Tuna & Pasta Bake 🤤 Cheesy, creamy, smokey, with a little bit of crispness on top... this dinner is the perfect, warming and comforting hit of carbs we all need on a wintery evening! ❄️ It’s super simple and can be made with staple pantry ingredients in no time at all, and makes for super yum leftovers for lunch the next day! 🤩 •200g pasta - boiled •2 cups frozen veg •360g tinned tuna •420g cream of mushroom soup •1/2 an onion, diced and browned •1 t paprika •salt and pepper •1 C breadcrumbs •1 C grated cheese Combine all ingredients except the bread crumbs and cheese in a large ovenproof dish. Top with breadcrumbs and cheese and bake at 180 c for 25 mins. Recipe ; (2 1/2 to 3 pound) spaghetti squash, cut in half lengthwise and seeds removed 2 tablespoons water 1 pound lean ground beef 1 medium shallot, sliced 2 cloves garlic, minced 1 ½ teaspoons italian seasoning ½ teaspoon plus 1/8 teaspoon salt ½ teaspoon ground pepper 1 (28 ounce) can no-salt-added crushed tomatoes 1 cup shredded fontina cheese Fresh basil for garnish . . . . Step 1 Preheat oven to 400 degrees F. Step 2 Place squash, cut-side down, in a microwave-safe dish; add water. Microwave, uncovered, on High until tender, about 10 minutes. (Alternatively, place squash halves cut-side down on a rimmed baking sheet. Bake at 400 degrees F until tender, 40 to 50 minutes.) Step 3 Meanwhile, cook ground beef in a large ovenproof skillet over medium-high heat, breaking it up with a wooden spoon, until no longer pink, 5 to 7 minutes. Add shallot, garlic, Italian seasoning, salt and pepper and cook, stirring, for 1 minute. Stir in tomatoes and bring to a boil. Reduce heat to maintain a simmer. Step 4 Use a fork to scrape the squash flesh from the shells into the sauce; stir to combine. Top with cheese. Transfer the pan to the oven and bake until bubbling, about 15 minutes. Let stand for 5 minutes. Vegan Cottage Pie I have been wanting to post this for ages as it is firm family favourite, but wanted to get the recipe just right. This one is just how I want it ! the non-vegans in the family said they loved it and it is the best cottage pie they have ever tried !!!👏 I used a combination of meatless farm mince, brown lentils and mushrooms for the bottom layer, adding carrots and green beans. The mash was topped with plant based butter before it went in the oven which made it so creamy and melt in the mouth delicious 😋 You have to try this ! Ingredients For the ‘mince’ layer 50g plant based butter 400g plant based mince (I used meatless farm) 1 cup of brown lentils 10 mushrooms, finely diced 2 carrots, diced 50g green beans, diced 1 bay leaf 1 tsp salt 1 tsp pepper 1/4 tsp chilli powder 1 tbsp dark soy sauce 1 tsp Worcester sauce 1 tsp maple syrup 1 tbsp flour 2 cups water For the mash layer: 6 large potatoes, unpeeled and chopped 1 tsp salt 1 cup bowl plant based milk 50g plant based butter Method: 1. Cook the lentils for 40 mins in 3 cups water, drain and set aside. 2. Bowl the potatoes in salted water for 15 mins and drain. 3. Add half the milk, salt and half the butter, mash the potatoes and set aside. 4. For the mince layer, melt the butter in the pan, add the bay leaf, plant based mince and lentils, cook for 15 mins. 5. Add the soy sauce, Worcester sauce, salt pepper and chilli powder, mixing well, then add the mushrooms. Cook this mixture for 5 mins. 6. Add the flour stirring and incorporating well. 7. Pour in the water, also adding the carrots and green beans. Bring to the boil and cook on a medium heat with the lid on for 5 mins. 8. Add the mince mixture to an oven proof dish, then layer on the mash decorating with form limes.
