Another round of the Woodwind oolong. Enjoyable but confusing. It is very green and grassy and does not resemble typical lightly oxidized oolong teas. Other than Woodwind, I once tried a Japanese oolong made from minamisayaka cultivar and one made from koushun, both very light but with typical oolong mutations. This tea is rather green... I brewed it in a glass teapot and got generous, savory grassy notes, and then in raw clay, where wet leaves had a smell of fresh coriander and wormwood. It tasted like sencha, but you can guess some unusual processing twist from flavour and taste. Also the appearance of the leaves is more typical for Japanese greens, rather fragmented. Thinking of it as deeply withered tamaryokucha rather than oolong seems more to the point🤔It is strange and elusive like the transition between summer and autumn. Denn der Geschmack dieses würzigen Krauts ist herrlich aromatisch. Die lila Blütenblätter kann man ebenfalls essen. Sie sind leicht süßlich. ⠀⠀ Früher wurde der Gundermann daher als Pfefferersatz genutzt. Und auch heute passt er toll in Salate, Suppen, als Topping auf eine (schon fast herbstliche) Suppe oder in (veganen) Kräuterquark. Bei unserer letzten Wanderung haben wir mit dem Wildkraut die Suppe gewürzt und junge, frische Blätter in die Energy-Balls gegeben. ⠀ Wir finden ihn selbst im Winter. Er breitet sich sehr schnell aus, weshalb ihn Golfrasen-Streber am liebsten loswerden möchten. ⠀⠀ Doch Gundermann ist nicht nur lecker, sondern auch wirkungsvoll. Die Pflanzenheilkunde empfiehlt ihn bei Entzündungen im Magen und Darm, bei Blasenleiden und grippalen Infekten. Auch den Stoffwechsel soll er in Schwung bringen. For our Lemon and Herb Pesto Sourdough in Modernist Bread, a very thin layer of pesto is spread just under the surface of the dough while shaping the loaf, which is scored right before baking to slightly expose the pesto. 𓇕 𓇕 as promised, i am unveiling the plant which gave that magnificent green to the tincture i shared yesterday in my stories ~ 𓇕 at the end of may, i was driving north & caught an episode of @splendidtable featuring the beautiful food-writer & actress, Madhur Jaffrey. she shared a story about an unforgettable fish sauced with fresh turmeric leaves, fresh turmeric root, fresh ginger, fresh chilis & garlic . 𓇕 we have had a little patch of turmeric growing in the moon by moon gardens for the past few years & have since made a flower essence, an oxymel, have cooked & decocted with the fresh root . 𓇕 after hearing Madhur describe the unforgettable aroma of fresh turmeric leaf, i felt that i must try it for myself & so we did, putting it into two dishes now which it has gifted its beautiful, pungent, & creamy-bitter flavor to . 𓇕 i have since fallen in love with the leaves, how they emerge like ancient scrolls right from the earth, & unfurl beneath the sun, splaying out like big green tongues lapping up the skies & humidity of the climate here . 𓇕 how to describe their flavor: crisp, warming, peppery, grassy, acrid, with that creamy bitter current flowing just underneath • i am nibbling on a leaf tip right now & it feels like it might if i had swallowed a dragonfly instead of a leaf with its wings gently batting against the back of my throat & settling lightly on my tongue & shimmering its way into my belly . 𓇕 so, a tincture : i like to experiment : i like to try things, i like to see what will happen if you take a little of this & add it to a little of that ~ 𓇕 - @moonbymoonapothecary on Instagram
