Quick and easy VEGGIE CASSEROLE 🥕🍅 New recipe on our blog! 👇 📝 INGREDIENTS *1 large aubergine *1 red pepper *1 green pepper *2 courgettes *1 large tomato *1 or 2 cloves of garlic *STAR extra-virgin olive oil *Salt *Herbs de Provence ⬇️ INSTRUCTIONS ⬇️ 1️⃣ Leave the aubergines to soak in water with a pinch of salt for half an hour to minimise their slightly bitter taste. 2️⃣ Wash all the vegetables and dry them on kitchen paper. Cut them into 1 cm thick strips. The key to a perfect ratatouille is to cut all the vegetables to the same thickness. 3️⃣ Grease an oven dish with a good dash of Eco Natura extra-virgin olive oil and arrange the vegetables in alternating layers or spirals. Sprinkle them with salt, herbs de Provence and finely chopped garlic. Drizzle them again with Eco Natura extra-virgin olive oil, put the dish into a preheated oven at 180 ºC and bake for half an hour or until they are lightly poached. Recipe👇Slow Cooker/Instant Pot Bolognese (Low-Carb, Paleo, Whole30) __ Creamy bolognese sauce with bacon. I served this over zoodles. Low-carb/keto you can substitute whipping cream for the coconut milk. More info👉 https://fitslowcookerqueen.com/easy-slow-cooker-bolognese/ (click link in profile). __ Slow Cooker/Instant Pot Bolognese 🔹Ingredients 2 lbs ground beef 4 ounces @nakedbaconco bacon 28-ounces crushed tomatoes 1 cup full-fat coconut milk 1 cup onion, diced finely 2 celery stalks, diced finely 2 carrots, peeled & diced finely 3 garlic cloves, minced 1 bay leaf 2 teaspoons oregano 1 teaspoon salt 1 teaspoon basil 1/2 teaspoon pepper 🔹Instructions 🔻Slow Cooker: Cook & crumble bacon. In a large skillet, add ground beef and cook over medium-high heat until browned. Drain grease. Add the ground beef to the slow cooker along with the bacon. Add all remaining ingredients to the slow cooker. Stir to mix well. Cook HIGH 3-4 hours or low 6-8. Remove bay leaf & stir before serving. 🔻Instant Pot: Turn on the pressure cooker and select sauté. When hot, bacon and cook a few minutes until browned. Add ground beef, carrots, celery, and onions. Cook 5-7 minutes until beef is browned and vegetables are soft. Crumble the ground meat as it cooks. Add garlic and cook an additional minute. Drain excess grease from the pressure cooker if needed. Add oregano, salt, thyme, basil, pepper, and red pepper flakes. Stir to mix well. Pour crushed tomatoes on top. Top with bay leaf. Do not stir. Close lid and seal valve. Cook high pressure for 20 minutes. Natural release pressure for 5 minutes then quick release any remaining pressure. Kolokythokeftedes (croquettes de courgettes) Notre recette du jour nous fait une fois de plus voyager au-delà des frontières modernes de la Grèce pour rejoindre l’ancien Empire Ottoman en passant par le Liban ou la Syrie. Au menu, des Kolokythokeftedes, littéralement en grec des “boulettes de courgettes” préparées avec des courgettes râpées donc, des herbes (aneth, menthe, basilic), du cumin, du piment rouge ou encore de la féta ! S’il s’agissait bien au départ de boulettes bien rondes, frites dans un peu d’huile, on les trouve de nos jours aussi sous forme de petites galettes fines, servies en mezze accompagnées de tsatziki. Plus à l’est, dans l’ancien empire ottoman, il existe diverses recettes plutôt similaires : les ingrédients restent les mêmes mais les quantités varient ! Ainsi, on pourrait citer la fameuse rjit kousa libanaise (عجة كوسى) qui contient tout de même plus dœuf ce qui la rapprocherait, selon les régions, de l’omelette aux courgettes. The Root staff had a fun tasting party a couple of weeks ago to do some nutrition fact-checking and try out the Root Farmacy new Fall menu items before they go live next week. The general consensus was that this turkey meatloaf is 💯🔥. It was so good we are all still thinking and dreaming about it days later. 