休日のエッセイ『 おと。のお料理 』 . 豊かなご縁の巡り合わせの中で、 おと。のランチそしてデザートを味わっていただく日々に感謝しております。 ケーキを作り始めたのは、ちょうど７年程前でした。 色々と人生の節目を迎え、東京から奈良に戻って来て、ちょっと(いいえ、だいぶと)こころが塞ぎがちだった頃に、自宅の台所で毎日ひとつケーキか焼き菓子を作ることが、当時唯一のこころの拠り所でした。 当時、少し(いいえ、だいぶと)人とコミュニケーションを取ることも億劫になってしまって、おしゃべりも、どうもこうも言葉で上手に人に自分の気持ちを伝えることが難しい時期がありました。 そんな時に、「表現できる方法が、お料理しかなかった。」、というのが正直な気持ちです。 それは、今も変わらないことかもしれません。 人に会うのが億劫だったこともあり、お料理教室も行けませんでしたし、お財布にも余裕があったわけではありませんでしたので、私にとってのお料理の師は図書館の『本』でした。それが、当時の精いっぱいでした。 ✳︎ しかし、そこからお料理と無縁だった私が、一筋の光を見出していくことになります。 ✳︎ いつの間にか、自宅のお台所は実験室となり、 気付けば、お料理が自身の生きるチカラになっていることに気付いたのは、それから数年後のこと。 何のために作るのか、誰のために作るのか、 お料理は、私に何を教えようとしてくれているのか。 そんな哲学的なことにまで思いがひろがっていった先に、 それは、ひととひとを繋ぐ表現であることに気付きました。 お料理そのものから、醸し出されているもの。 お客さまにとって、それがやさしさや豊かさやあたたかさみたいなものを感じていただけたら、うれしく思います。 おと。がランチを数量限定にしているのも、お料理をお召し上がりくださるお客さまの御顔や表情を想って、ご用意させていただきたいから。 明日からのおと。も、笑顔とやさしさがひろがりますように。 そろそろ、おと。にて、お料理の会をはじめたいと思っています。 物語のような人生を、みなさんと感じ合えたら幸いです。 . 🐇🌿🌸✨ . おと。のオープンにあたり、ランチプレートはご予約のお客様を最優先に、１日につくる数を決めております。一定の人数に達しましたら、ランチを終了させていただくことをご了承ください。 みなさまが心地良くお過ごしいただける環境つくりを目指しております。 それにあたり、ランチをご利用のお客さまはご予約いただくことをおすすめいたします。ぜひお気軽にお電話orメールをください。 . It doesnt need much introduction. Mine is L in size and grey in colour. We have had this since 7 months ago (Feb 2020). WHY I BOUGHT IT? 🌿My 3.5 year old 🙎♀️ (back then) was not in school. And I am bad at sitting down with her for worksheets and figured this would entice both the mother and daughter to want to start writing and doing more learning together. We started with getting my daughter to change the day of the week on the board. And it benefited not just her🙎♀️ but the family as well, because we were in a lockdown soon after, and it helped to consciously keep track of the day. 🌿I was having nesting anxiety because I was entering the third trimester of my second pregnancy. I was worried about not being able to spend as much time with the older girl when 👶 is out. And I was hoping this would occupy her when I am busy. 🎈The pictures are some of the activities we did when we first had it and before baby arrived. We used it a lot and it was very engaging. SO DO WE LIKE IT STILL? Fast forward 7 months down the road, 🙎♀️ still uses the whiteboard almost every other day, voluntarily. (I am no longer able to do so much for her now that 👶 is here). Recently she would draw and do story-telling at the same time. It’s the last day of September, #nationalsuicidepreventionmonth and I struggled on how to shine a light on this very real issue, but we must share because we actually lost someone very dear to us and want to #breakthestigma in hope to help someone through Elaine’s life. Many of you already know our story or have read it on our website about the co-founder of E2beauty, Elaine, but for those who do not know, In 2017, Elaine had taken her own life. It was tragic and for some, it was very unexpected. I have been reading many posts on @realdepressionproject and as much as I don’t know whether my actions would have changed the situation, I wish I knew about this site as a resource or to better understand. Biggest thing I have learned is that it is a very lonely struggle to have a mental illness and it is also hard to know how to support someone with one. During this year I have thought about Elaine a lot and I can’t help to think about how she would have been during this pandemic. It would have been extremely hard. So, I ask you to check in with your family and friends to see how they are doing. Maybe even send some snail mail or have a phone call or zoom. Or if you need a place to unwind in a safe place, come get your hair done and talk. We are not therapists, but we are here as real people to listen without judgement. Our team has gone through many struggles together and we are here for you too. Most of mankind have forgotten the art of stillness. Cha Dao reminds us that behind every great decision is a vista of stillness, of quietude. It is about harnessing our intuition by getting still, by allowing us to focus on this one moment as we have Tea, and then through reverence and harmony, let Tea imbue our stream of consciousness, and let Tea and being become one. This calm centre is the very heart of the Dao, which will always lead us to stay centred in harried moments, to act when the time is right, not because it was forced or coerced or because we were badgered into it, which often only results in something unnatural. So I would like you to get real today: Are you addicted to being busy? What is giving rise to this resistance, if any, against anchoring in a meditative practice? In Spotlight series we will meet tonight Miyuki who was awarded as runner-up at this years Best Sommelier of Japan competition!⠀ ⠀ Name: Miyuki Morimoto @mo.chi.co18 (Japan) ⠀ ⠀ I am: Sommelier at Conrad Tokyo, Hilton Group⠀ ⠀ What inspired me to become a sommelier: When I was still a section waitress, our Sommelier made me taste Château Ducru Beaucaillou 1995 as he had to confirm the wine condition before serving. I was impressed with the deliciousness of that Château Ducru Beaucaillou! Then, he looked at me and said that he would ask me some questions about this wine the next day. It was my turning point into the wine industry. ⠀ ⠀ My role model is: My mentor and boss Mr. Satoru Mori. He was the winner of the first Best Sommelier of Asia Oceania competition and represented Japan in the World competition four times. He taught me what is to be a sommelier and what the sommeliers role is. ⠀ ⠀ My greatest professional achievement is: Advanced Sommelier Certificate from Court of Master Sommeliers. ⠀ I started to study CMS when I lived in Sydney. Unlike competitions, studying the Court of Master Sommeliers gives us a chance to train each other, we can share information from various countries, restaurants and hotels. We can improve our grades together. I am very grateful to Yuki Hirose @yuki5273 (Rockpool, Sydney), Toru Takamatsu MS @toru_95_ms, Christian Baeppler @beppo126 in (Rockpool, Perth) and Andrea Martinisi @andreamatinisi in New Zealand for helping me to keep up [my studies] and their care. ⠀ ⠀ [Ed. note: Miyuki was awarded as runner-up at this years Best Sommelier of Japan, and will represent Japan at the next Best Sommelier of Asia & Oceania competition to be hosted in Australia. Miyuki is the first woman to represent Japan at an ASI competition.] ⠀ ⠀ My favourite food and beverage match is: Kara-age (fried chicken) and beer is outstanding...I’m just kidding. ⠀ I’d like to say 100% malolactic fermentation Chardonnay with Japanese Wagyu Beef. Japanese Wagyu Beef has more lactone flavour like milk, butter aromas than other beef, and this character works well with white wine [rather] than red wine.
