То есть ты практически постоянно из формата целесообразной экономии балансируешь к качественным (титульным) продуктам и наоборот. Стараешься работать хорошим продуктам по обычной цене или обычным продуктам по хорошей цене. Правило таково что невозможно всегда динамично все продавать задорого, а если все продавать дешево, то быстро закроешься. Есть титульные продукты, которые вообще невозможно продавать с рабочей наценкой — почти по себестоимости, и слава богу. И на этом фоне идет постоянное (максимально возможное) сохранение качества во всех аспектах твоей работы. От получения продукта от поставщиков до подачи его гостю. Сезонные продукты очень удобны в этом плане. Сезон — это, почти всегда, прекрасное качество по хорошей цене. И да, продуктом может являться не только то, из чего готовят еду... , но это немного другой разговор..) У шеф-повара довольно много подконтрольных процессов, связанные с менеджментом, организацией,управлением,гастрономией. Ориентировочно 30% - НИиОКР, еще 30% - работа с продуктами на кухне, в строю, остальные 40% — организация. Она фоновая, ты ее не замечаешь, но она очень важна. Эта работа очень цикличная, энергоемкая, от нее не испытываешь какого-то позитива — сплошное однообразие: графики, пятиминутки,табели, технологические карты, анкеты, ценообразование, планерки,аналитические отчеты… Но без нее не будет успеха. Hoy en el día de la manzana 🍏 prepara esta combinación, AVENA HORNEADA CON CANELA Y MANZANA 🍏 Ingredientes:👨‍🍳 - Parte 1: 1 3/4 taza avena mix @huellaverdeperu 🌾, 1/2 taza pecanas, 3 cdas proteína en polvo, 4 cdas azúcar de coco 🥥(o cualquier endulzante granulado), 3 cdas miel 🍯 de maple, 1 1/4 tazas leche 🥛 de almendras, 1 huevo 🥚 (o huevo de linaza), 1 cdta vainilla, 1/2 cdta sal marina, pizca de nuez moscada y clavo de olor. - Parte 2: 2 1/2 tazas manzanas 🍏 cortadas en cubos pequeños,1 cda aceite de coco 🥥, 1 cda de azúcar de coco 🥥y 1 cdta canela en polvo. Preparación:👨‍🍳 1. Precalienta el horno a 375°F/190°C. 2. En un tazón grande colocar todos los ingredientes de la “parte 1” y mezclar muy bien, hasta que todos los ingredientes estén incorporados. 3. Luego, en una sartén colocar los ingredientes de la “parte 2”. 4. Cocina las manzanas 🍏 hasta que estén tiernas. 𝐓𝐡𝐞 𝐬𝐡𝐨𝐫𝐭 𝐯𝐞𝐫𝐬𝐢𝐨𝐧: choose a colour scheme, buy everything according to it, throw in some random texture and mildly unsettling elements, and voilà. 𝐭𝐡𝐞 𝐜𝐨𝐥𝐨𝐮𝐫 𝐬𝐜𝐡𝐞𝐦𝐞 𝐭𝐞𝐜𝐡𝐧𝐢𝐪𝐮𝐞: choose three colours: your main colour, and two accent colours. here for the sake of demonstration we will go with brown as main, and ivory and gold as accents. when choosing important furniture, such as a bed, a desk, a bookshelf or a cupboard, stick by your main colour. don’t worry if the shades of brown aren’t perfectly matching, it adds a bit of chaos and that is da. when choosing your less-important-but-still-very-much-visible-things, like curtains, bedsheets, etc., choose one of the accent colours, here we will take 𝑖𝑣𝑜𝑟𝑦. then for the trinkets and things like doorknobs, lamps or mirrors, choose the other accent colour (here gold). 