Wanna make some too ? - soak 2 cups of chickpeas in water overnight - drain, rinse off & cook them in water - drain, rinse again, then mix the chickpeas while adding some water (until youre happy with the consistency) - mix in 2 cloves of garlic, 2 tbsp of tahini sesame paste, a pinch of salt, the juice of half a lemon & some cumin (if you like to spice it up a bit more) - (optional) add radish powder or broccoli powder for additional flavor . First time making baba ganoush (or baba go shoosh as Christopher calls it). I never made it before, because I wasnt sure how well it would be received by my boys, because even though they love hummus (which is very similar), they are not big fans of eggplants. Well, to my surprise, they loved it and ate it all right after I took pictures of it! I also tested it on some neighborhood kids and they loved it as well! Overall, huge success! ➖➖➖➖➖➖ Recipe: 1 large eggplant 1 clove of garlic, well minced 2 tbsp lemon juice (or to taste) 1/4 cup tahini 1/4 cup olive oil (I used a touch less) 2 tbsp fresh chopped parsley salt cumin 1. Cut the eggplant in half (lengthwise), brush with olive oil and put on a baking sheet (cut side down). Roast in the 450F oven for 30-35 minutes. Remove from the oven and let it cool for a few minutes. 2. Scoop out the flesh with a large spoon onto a strainer and press it to remove all liquid. Transfer to the mixing bowl. 3. Add tahini, lemon juice, garlic, parsley, cumin and salt and mix until all the flesh is broken down and smooth. Add olive oil, season to taste with more salt and lemon juice and mix to combine. 4. What’s for dinner today? Creamy Spinach Dhal. I made this Punjabi style dhal with green and black lentils, which offers a simple yet wholesome meal option. I’ve also added spinach to get extra greens into my diet, so it’s healthy and my idea of yummy goodness in a bowl. In my house we love this dhal with warm buttery parathas. Recipe below and have a great Friday! 🌱 200g Dried Lentils (soaked overnight) I used 50/50 green and black lentils. Boil lentils to almost cooked or pressure cook (approx 2-3 whistles). 1 Tsp Mustard Seeds 1 Tsp Cumin Seeds 4 Curry leaves 5 cloves Garlic sliced Thumb-sized Ginger peeled/minced 1 Onion finely chopped 2-3 Green Chillis (slit) Pinch Salt 1 Tsp Coriander powder 1 Tsp Garam Masala 1/2 Tsp Turmeric Powder Chilli powder to taste Salt to taste Spinach to taste chopped Handful fresh Coriander leaves chopped Heat oil in a pan. Add the mustard seeds followed by the cumin seeds. Then add the Curry leaves. When it splutters add the garlic. Stir. When the garlic browns a little add the ginger and stir. Add the onions, green chilli and a pinch of salt. Leave the onions to turn translucent and golden. Stirring occasionally. Add the dried ground spices. Stir. Cook for a minute. Add the cooked lentils with some of the water. Add salt to taste. Cook for 5 minutes. Add Spinach. Cook for 15-20 minutes. Stir frequently to stop the bottom sticking. You can add more water to achieve desired consistency during cooking. My vegan cream cheese recipe that was inspired by @sweetlaurelbakery Here’s what you will need: -3/4 cup cashews, soaked overnight -1/4 cup lemon juice -1 tbsp tahini -4 tbsp coconut oil, solid -1 tsp salt -herbs (I love chives) -1 tsp pepper 1. Drain the cashews. 2. Blend cashews, lemon juice, tahini, coconut oil, and salt until smooth. 3. Stir in herbs and pepper. 4. Let set in the fridge overnight and consume within a week. This recipe will make about 1 cup! I’ve made Tiramisu ice cream before, but I was never really happy with the results. Lady fingers were sort of absorbed by the cream. So I swapped out the lady fingers for small chunks of classic yellow cake and added chopped dark chocolate. The espresso mascarpone ice cream is killer, IMHO.. When words or phrases are used to make a product sound healthier or better-for-you than it is, we call that the health halo effect. You know... when you throw the word organic on a box of cookies and all of the sudden it seems healthier? Thats what we have here... ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This Greek cream cheese makes a few claims on its packaging that would lead you to believe that its a much better choice than traditional cream cheese. First, the word Greek alone makes it seem like this would be a better option that a regular cream cheese. But when you compare the ingredients with those in regular cream cheese, Im not quite sure whats in there that makes this Greek. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Next, we can look at the words and phrases they use on the packaging: 4x the protein and 1/2 the fat compared to regular cream cheese ⠀⠀⠀⠀⠀⠀⠀⠀⠀ So lets take a look... When compared with regular whipped cream cheese, it has 3x more protein. But it still only has 3 grams of protein... which is pretty insignificant when you compare that to your daily protein needs. ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ It does have about half the fat of regular cream cheese but were talking about 2 grams of fat less... not really something to split hairs over. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Theyre also almost equivalent calorically and again, Im not going to buy one product over the other because it has 5 fewer calories. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Yet I still see people running out to buy the greek cream cheese because of the perceived health halo. While theres absolutely nothing wrong with either of these options, this post is about food marketing and the importance of being an informed consumer. Mesabecha is a popular variation of our favorite Middle Eastern spread, HUMMUS. 😍 This version is served with whole chickpeas and tahini sauce. I added my own twist to this dish by sautéing the chickpeas in spices! 🌶️🌶️ Give it a try! 