Thought I’d share my #bostonmanor tube station card with you (meant to do it yesterday but as Monday was my first day back after a week off I got a bit sidetracked) We may not be commuting so much but all my station cards are proving popular at the moment. Just before the March lockdown I finally added my local station (Northfields) to my card collection, plus a few more of my favourites on this historic little stretch of the Piccadilly line. As a closet architecture buff I love all these stations designed by renowned architect Charles Holden. Boston Manor Station originally called Boston Road opened in 1883 by the District Railway. It was reconstructed in 1932 when the Piccadilly line was extended to Hounslow, to become the Grade II-listed building we love & use today. Any guesses how much I’ve got on my Oyster card? It was so nice this morning to get down to @eastalburyiga_finefoods and meet the awesome family behind the legend (their legend extends to Jindera IGA, Springdale Heights and their hometown of Lockhart). I was blown away by the number of products from the region they stock, but mostly I was impressed with their very obvious locally supportive attitude. It seems to just radiate from each and every one of them! (You’ll meet them all soon...) I quickly realised that their commitment to supporting local does not just extend to our regional producers. It extends to their staff and their customers. I saw this first-hand in between my tour. 💓 Country values and a sense of social responsibility are terms that spring to mind when thinking how to describe what I learned from speaking to the family today. I am honoured to have been given the opportunity to tell you more of their stories really soon. They will inspire and show you just what can be achieved with a true attitude of community mindedness, even in, or especially in, a year such as this. I am totally devasted for the loss of Marcus Berriman, my friend, my brother and my mentor since 25 years. An heart attack took him away yesterday morning leaving a unbridgeable void in my heart. Its been exactly six months since our world turned upside down due to the Covid-19 pandemic and restaurant and institutional accounts closed practically overnight. We are grateful to report that amidst the ensuing turbulence, Firsthand Foods has been able to hold steady. Boil the mushrooms first. This statement created a bit of controversy when I told @lfizzlphillips the best way to cook mushrooms was to start off boiling them until they are perfectly cooked on this mornings @channel9 @thetodayshow weather. Heres the response video with a better, longer explainer why you would do such a wonderfully crazy thing when youve always been told not to wash and NEVER LET THE MUSHROOM TOUCH THE WATER BEFORE COOKING The basic method: You can do this all entirely on a high flame First, boil to perfection- you can keep adding water until this is achieved. Remember you cant over boil a mushroom because of their unique cellular structure. They will let their own water out so dont put too much water at once. When perfectly tender, let the water evaporate until the pan is basically dry Then add oil or fat and your aromatic stuff Quick saute or stir fry and season to taste with salt Thanks @natalie.ngyn and @fablefoodco Edit: some people have been asking me what mushrooms in cooking there.