𝐭𝐡𝐞 𝐦𝐚𝐢𝐧 𝐟𝐮𝐫𝐧𝐢𝐭𝐮𝐫𝐞: look for 𝑤𝑜𝑜𝑑, with cool engravings in it (charity shops are your friend; they usually carry older (maybe bulkier but still cool), wooden, engraved items. a beautful 𝑔𝑜𝑙𝑑𝑒𝑛 𝑚𝑖𝑟𝑟𝑜𝑟 is also great, but if you don’t use mirrors you might not need it. a 𝑑𝑒𝑠𝑘 and a 𝑏𝑜𝑜𝑘𝑠ℎ𝑒𝑙𝑓 of course, also made of wood (bonus if the bookshelf is so full you have stacks of books basically everywhere) 𝐭𝐡𝐞 𝐯𝐞𝐬𝐢𝐛𝐥𝐞 𝐭𝐡𝐢𝐧𝐠𝐬: that’s when you can play around with the textures: add a fuzzy carpett atop your harsh wooden floor; embroider your curtains with intricate patterns; hang up a framed quote from the iliad on rough grain paper; add a battered cushion! 𝐭𝐡𝐞 𝐭𝐢𝐧𝐜𝐤𝐞𝐭𝐬: what makes da charming is its inherent chaos but tight aesthetic. get a chess board and leave it unfinished. get a Gothic Handheld Candleholder. collect old books if you so desirestack books everywhere (ground included), leave coffee cups on the windowsill if you can! leave that beautiful evening gown lying on top of your chair. add odd antique decor and useless things: my personal favourite is buying an antique medication bottle, filling it with whatever, and just leaving it there on my dressing table. - @dark.academia.fashion on Instagram

I think our cozy little kitchen is my favourite nook of the shop. This wood oven and stovetop is from my hundred year old farmhouse, and we found the vintage fridgidaire locally and gave it a bit of a makeover. It is actually working! You can find local sodas inside on a hot summer day 💕💕💕. John built the custom shelving to feature the talented work of our potters and ceramic artists. I wanted each mug to be framed as individual pieces of art, but I think they work so well together as a feature wall as well. 【おうち de café by STAUB : こねずに混ぜるだけ！ココットで焼く高加水パン】焼き立てのパンをおうちで作れたらいいのにと思ったことはありませんか？時間もかかりそうだし、作るのが難しそう、、、、そんな方に、こねずに混ぜるだけで作れるパンのレシピをご紹介します！ご紹介するのは、”「ストウブ」で、パン”、”「ストウブ」で、こだわりパン” (堀田誠著）より、基本の高加水パンのレシピです。文字通り多くの水分を含まれている高加水パンは、高温で焼き上げることで、ずっしり・しっとりしたパン本来の味が楽しめます。パン生地はこねずに、へらでさっと混ぜるだけ。ココットに生地を直接流し込むため、難しい成形も不要です！発酵、そして焼き上げもココットに入れたままできるので、水分逃さず、外はカリっと、中はしっとりもっちりとした焼き上がりに。パンが焼きあがる、あの香ばしい香りをおうちで楽しみましょう！堀田誠さん書籍紹介「ストウブ」で、パン: こねずに、さっと混ぜるだけ!成形いらずでもっちり美味しい、高加水パン https://amzn.to/2RQH0p0 「ストウブ」で、こだわりパン https://amzn.to/3hT9yZC ----------------------------- 基本の高加水パンレシピ　（ロティ・オラン堀田誠著　「ストウブ」で、こだわりパンより抜粋）材料（ピコ・ココットラウンド18cm）タイプER(準強力粉）　300g インスタントドライイースト 0.6g 塩 5.4g 水　240g 準備・粉は密閉容器に入れてはかる。・鍋にオーブンシートを敷く。作り方 1. 粉の入った密閉容器にイーストを加える。 2. ゴムべらで下から上に持ち上げるようにして軽く数回混ぜ、片側に寄せる。 3. あいたところに塩を入れ、水を加える。 4. ゴムべらを前後にゆっくり動かしながら、粉と合わせていく。やさしくゆっくりと。容器が大きすぎたりすると混ぜすぎの原因になるので、やや小さめくらいがよい。 5. 粉が半分くらい混ざったら、下からすくって返すようにして全体をやさしく大きく混ぜる。容器を回しながらこれを繰り返し、粉っぽさがなくなって、ひとかたまりになったら完了。 6. ゴムべらを左右に動かして、表面を平らにならす。 7. 蓋をして30℃で1時間発酵。