👇🏻 INGREDIENTS 3 cups cooked chickpeas 3 tablespoons sesame paste 1-2 garlic cloves, or 1/2 teaspoon garlic powder 3 tablespoons lemon juice 1/4 cup boiling water 2 tablespoons olive oil For the sautéed chickpea topping: 1 cup cooked chickpeas 2 tablespoons olive oil 1/4 teaspoon paprika 1/4 teaspoon cumin sprinkle of cayenne pepper (optional) salt and pepper to taste 1. In a food processor or blender, blend all the hummus ingredients together until smooth. Add a splash of water for a thinner consistency. 2. 🌱 WHIPPED HERB FETA 🌱 . This was definitely a winner on the table today. This easy dip will only set you back 10 minutes or less, and tastes so damn good! And @drstevengundry will most certainly be glad to hear you can drown it in olive oil and dip your veggies in. . RECIPE 8oz Feta - sheep/goat milk 2oz Goats cheese 2oz Cream Cheese (organic) Any herbs you have laying around 1/4 tsp Garlic Powder 1/4 tsp Onion Powder 1/2 Lemon . Blend the crumbled feta, goat cheese and cream cheese in a food processor/blender. You can add a drizzle of olive oil if it seems to dry/thick. If you made confit garlic from my previous recipes, now would be a fantastic time to drop in a clove or two! Add the herbs and spices (I added some ground cumin too to give it a more middle eastern taste) and the juice of half a lemon. Spoon into a a bowl (like this gorgeous one from @shore_woodcraft), and drizzle generously with extra virgin olive oil and extra herbs. Serve with fresh carrots, celery sticks, butter lettuce or compliant chips like @therealcoconut tortilla chips (in moderation). . Now that we acknowledged it, lets float on a deep pool of hummus👩🍳 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 🌱 - 400g can of chickpeas - 60ml olive oil - 2tbsp cold water - 1tsp dried garlic powder - 1 lemon - 3 tbsp of tahini - 2-3 olives for decor purposes 𝗠𝗲𝘁𝗵𝗼𝗱 📋 1. Drain and rinse the chickpeas, then add them into a food processor 2. Add the oil, water, garlic, lemon, and tahini 3. Start blitzing till smooth or less time if you prefer it coarse 4. HAPPY MONDAYYY! 🥳 new dip to power ya through the week I never ate Middle Eastern food growing up and discovered in college how much I love it! Smokey roasted eggplant babaganoush is now one of my all-time favorite dips. 🍆 My girl @hima.rajana inspired me to try making it at home and boyyyyy I did not regret it! Plus it’s a super easy Vegan/Paleo/Whole30-friendly dip recipe that everyone will love! Hima has an awesome recipe on her feed (pop over there to see it!) I used hers as a baseline recipe and then adjusted to personal taste. Here’s how I adapted it: Slice a big round eggplant in half, oven-roast it flat-side down at 450F for ~45 min. Peel back the skin with tongs and discard, put eggplant in a bowl, mix with a fork until it begins to form a creamy texture. (You could prob do a few of the skinny ones and roast for half the time) While eggplant is roasting, mince 1/2 small red onion and 2 cloves garlic and caramelize it stove-top, add to eggplant bowl and grate 1 more clove raw garlic (you may opt to only do raw garlic or only do cooked garlic depending how much you like 🧄!). Mix with fork: Add in 2 heaping tbsp tahini, juice of 1 whole lemon, drizzle in olive oil until desired texture (I wanted it more creamy so I used about 2 tbsp, but you can do 1tsp or just drizzle on top if you want it thicker), then add smoked paprika and s&p to taste. I prefer it cold so make-ahead, refrigerate, then serve with your fav dipping vessel! Will store great in an airtight container for up to 3 days (but if you’re like me it probably won’t even last 3 hours LOL) - @eatswithtori on Instagram

What’s your favourite Aubergine dish? Just looking at Mezze dishes and dips alone there are sooo many different variations across the different cuisines it’s pretty amazing. Yesterday I made a really simple and delicious Aubergine appetiser - Borani Bademjan (essentially yoghurt and aubergine dip). I used the flesh of two charred aubergine, 1/2 onion fried until golden , crushed garlic cloves and then mixed in enough Greek yoghurt to get the consistency I wanted (plus a dash of salt). I know that many people also like to add dried mint to their Borani so I’ll try this with the remainders in the fridge later! This is a Persian appetiser - Afghanistan also has a yoghurt and aubergine based dish (Borani Banjan) - however this is prepared quite differently with fried aubergine and cooked tomato - which I’ll post about in the future. - @sw3kitchen on Instagram

No Middle Eastern platter, or mezze, is complete without hummus. Hummus is usually served as a dip that is meant to be artfully swooshed into pita bread and eaten alongside the vibrant spread of other delicacies in the mezze. Whatever the controversies may be about its origins , one thing is agreed upon-this dish is decisively Middle Eastern. Though hummus is considered to be a dish unto itself, it is in fact an ingredient. Una ricetta orientale semplice e gustosissima: lhummus di ceci! Ecco ciò che ti serve per prepararlo: - 600 g ceci precotti - 100 g semi di sesamo - 150 g acqua calda - ½ succo di limone - 30 g olio di sesamo - 1 cucchiaino di paprika - 1 spicchio di aglio - sale fino q.b. - pepe nero q.b. - 1 ciuffo di prezzemolo Sbuccia e trita finemente laglio e aggiungi il prezzemolo, anchesso tritato. Nel frattempo, per preparare la tahina, metti dei semi di sesamo in una padella antiaderente e tostali a fuoco dolce per 2-3 minuti, frullali poi utilizzando un mixer. Piano piano, versa a filo lolio di sesamo e aggiungi un pizzico di sale e lacqua calda. Unisci i ceci precotti e scolati, il succo di mezzo limone, laglio e il prezzemolo tritati precedentemente, sale e pepe e continua a frullare. Una volta ottenuta una bella crema, puoi aggiungere un cucchiaino di paprika e un filo dolio di semi per dare ancora più sapore al tuo hummus.
