Saw an article by @seattlemet the other day about all the cool birthday cakes in Seattle. Our pinata cake didnt make the list (sad face). You are the apple of my eye🍎 these cuties of course!!✨Mini apple pies are the perfect treat for this season🍂 . Recipe👩🏼‍🍳 •Dice up a gala apple in to small dices. Cook in a pan with 1/2 a tablespoon of vanilla, 1 teaspoon of cinnamon, 1 teaspoon of nutmeg, 2 tablespoons of brown sugar, and 2 tablespoons of butter. Cook until tender. •Butter up a mini muffin tin. With a cookie cutter, cut up the your pie dough crust (I used store bought) to fit the bottom of the pan. Place 1 tablespoon of the filling, and top off with braided pie crust dough. I did a big braid and using the same cookie cutter, cut off the top parts. Egg wash the top and sprinkle some sugar. Bake at 400F for about 18 minutes or until golden. I’m excited to share that my amazing friends and I are participating in the #bakersagainstracism bake sale. I remember vividly the first time being called the nword. I was in the third grade and the school did nothing. I remember every time I have gone on an interview and been told or received a surprised look at being a black woman. I can recall dozens of experiences where I have been tone policed and forced to make my voice smaller while others could be sassy and passionate. It is not easy being a woman in this industry. It’s even harder being a black woman. I’ve never had a chef savory or pastry that looked like me. Representation matters. This is why it was important to me to choose to donate to someone that would have made the younger me dream even bigger. This is how YOU should roll! 🤩 - Easily one of my new favourite recipes ever. Easily one that you should save to try! High in protein and basically 7 main ingredients that you use repeatedly for the different things 🤗 - Save because it is a liiiiitle more complex than usual 2-sec microwave (😂) but worth the time and effort! 👆👌 - Vegan Peanut Butter Coco-Cinna Roll! - DOUGH: 3 tsp packet of dry yeast @lowanwholefoods 4 cups low fodmap plain flour @lofopantry 1 cup vegan peanut butter protein @whitewolfnutrition 1 tsp salt 2 cups warm (not hot!) plant based milk @originalbonsoy ½ cup melted vegan butter @nuttelexspread ¼ cup maple syrup @queenfinefoods - COCO-CINNA ROLL FILLING: ¾ cup melted vegan butter @nuttelexspread ¾ cup sugar/sugar free alternative @natvialiving 2 tbsp cinnamon 1 tbsp vegan coconut rough protein @whitewolfnutrition - GLAZE (not essential, but a nice final touch!) ¼ cup maple syrup @queenfinefoods 1 cup sugar/sugar free alternative @natvialiving 2 tbsp plant based milk @originalbonsoy ½ tsp vanilla - HOW TO: 🔅Make the dough by mixing in a large bowl the liquids and salt. Add a packet of dry yeast evenly across the top of the mixture and let it sit for about 15 minutes. Then, add the flour and mix (don’t over mix!) until you have a dough. Cover the bowl with plastic wrap and allow it to set for 1 hour. 🔅 While dough rises, get the filling ready and mix all the ingredients. 🔅Once the dough has rested, roll it onto a floured surface (add more flour if its too sticky!). Use a roller (or a bottle like I did? 😂). Spread the filling on the dough and roll the dough into a log and cut it into about 6 large or 12 thin portions. 🔅Place them into 1 to 2 baking trays (depending on how many you make!) so that they are close but not touching. Cover with a towel and set aside again for another hour. 🔅Preheat the oven to 350 and place the rolls (that should have almost doubled in size!) inside, baking for 30 minutes until they are golden on top. 🔅 Glaze them up! - Let me know if you try them 🤗 freeze the ones you don’t devour 🙃 can’t wait to mash one of these once I get home 💛 - @crushinglimits on Instagram

🥐 Et si pour le goûter, le petit déjeuner ou le brunch on faisait des chouquettes ? En plus cest très simple ! ⬇️ Pour une 40aines de chouquettes, il faut : - 145g farine - 145g beurre demi-sel - 125ml lait - 125ml eau - 1s sucre vanillé - 4 oeufs + sucre perlé + 1 dernier oeuf battu pour dorer les chouquettes 1. Préchauffer le four à 200°C. 2. Porter à ébullition le beurre demi-sel, leau, le lait et le sachet de sucre vanillé. 3. Retirer du feu, ajouter en une fois la farine et mélanger vigoureusement 5mns environ afin que la panade (la pâte) se décolle de la casserole. 4. Ajouter un à un les 4 oeufs en faisant des frictions. ⚠️ Bien attendre que cela refroidisse avant de les incorporer sinon on risque davoir une omelette 😅 5. Sur une planche de cuisson sulfurisé, déposer vos futures chouquettes. Pour se faciliter, utiliser une poche à douille sinon une cuillère à soupe fait laffaire. 6. Parsemer de sucre perlé et enfourner 10-15mns à 200°C puis encore 10-15mns à 175°C afin quelles sassèchent. ⚠️ Ne jamais ouvrir le four sinon vos chouquettes saffaisseront ! 