オーブンの発酵機能を利用すると便利。室温（25℃）なら2時間くらい。目安はやや膨らむくらい。 8. 蓋をして冷蔵庫で時間をかけて低温発酵させる。一晩というのは冷蔵庫で10時間以上ということ。目安は1.5倍に膨らむくらい。＊こうすると適度な旨みが出てくる。 9. 「ゴムべらを角に差し込んで生地をすくう→持ち上げてねじる→中央にそのまま落とす」を容器を回しながら、四隅で繰り返して行う。＊こうするとグルテンが強くなってふんわりもっちりしたパンに仕上がる。 10. オーブンシートを敷いた鍋に生地を入れる。 11. 蓋をして30℃で1時間発酵。オーブンの発酵機能を利用すると便利。室温（25℃）なら1時間30分くらい。目安は約1.5倍に膨らむくらい。 12. 予熱したオーブンへ入れて15分焼く。オーブンをあけて蓋を取り、再び20～25分焼き、鍋からシートごと取り出して冷ます。電気オーブン：250℃に予熱。250℃で15分→蓋を取って20～25分。ガスオーブン：230℃に予熱。230℃で15分→蓋を取って20～25分。レシピは↓でもご紹介しています。 https://www.staub-online.com/content/staub/jp/ja/recipes/cocotte-recipes/19.html #staub #ストウブ #手作りパン #高加水パン - @staub_japan on Instagram

I spy... A Jaffle iron. The original Jaffle Pressure Toaster was designed, trademarked, and patented in Australia in June 1949 by Dr Ernest Smithers of Bondi, Sydney. (Australian Design Office registered Number 27089). A welcome addition to the #ianwongcollection . Interesting to note the 1949 article ‘Things new to Tasmania’ and curious link to I-CONIC @designtasmania. I loved making jaffles on the open fire during family camping trips as a child. Our iron was not the original, like this one, with the classic rings and brand. The electric version of a jaffle is also all Australian with the innovations by Breville in Sydney. 麻薯波波💕 其實我幾個月前已經整過幾次麻薯波波，但係嗰陣整極都係好硬，食落去好似石頭咁😂就果斷放棄了。。。有一日俾我碌到YouTube 有人整，見到突然間好想食，就嘗試跟佢整麻薯波波，發現都幾好食！但係凍咗仍然都係硬😂同埋中間有空氣感，鍾意實在少少嘅又煙韌嘅，所以係佢嘅食譜基礎上改變咗比例同溫度，出嚟個效果都唔錯🤤重點係，凍咗都唔會好似石頭咁硬！朋友食過話好味，好煙韌好好咬🤭 ============================== 材料：高筋麵粉 30g 糯米粉 10g 木薯粉 135g 牛奶 150ml 無鹽牛油 30g 雞蛋 1隻糖 30g 鹽 1/2 茶匙芝麻粒適量 ============================== 1️⃣小火加熱糖鹽、牛奶和牛油(有小泡冒起)，熄火 2️⃣篩入高筋麵粉，攪拌至無顆粒（大概會似半固體，如果仍是液體，需加熱攪拌） 3️⃣篩入糯米粉和木薯粉，攪拌 4️⃣逐少倒入蛋液，攪拌均勻(麵糊呈現倒三角形) 5️⃣放入已炒過的芝麻粒，分量隨心 6️⃣將麵糊放入擠花袋，擠在牛油紙上。 7️⃣同時間預熱焗爐。 8️⃣溫度： 180℃ 20分鐘 (冇糯米粉)➡️焗好好脆，凍咗硬，中間輕飄飄 170℃ 18分鐘 ➡️出爐軟，中間好煙韌 170℃ 15分鐘，200℃ 3分鐘 ➡️quite nice，外少脆內煙韌原食譜：https://youtu.be/IyhIJPz3wNY 💡一開始嘗試其他食譜，佢哋嘅比例係糯米粉：木薯粉~7:3 我有嘗試過調高糯米粉嘅比例，點知仲更加硬😐 💡後來得知原來落高筋麵粉可以令麻薯波波凍咗都冇咁硬，同埋糯米粉係會硬，先知道原來木薯粉嘅比例要再多啲 💡不過麻薯波波放咗入雪櫃2日之後，中間嘅Texture就會有明顯變化，變得不再煙韌，所以盡量都係唔好放入雪櫃(或者快啲食完) 💡如果要整抹茶味，注意抹茶粉吸水量好大，要適量加多少少蛋液 . . #麻薯 #麻薯波波 #烘焙 #食譜分享 #baking #bakingfromscratch #mochi #mochiballs #麻糬 #麻糬波波 #煮食 #下午茶 #dessert - @hei.kitchen on Instagram

#golfeados Estos seres se convirtieron en un reto personal, probamos muchas fórmulas con las que no lográbamos resultados consistentes, que si azúcar en exceso que no es muy bueno, que si mucha levadura, que si muy hidratada la masa, que le falta sabor, que nos quedan choreticos, que se secan 😲... Por ahí leí un consejo intenta muchas veces hasta llegar a una fórmula que te guste. Eso hice, ayer estrenamos estos nuevos golfis en una escala mayor y los resultados nos gustaron mucho (aún con detalles por curar)... Podemos decir que saldamos una primera etapa de mejora 😂 En el alma de estos peques hay talvina y mucha paciencia, en su corazón bastante quesito y el aroma de nuestras especias 💕...
