INGREDIENTS 1.2kg washed white potatoes, cut into wedges 1 cup chicken stock 6 garlic cloves, bruised 3 lemons, 2 halved, 1 juiced 1/4 cup olive oil 1.5kg Macro free-range whole chicken 10g pkt sage, leaves picked 50g butter, chopped Steamed broccolini, to serve METHOD 1. Preheat oven to 200°c/180°c fan-forced. 2. Place potato in a large saucepan, cover with cold water and bring to the boil over high heat. Drain, then transfer to a shallow roasting pan. Add stock, garlic and lemon halves and juice. Drizzle over oil and season. 3. Pat chicken dry with paper towel. Tie legs together with kitchen string, season, then place on top of potato and bake, adding sage and butter to pan in last 10 minutes of cooking, for 1 hour or until chicken juices run clear when thickest part of thigh is pierced with a skewer. Yesterday my grandpa, Papa Lou, passed away of natural causes. He was such an incredible human and a huge role model in my life. I have so many memories drawing and playing in his basement studio. I remember one time in high school, I had a drawing assignment due the next day, so he went to the freezer and pulled out a brightly colored dead bird he had stored in a plastic bag and I used it as a still life. I got 100% on that assignment thanks to him. There is no doubt that those experiences with him have shaped me into the person I am today. It is the end of an era, but Papa Lou lives on forever in my heart and the hearts of everyone who knew him. If anyone in Kansas City happens to own one of my grandpa’s pieces, he also lives on through his art, so please cherish it forever. ❤️ - @jessmarak on Instagram
Beef Wellington- by @slicedbysav For the mushrooms: 3 tablespoons olive oil 2 portobello mushrooms, finely diced 1 teaspoon thyme leaves Place sauté pan over medium high heat. Add oil and when hot, add mushrooms. Season well with salt and pepper and add the thyme. Stirring frequently to be sure mushrooms don’t stick, cook until all the moisture has evaporated, about 10 minutes. Remove from heat and cool. For the crepes: 2 eggs 1 cup flour 1 cup almond milk 1 teaspoon thyme flowers In a large mixing bowl, combine eggs, flour, milk, chives, thyme and salt. Whisk until incorporated. spray a nonstick pan and place over low heat. Add 1/4-cup batter to the pan, Let it cook for 25 to 30 seconds until set, then using an offset spatula to lift one side, flip and cook on other side for just a few seconds. Continue cooking until batter is finished, making about 5 crepes. Assembly of Wellington: 1 pound London broil room temperature 1 tablespoon grapeseed oil 1 tablespoon Dijon mustard 4 slices pastrami 1 sheet puff pastry 2 egg yolks Season beef with salt and pepper on all sides. Heat a cast iron skillet and add grapeseed oil, then sear beef 60 seconds per side. Remove beef and While hot, brush Dijon mustard all over, and then let it rest. Layer plastic wrap overlapping and take 2 to 3 pancakes and trim into squares the length of the beef, then line them up vertically on the plastic. Layer on the pastrami slices. Spread the mushrooms over that and Season with salt and pepper. Place beef at the bottom of the crepe, And roll the package together. Refrigerate for 20 minutes. Preheat convection oven to 425 degrees F° or non-convection to 450 degrees F° Again layer plastic wrap. Place puff pastry in center. Unwrap beef and place on the pastry 1/3 of the way up. Lightly brush pastry with egg wash and season with salt and pepper. Then roll it all up sealing the seam. Unwrap the Wellington and brush with egg wash. Place on parchment lined sheet and Refrigerate for 5 minutes. Place in the center of the oven and bake for 25 to 30 minutes, until dark olden brown. Remove and let rest for 5 Minutes. - @newkosher on Instagram

Beef Wellington (IDR 175k) . Menu yang kita pesen ini memang agak pricey, ya. Dan pas dateng kita sempet kaget karena beefnya kok kelihatan kayak dimasak well done. (Kita not a huge fan of well done steaks) . Tapi pas kita potong dan coba makan beefnya, ternyata EMPUK PARAH! Sama sekali nggak berasa kayak steak well done. Kayaknya memang kualitas dagingnya yang juara nih, guys. . Sayangnya, kami ngerasa bumbunya kurang nendang. Kentangnya banyak, tapi agak oily buat selera kita. Sayurannya manis, sih...tapi saus krimnya di lidah kita rasanya agak hambar. Untungnya puff pastry-nya baked to perfection ♥️♥️♥️ . **FENNEL-CRUSTED RIB ROAST** * * * Credit: www.bettycrocker.com * * INGREDIENTS 1 beef prime rib (7-9 lb) trimmed of fat 2 tsp black peppercorns 2 tsp fennel seed 1 1/2 tsp coriander seed 1 tbsp olive oil 4 tsp kosher (coarse or sea) salt DIRECTIONS Let beef stand at room temperature 30 mins. Meanwhile, in spice grinder, crush peppercorns, fennel seed and coriander seed until coarsely ground. (Or place spices in resealable freezer bag and crush with rolling pin or meat mallet). Rub beef with oil; sprinkle with salt. Press spice mixture on all sides of beef. Place on rack in shallow roasting pan. Heat oven to 400F. Insert ovenproof meat thermometer so tip is in thickest part of beef and does not touch bone. Roast uncovered 1 hr 30 mins to 2 hrs or until of desired doneness (140F for medium rare , 155F for medium).