7. (saya pakai 180ml) 10 grm choco powder 3 grm ragi instan 25 gr butter Cara membuat : 1.Campur tepung terigu, gula dan garam , whipping cream cair dan susu cair menjadi satu , mixer hingga tercampur rata saja. Kemudian bungkus dgn clip wrap dan diamkan simpan di kulkas selama 1 jam ( autolyse) 2.Setelah 1 jam keluarkan adonan dan letakkan kembali pada bowl mixer , lalu tuang ragi , mixer sampai adonan kalis. 3.Setelah adonan kalis , tambahkan butter dan mixer hingga kalis elastis ( speednya sesuaikan dgn mixer masing masing) 4.Bagi adonan menjadi 2. Yang 1 beri Taro powder. Uleni hingga warna rata. There’s a 1st for everything, and this week I did my very 1st number cake! 😄⁣ ⁣ I’ve been wanting to do one of these for a long time and was so excited to make this for the adorable daughter of my amazing friend. She is the greatest and threw the most adorable dinosaur birthday party for her little girl! 💕 Isn’t that seriously a cute theme? ⁣ Overall I was super happy with how it turned out and it was a ton of fun! I was going for a lighter pink for the actual cake so that was stressful at first, but in the end I think it ended up working. What do you think? ⁣ ⁣ This cake was raspberry flavored with a Lemon Curd Swiss Meringue Buttercream 😋 If anyone has great tips they’ve used for getting a genuine raspberry flavor in their cake, pass them along cuz that proved to be kind of tricky! Artificially raspberry flavor is 😝😝😝 I think next time I’ll just turn dehydrated raspberries into a powder and try adding that into the batter. Pan fried curry beef dumplings. Flat dumplings get super lovely out looking. What’s best is in the filling, using curry paste as the main seasoning and thus the ingredients list is greatly shortened. Ingredients 300 g all purpose flour 1/4 cup boiling hot water 1/4 cup cold water small pinch salt Filling 200 g ground beef salt and pepper 4 tbsp. hot boiling water , divided 1/4 long onion (Large onion) , chopped or 2 green onion whites 1 thumb ginger , chopped 1/2 white onion , chopped 1/2 tsp. Sichuan peppercorn 50 g curry paste + 2 tbsp. hot boiling water , for melting the curry paste 1 egg 1 tbsp. sesame oil Steps Chop ginger and onion. Transfer to a bowl, add Sichuan peppercorn and pour in around 4 tablespoons of hot boiling water. Set aside and let it cool down to room temperature. add a small pinch of salt in the flour and stir in 1/4 cup hot boiling water firstly. This will make a small portion of the dough slightly cooked and then stir in cold water too. Knead for 6-7 minutes until not sticky at all. Brush some oil on surface and cover with wet cloth. Set aside for half an hour. add salt and pepper in beef, mix well. Then strain the ginger water prepared in step 1 in by 2 batches. Stir the beef after adding liquid content until all the liquid is well absorbed. Then crack in eggs and then sesame oil. Continue stirring one direction until the filling because sticky. Melt golden curry with 2 tablespoons of hot boiling water. Add chopped onion, curry paste in the filling and mix well. If you feel the filling is too watery and hard to handle. Place in fridge to harden slightly. Get the dough out and shape into a long log and then divide into 16 portions. Press each one down and roll out to a wrapper around 12 cm in diameter, with thinner edges and thicker center. Place around 1 tablespoon of filling in center. Seal the wrapper completely and then turn over and shape the dumpling for a higher and thicker round shape. Brush some oil in pan, place the dumplings in. Fry over middle fire until the bottom becomes crispy and the turn over and fry the other side. I’ve been receiving a lot of messages asking me if the Peninsula custard mooncakes can be made without a mooncake mould?  The answer is yes!  You can just roll the mooncakes into 50g balls, flatten them slightly (to about 1 to 1.5 inches in height) and bake them as patties.  You can even use a cookie stamp to decorate the tops of the mooncake patties.😉  Though what I reeeally want to find out, for myself, is whether the recipe can be made into fun shapes?🤔  The answer to that question is…kinda.😅  Due to the high butter content (in both the dough and custard), it’s not the most ideal medium to handle and make into characters.  These piggies cracked during baking so I decided to just roll with it and brushed on more egg wash to let them crack and brown even further!🐷  You know that saying, “When life gives you cracked piggies, make wild boars!”.🤣  I could try to tinker with the recipe to make it more suitable for moulding, but then we are veering dangerously close to pineapple cake crust territory.🍍  Oh! One more thing - if I turn these wild piggy-boars around, youll get an entirely different meaning of mooncakes (photo 2).🤣 (Im so sorry, my sense of humour is really no better than my 7-year-old nephews.