𝗙𝘂𝗻 𝗳𝗮𝗰𝘁𝘀 𝗮𝗯𝗼𝘂𝘁 𝘁𝗵𝗶𝘀 𝗱𝗶𝘀𝗵: ✅The actual meatloaf contains fruits and vegetables! It is full of antioxidants from onion, zucchini, carrot, and sweet potato. You also get anti-histamine properties from the garlic, olive oil, apple in the loaf. It is also incredibly moist (sorry for saying this word, but it’s true 😜) from the addition all of of these. ✅To keep the carbohydrates moderate, we served the meatloaf over a cauliflower mash (instead of mashed potatoes) and roasted Brussels sprouts. Cruciferous vegetables are important for supporting liver detoxification and are great for hormone balance and keeping you regular 💩. ✅12 grams of fiber just in this dish! You will be well on your way to meeting the recommended 25-35 grams of fiber per day after just this one meal. ✅It is gluten, dairy, and soy free. Buffalo milk ricotta #Ndunderi with sweet summer zucchini 🥒, crispy and golden, #stracciatella cream, chives 🌱 and a good amount of lemon zest 🍋 (remember the burrata and lemon zest love story? This is that, version 2.0) ✨⠀ ⠀ Originally made with spelt flour and curdled milk, theyre nowadays prepared with #ricotta. They can be quite big and sort of cube-like, or simply shaped as gnocchi like here and are traditionally served with a tomato based sauce, flavored with pork rinds, pork chops and salsicce. ⠀ ⠀ Check my previous post for some infos on the history and traditions of this shape and the one before or the Gnocchi Highlights for some shaping videos ❤️⠀ ⠀ ⠀ Makes 2 servings:⠀ Mix 300g buffalo milk ricotta (or just regular ricotta, but in this case you might need to add a tiny bit more flour since buffalo milk ricotta can be a tiny bit drier) with 40g grated Parmigiano, salt, pepper, a pinch of freshly ground nutmeg and 2 egg yolks, then incorporate 120g all purpose (0) flour. ⠀ Knead the dough briefly, until all is well mixed, then roll it into ropes and cut those into nuggets of your preferred size. Spread on a well floured surface. ⠀ In the meanwhile blend 130g stracciatella (which basically is the filling of burrata) with 1tbsp milk until smooth. You shouldn’t need salt and definitely don’t need any fat in here. ⠀ Slice 3 small zucchini (about 250g) into not too thin slices, around 2mm thick. ⠀ Bring a wide pan on medium heat, add 40g extra virgin olive oil and 2 cloves of garlic and let them golden, about 2min. ⠀ Turn the heat to high, add zucchini slices, toss once and spread them so that they’re not overlapping too much. Let cook undisturbed until golden, about 5min. Remove garlic, toss zucchini and let cook 3-4min more. Season with salt. ⠀ In the meanwhile cook Ndunderi in salted boiling water until they float (or a bit more if they’re big). Drain them and transfer into the pan. Toss well and serve on top of the burrata cream, sprinkle with finely minced chives, a generous amount of lemon zest and freshly cracked black pepper. As promised! Last nights recipe for Biftekia sto fourno. I’ve shared this recipe before and the method is also in my highlights but to save you the trouble here it is once more. Btw. What do you think of the Reels? I think they’re so fun! 💃🏻 Love creating them! Happy cooking! Biftekia mixture: 500g Beef mince 1 whole grated onion 2 grated cloves of garlic Handful of chopped parsley Handful of chopped mint ¼ cup of bread crumbs 1 egg 5 tbsp extra virgin olive oil 1 tsp dried oregano Salt and pepper Potatoes: 5-6 potatoes peeled and cut into wedges Juice of 2 lemons 1 tsp dried oregano 1/4 cup Extra virgin olive oil Salt and pepper To prepare dish preheat oven to 180 degrees C. Begin by combining all potato ingredients in your baking tray. Cover with foil and bake for approximately 30 minutes or until potatoes have softened. Whilst potatoes are in the oven, in one bowl add all ingredients to make the biftekia. Mix all ingredients well, preferably by hand to combine (if you feel the mixture is not holding very well, keep working it with your hands, it will come together). Form 2 Tbsp of mince mixture in your hands into oval shapes and set aside till they’re all made. Once you’ve formed the biftekia, arrange them into the tray with the potatoes (you may need to move the potatoes around in order to fit the Biftekia). After everything has been fitted back into the tray, give potatoes and biftekia a drizzle with extra virgin olive oil and return to the oven for approximately 25-30 minutes or until golden and biftekia have cooked through.
