: 1 tbsp of char siu sauce (from a jar - sometimes easier to find) . ~ Method 1. Marinate the pork belly up to the night before cooking with the other ingredients. 2. When ready to cook, pre-heat your grill to a high heat. 3. Arrange the pork belly slices on a rack on top of a baking tray. Ideally a deep-ish tray, as the pork juices will drip down, to be poured back over the meat after cooking. 4. Depending on thickness, grill the pork belly for around 5-8 minutes on each side until just charred on the outside. Usually the slices are around 1-2cm thick. 5. Once cooked, pour the juices from the pan over the pork and cut into bitesize chunks. Serve with rice and Chinese greens. - @jesspcooks on Instagram

The noodles are made of sweet potato starch, it has a unique color and consistency. 🌈Ingredients (1 Portion) Sweet Potato Noodles 100g Garlic 2 Cloves Ginger 5g Cooking Oil 1 tbsp Sichuan Pixian Broad Bean Paste 1/2 tbsp Sesame Oil 1 tbsp Dark Chinese Vinegar 2 tbsp Soy Sauce 1 tbsp Chili Paste 2 tbsp(check our previous post for chili paste recipe) Sichuan Peppercorn Powder 1/2 tsp Pickled Mustard Root/Pickled Long Beans(optional) 10g Fried Peanuts 1 tbsp Scallion 1 Stalk Coriander 1 Stalk 🌈Recipe 1. Soak the noodles in warm water for 30 mins 2. Mince the garlic and ginger. Cut the scallion and coriander into small pieces 3. Get a big bowl, add 1 tbsp soy sauce, 2 tbsp Chinese dark vinegar, 2 tbsp chili paste, 1 tbsp sesame oil, 1/2 tsp Sichuan pepper powder, mince ginger and garlic 4. Boil water in the pot, when water is boiled add noodles, cook them according to the instructions time on the package, normally it’s 5-8 mins 5. While the noodles are being cooked, add 1 tbsp of oil in the pan(low heat), when the pan is hot add 1/2 tbsp of Pixian Broad Bean Paste, stir-fry for two minutes,then add about 500ml hot water, turn to high heat until it boils, then pour the soup into the bowl of spices and sauces 6. When the noodles are done, drain the water and add the noodles in the bowl of soup. This weeks menu was Kao Kluk Rajchagarn Thi Hok is an old dish that even most Thais would not have heard of. We first made this a few years ago when we were living in London, and wanted to recreate it here in Stockholm. The topic of balance has been in constant discussion when we put together our weekly menu and this week we were struggling to think of a dish that we could put with Miang Kham, which in itself is more of a snack and would rarely be eaten as part of a larger meal. It can be really difficult when we want so much to prepare a specific dish, but cant see how to fit it in to a meal. Balance in flavours and textures is extremely important when putting together a Thai meal, but so, to us, is considering the geographical and cultural origin of the dishes. Our intention has always been more than just cooking tasty food - we do our best to give people more insight and understanding in to many parts of Thai food culture. We spend a long time discussing the menu for each week, it can be that we are feeling like making something spicy and light one week, and create a menu around that, the next week it could be that we want to use a great ingredient that is in season at the moment. We always talk with our relatives at length, going through many iterations before getting the seal of approval! So...with all that said, this week was a bit of a rogue menu choice, not a traditional pairing, but two dishes with similar origins in history and society, balanced in flavours and textures and complementary to each other. Bolinho de Brócolis e Couve-flor 🥦🤤 Via: @woon.hengIngredientes: . Brócolis e Couve Flor tanto a parte da flor quanto o caule(cerca de 500gr no total) 250gr cenoura, picada 1 batata doce pequena, cozida e amassada 1 xícara de arroz cozido 1 xícara de farinha de arroz (ou de aveia, trigo se preferir) 3 colheres de sopa de farinha de tapioca 2 colheres de chá de sal punhado de coentro picado azeite para fritar Molho de pimenta doce com suco de limão . Modo de preparo: Em uma panela cozinhe o Brocolis, Couve-Flor e as cenouras, em seguida escorra a agua e pique bem os vegetais, eu utilizei um liquidificador e fui pulsando aos pouco para não moer demais os vegetais, se você tiver um processador, será ainda melhor. Coloque todos os vegetais picados em uma tigela e misture com os ingredientes restantes (exceto o molho e azeite). Com as mãos forme pequenas bolinhas como as da foto. Em seguida as passe em um prato com farinha de arroz como se fosse as empanar e então as leve a geladeira e deixe por aproximadamente 15min.
