- Spanish Tortilla is the new best Cast Iron dish. Eggs, potatoes, onions, olive oil. So many variations. For a quick dish I highly recommend potato chips (ala Kenji) or french fries (will do McDs), they work perfect.

- Just made Mexican coffee buns! We call them that in southeast asia, but I think its inspired by conchas. Its got a buttery filling and a coffee icing on the top. Tastes absolutely divine on a cold winterys day. Used a water roux for the bread dough, and it tastes absolutely amazing! So happy!
