Waffles Sundaes for the weekend 🧇 Make your weekend brekkie extra special by topping your next batch of CRISPY GLUTEN FREE WAFFLES with banana ice cream + almond butter. 🍌 It will taste soooo decadent, when in reality you’re eating a blend of real whole foods topped with fruit + nuts. So good that I hope you’ll save this recipe and give it a try! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Makes 4-6 large waffles ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Mix the following dry ingredients in a large bowl: 1 1/2 cups gluten free oat flour 1/2 cup blanched almond flour 1/4 cup chickpea flour 1/2 cup cornmeal 1 T ground chia or flax seeds 1 T baking powder pinch sea salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Make a well in the center of the dry ingredients, and add: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 1/2 cups almond milk 2 teaspoons vanilla extract 3 T date paste or maple syrup ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Mix until well combined. Follow your waffle makers direction, using about 1/2 cup batter per waffle. Cook until crispy and delicious! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ For the banana ice cream: Blend frozen bananas in a high speed blender or food processor with a splash of plant based milk. I like to use one frozen banana per serving, so adjust accordingly! Change, balance & plum torte 💛 Sometimes, it can be hard to know when the season has changed in UK! A hot day can give way to wintery cold at a moment’s notice. But we are definitely heading into fall, there is a shift in the air, a little nip. The colour of light has changed. My toes demand that I wear socks in the evening! Just like change in season, changes in our lives can produce an emotional tingle ((I think I just invented this phrase! And I like it) We all have our ways of coping with the emotional tingles, some of us turn inwards, others throw themselves at the world. For me, finding the balance between running at the world and turning inwards is the key to dealing with changes, both small and large. But there is no perfect combination to deal with all situations. You have to feel your way towards finding balance in each situation; to ease the emotional discomfort. Which brings me to balance in photography. Just as in life, the balance in photography is important. Your photographs should have a sense of balance but there is no simple formula, like the rule of thirds, to know when your photograph is balanced. You have to feel your way towards balance. With practice, you start to see the balance in your photography. Seeing a well balanced photograph always induces a sense of ease in me. This photograph is one of my favourites: it’s very balanced which I find extremely pleasing, it comforts me. Find your balance, friends, in life & photography 💛 How do you find balance? This week has been full of joyous baking and positive and exciting life changes. Im so excited that I was able to make cakes for a few people this week, even though it was technically an off week for baking. I was happy to make these cakes. For some beautiful reason I felt really at ease, not pressured or rushed. It was, graceful even. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This is cake babe is so exciting! I winged the look totally because I decided I wanted to make a terrazzo inspired cake. This decadent chocolate sponge is filled with gorgeous salted caramel and iced with the best vanilla bean Italian meringue buttercream.
