Was craving a stir fry for dinner last night, which eventually turned into a variation of vegetarian tofu fried rice with a homemade sesame ginger sauce !! It was SO GOOD!! (Recipe below) Tofu Fried Rice (Makes 4 servings) Ingredients: 1 zucchini 2 cups broccoli 2 medium sized carrots 1 summer squash 1 red bell pepper 2 stalks celery 1/2 cup bean sprouts 1 block tofu 2 cups cooked jasmine rice 2 1/2 tbsp olive oil 4 organic cage free eggs Sesame Ginger sauce (recipe below) Preparation: Heat 1 tbsp olive oil in a large skillet. Add veggies and sauté till soft. Meanwhile cut tofu into small cubes and coat with 1/2 tbsp olive oil. Bake tofu in oven or in an air fryer till crispy (about 20 minutes at 400 degrees) In a separate skillet add 1 tbsp olive oil and jasmine rice. Scramble eggs into the rice. Once the eggs are cooked add stir fried veggies , bean sprouts, and sesame ginger sauce. Add 1/4 of fried rice to a plate and top with baked tofu. Eggless Blueberry Muffin 🧁 1. Preheat the oven to 180 degree Celsius. 2. Wash the blueberries, pat dry it using kitchen towel or tissue. 3. Take two spoons of flour in a bowl and add blueberries to coat them properly. 4. Line paper cups on a muffin tray. 5. In a large mixing bowl add olive oil and sugar. Stir well. 6. Now add hot milk, vanilla essence and stir it to combine. Liquid mixture is ready. 7. Sieve all dry ingredients all purpose flour, baking powder, baking soda and corn flour. 8. Add liquid mixture to dry mixture and mix well. 9. Combine it well and be sure that there are no air pockets left. 10. Add the flour coated blueberries to the batter and do not over mix it. Just fold them gently. 11. Fill the 3/4rth of paper cups with batter and they are ready to bake. 12. First bake the muffins on 200 degree Celsius for five minutes and then bake for 15 - 16 min. (mine took 15 min to cook). 13. You can check it by inserting tooth pic, it should be come out clean. 14. Let it cool down over wire rack. Eggless blueberry muffins ready to serve! Enjoy! 5. Separate the egg whites and egg yolks. In one bowl, blend together the egg whites and cream of tartar until stiff peaks form. In a separate bowl, blend the cream cheese to soften. Mix in the egg yolk, salt, and garlic powder until well incorporated. Gently fold the whipped egg whites into the yolk mixture making sure not to over-mix. In today’s episode of ‘What to Waffle’.... a Plaffle! .......................... Back story: After being diagnosed with Lyme Disease, Hashimotos, and heart disease in the middle of quarantine, I started the AutoImmune Paleo Protocol (AIP diet). As if quarantine didn’t suck enough lol. Even though I have been 100% gluten free, mostly dairy free, and mostly sugar free for 6 years, I still had significant inflammation and leaky gut because of stressors in my life. My CRP was 25.6 😳 I even gave up coffee and alcohol a few weeks in. 😭 Paleo isn’t that bad, except for breakfast. I just can’t eat another piece of salmon or another sweet potato 🤢 So, I set out to find something ‘breakfast-y’. And I found out you can make waffles with plantains! These waffle have brought significant happiness back in to my mornings, and I am even enjoying my green tea more now. Plaintains are a great way to add texture without using flour. 🧇 And as always, I love my @ninjakitchen food processor and my @unprocessyourfood Dash mini waffle maker, a gift from @thesavoryceliac! Here is the recipe: ➖ 3 green plantains ➖ 1/3 cup melted coconut oil ➖ TB ground cinnamon ➖ TB organic vanilla extract ➖ 2 tsp gelatin ➖ 3/4 cup water ➖ 1/2 arrowroot starch ➖ 1 tsp sea salt ............. Spoon in to your wafflemaker so it covers the bottom with about 1/4 inch of batter. Cook for 3.5 minutes. Not to be confused with the Gluten Free ones either. The cheesecake itself is tasty with room for improvement. Ingredients: Flour(1 cup), Sugar(1/2 cup), Baking soda(1 tbl. Sp.), Honey(1/2 tbl. Sp.), Milk(200 ml.), Chocolate spread(I suggested Hershey), Chocolate Syrup(as per your choice) Method: mix all the ingredients except chocolate spread and syrup to make a thick batter. Take a nonstick pan, heat it and brush some oil. Then pour some batter on it, cover for 2 minutes. After 2 minutes uncover it, turn the other side down, count to ten and take it in another place. This way take 2 slices and put some chocolate spread and join these two. It is mixed until the yeast dissolves. 2.Add Cream, oil and salt and mix. Lastly add flour in a controlled way. Obtain the dough that does not stick to the hand. Cover the dough and and leave to ferment for an hour. 3.Divide the fermented dough into pieces in desired sizes. Open Each piece slightly by your hand and place its inside and tightly close from both ends. (For the inside, I firstly mix diced tomato and pepper, then first I put a spoon of tomato-pepper mixture. Next I added feta cheese and cheddar cheese in turn.) 4.Mix Molasses and water. Cover the each pastry with molasses water and then roasted sesame. Place them on the tray with the closed parts on the bottom, and score them with a sharp knife. 5.Cook in a preheated 200 degrees top / bottom setting without a fan until it is browned for 20-25 minutes. Last weekend I went to the local farmers market here in Boston and bought about a week’s worth of fruits and veggies for only $13 🙌🏾 threw whatever I had left in this smoothie! . . . If there was a jar where $1 was payable every time the words “I was good” or “I was bad” were uttered when discussing food intake, the jar would transcend earth. (Great post by thefitnesschef_) The problem with such vague descriptions defining the success of our eating decisions is that they are meaningLESS regarding the meaningFUL physiological result of that decision. Whilst ‘good’ and ‘bad’ are broad terms of moral direction, our biological system cannot relate to them. Good for what? Is it not that one simply consumed food including micronutrients, fibre and a balance of macronutrients, thus supporting energy, function and satiety? But what if such consumption exceeded one’s caloric needs? Is it still good? Bad for what? Is it not that one simply consumed food bereft of micronutrients which may be less likely to satiate them? But what if such consumption supports to one’s caloric needs and the next meal is nutritious? What if nutrients have already been attained? Is it still bad? The long term key to taking control of one’s dietary outcomes is to understand that there is no good or bad, only difference. And our understanding of nutritional difference is what enables us to find a balance that support all aspects of our diet. Science determines nutritional outcomes. Not morality. Instead of being good or bad each time you consume food, understanding the food you consume within the context of your individual dietary goals will allow you to find this balance. You can understand that micronutrients are required for overall health, caloric management is needed for desired composition, and enjoyment is a necessity for adhering to any type of eating strategy or dietary transition. Balancing these dietary aspects via non rigid varieties of different foods may be the key to achieving all of the above. Each individual episode of eating is a small piece of a giant jigsaw.
