The story of Samhae Soju can be traced back to Goryeo dynasty (918-1392). This ancient recipe is carried on by brewmaster Kim, Taek Sang who is recognized as an Intangible Cultural Heritage of Seoul. The heritage of Samhae Soju arises from rigid brewing method. This soju must take three stages of brewing which elongate the process to 108 days. Each stage takes place on the day of pig of each month, meaning sool is brewed 3 times on every 36th day. (Asian zodiac signs cycle every 12 days.) It was believed that the blood of pig is the purest and cleanest, therefore ancestors brewed on a pig day in order to produce pure and clean sool. No one knows if the day actually has an affect on the final result but this rigorous method forces them to extend the fermentation period which develops depth and complexity - @woorisoul_nyc on Instagram
