Patrimoine culinaire Recette du Taro sauce Jaune Plat provenant des régions de l’ouest et du Nord ouest du Cameroun, le Taro sauce jaune qui tire son nom de la couleur de sa sauce. Fait à la base d’huile de palme et d’épices bien particulières, ce plat s’entoure de différentes viandes (tripe, viande boucanée, poulet fumé, peau de bœuf …) et de légumes sautés. Ingrédients 2 kg de taro blanc 1 kg de Tripes de bœuf 1 Kg de viande (poulet fumé, peau de bœuf, viande boucanée, ...) 120 ml dhuile de palme 1 sachet de condiments pour sauce jaune 1l deau tiède 16 grammes de Sel germe (KANWAN) Sel 4 Cubes de votre choix 1 piment rouge Préparation 1. Faire cuire le taro sans l’éplucher dans une casserole pendant environ 2h de temps; 2. Faire cuire les tripes avec du sel pendant 1h environ et réserver. 3. Une fois le taro cuit, épluchez – les et les pilez pendant qu’ils sont encore chauds. Assurez vous qu’il n’y a plus de grumeaux en les écrasant, la pâte doit être lisse; 4. mouillez légèrement la pâte si vous la trouvez un peu dure, une fois la consistance voulue obtenue, mettez là de côté; 5. Mélangez avec de l’eau les condiments pour sauce jaune dans un récipient et mettre de côté; 6. Défigez l’huile de palme en la chauffant légèrement. Mettez le morceau de sel gemme dans de l’eau tiède puis, versez une moitié de ce mélange dans l’huile de palme et mélangez; 7. A l’aide d’un bol, une fois que l’émulsion est stabilisée, ôter le restant de sel gemme; 8. Émiettez les 4 cubes dans la préparation de condiments, salez et mélangez; 9. Incorporez les condiments dans la sauce jaune puis les tripes, rectifiez l’assaisonnement et ajouter le piment entier; 10. A l’aide d’une louche, disposez le taro pilé dans un plat et faites y une sorte de puits ou de cratère. Versez la sauce jaune au centre de ce puits et ajoutez y tout au tour des légumes, du poulet fumé, de la viande boucanée, de la peau de bœuf, … . Bon Appétit !! - @tourismocameroun on Instagram
