. ⏪⏪SWIPE⏪⏪スワイプ⏪⏪ 【 鮨 さえ㐂 (銀座) / Sushi Saeki(Ginza) 】 🥢 新いくらTKG Salmon roe TKG 🥇 本日のトップ (タイ) Dish of the day - tied 🥢 アワビ肝シャリ Abalone liver shari ⚡️ イチオシ Highlight dish Sushi Saeki long held the reins of top sushiya in the Kansai region and Chef Saeki was scheduled to take over the head chef position at Sushi Kiyota in 2018. After a dispute with the owner on the purchase price, Saeki walked away, relocated his shop from Osaka to Kyoto, opened up a yakatabune ship sushiya, and eventually relocated to Ginza in the late fall of 2019, leaving his Kansai operations to his apprentices. Saeki’s appetizer dishes rival any sushiya out there. The best abalone in Japan (sourced thru Dainaka) currently get allocated to three shops: Kawamura, Nakajyo and Saeki. Ishiji’s best tuna go to Kiyota and Saeki. Sourcing at Saeki is nothing short of impressive but he doesn’t boast about it one bit. The vinegar he uses for his shari is custom made just for Saeki and he uses a blend of red and black vinegar. He’s been tweaking his shari a few times to adapt to the different palates of the Tokyo crowd and is still looking to upgrade his sourcing routes (ie it’s hard to get the quality of sea bream he was using in Osaka) but even at its current state, Saeki is a top 10 sushi restaurant on the A LIST. 関西で予約最難関と言われていた（鮨 さえ㐂』。『きよ田』騒動の末に京都南禅寺に一時的に移転をし、2019年10月にその京都店を弟子に任せ、満を辞して銀座進出。 北新地時代にお邪魔したことはあったが、銀座に移転してからはキングGEORGEのお誘いで初訪問。場所は銀座6丁目の一等地。入口にはトレードマークのハートの窓。内装も息を飲む美しさ。左官職人の久住有生先生が施した壁のしつらえがなんとも美しい。 『さえ㐂』の代名詞でもあるユニークなおつまみはご健在。今日は「ベビー帆立とスナップエンドウとキャビアのサラダ」、「たこウニ」、「ドラゴンの白焼きに蓼酢シャリソース」、「鮑の出汁しゃぶしゃぶwithトリュフ」。シャリには赤酢とさえ㐂用に作られた黒酢の甕出しブレンド。握りは変わらず貫数は少ないものの、やはりさえ㐂のマグロは圧巻 (石司の1、2のマグロを頂けます)。サンマの大阪寿司も最高だった。そしてアナゴは今季トップだったかもしれない。 シャリも何度か調整されているそうで、仕入れもまだまだ開拓中とのこと。ますます楽しみで仕方がない。 ご馳走様でした❗️❗️ __________________________________ アンドリュー ANDREW - @andrew_gyokudari on Instagram

O Sumiyoshi Taisha localiza-se em Osaka e é um dos templos mais antigos do Japão. Fundado no século III antes da introdução do budismo, ele tem um estilo considerado “puramente japonês”, ou seja, livre da influência dos outros países asiáticos. E agora, uma curiosidade sobre a cultura japonesa. No dia 31 de dezembro, os japoneses costumam passar a virada do ano nos templos, onde ocorrem as 108 badaladas do sino, sendo a última badalada exatamente à meia noite. Essa tradição vem do budismo, e as 108 badaladas representam os 108 pecados ou desejos mundanos do homem. Essas badaladas servem para que as pessoas entrem no próximo ano “purificados”. Day and Night of Pungnammun Gate  Pungnammun Gate was built in the middle of the Joseon Dynasty and was designated as National Treasure No. 308. This is the only surviving city gate of Jeonjus original four gates. It is not as big as gates in Seoul, but it is very graceful and beautiful. Commissioned by the Kangxi Emperor in the late 17th century, The Kangxi Emperors Southern Inspection Tour tells the story of a journey taken by the Emperor across southern China, chronicling daily life in the towns and countryside along the way. Comprising 12 scrolls which took 6 years to complete, this monumental work served to reinforce the political legitimacy of the Manchu ruler. Ever since its completion, this famous set of scrolls have been a source of wonder for many artists, collectors and connoisseurs, amongst them David Hockney, who was inspired in 1988 to make a film about Scroll VII. Measuring 21-metre long, The Kangxi Emperors Southern Inspection Tour, Scroll VI was cut into sections after leaving the imperial palace during the final years of the Qing dynasty. These fragments have been reunited only recently following their dispersal, and Scroll VI will now be exhibited in its entirety for the first time in over a century at #SothebysHongKong Autumn Sales preview from 3 to 8 Oct at the #HKCEC . Tea Room The ceremony is traditionally held in a tatami room. The entrance for guests is sometimes kept low so that entering guests have to bend over, symbolizing humility. In tatami room, there’s a place called tokonoma where a scroll or seasonal flowers are displayed. After a bow, the head guest enters the room and takes the seat closest to the tokonoma, followed by the other guests. Guests ideally sit keeling (Seiza position) on the tatami floor.
