Beef Stroganoff | By Cooking with Brenda Gantt - Facebook | Good morning, Facebook world. Lisa, this is Cooking with Brenda Gant on Facebook. So, I want you to follow me. I want you to like me on Facebook and every time I do a video, its just go pop right up there and you can keep up with me. Listen, today, were going to do, well, a beef stroganoff. Actually, its four tomorrow but Im gonna make my beef stroganoff up today and just refrigerate it and then tomorrow, Im gonna do uh that thatll be already marinated and everything and so what Ive done is I bought me this roast right here and uh yall went to the pig and bought it and its a boneless chuck roast and chuck roast are very tender. So, this is why I bought this one. And it was $11.98 for this bigger thing and Im gonna be uh feeding a lot of people so it should go a long way. Now, before I start, you know, I always tell you had to have a good sharp knife. So, Ive got me a knife sharpener here. Old timey and uh my old tiny knife and Im just gonna pull that through a time or two and its gonna get it nice and sharp. So, thats what Im gonna do this morning. Then, Im gonna unwrap this roast and Im gonna show you how Im gonna cut it up, okay? Um Well take the roast out of the package. Im gonna go over here to the sink and rinse it off real quick then Ill show you what were gonna do with it. And just rinse it out with some cold water. Okay? Theres my roast. Now, what you wanna do when youre making beef stroganoff? You can make this out of deer meat or you can make it out of um just cow meat, whatever. So, Im gonna cut off just a little bit of the fat and um because I dont want that on here and Im gonna cut this like that and Im gonna cut it in some strips. Ill show you how Im gonna do it and then Im gonna then when I do that, Im not gonna show you me cutting every little strip but I want to show you the main part, okay? Im gonna cut it in strips about the size of my ring finger. Theyll be kinda long, skinny strips. Let me cut this one so you can see. This is how its gonna look. Im gonna cut all of it up this way like that, okay? And Im gonna cut off this little clump of fat on the end of it. Because I dont want all that. Like I say, its okay to have a little bit of it in there but not too much but see there? Im gonna cut the whole roast up like that. Thats gonna be the first thing I do and while I mention it, yall look at my pretty apron. And my pretty earrings. I had four ladies to come from Texas. They spent three nights with me and they have shopped and had the best time and I fixed the breakfast and uh they left this morning and wishing them a safe trip back and uh so they brought me all kinds of goodies, not just this but they brought me some, everything was from Texas that they brought and the other day, somebody came from Virginia and everything they brought me was from Virginia. So, Im getting a collection all the steaks it looks like. Ill be back in a few minutes when I get the rest of this cut off, okay? Buh bye. Okay, all the meat is cut up and were fixed to fast fry it. What what actually what youre doing is searing it and get some brown on it. You dont want very much oil in it at all. Just a little bit. Thats probably uh three or four tablespoons right there. Im gonna kinda do it around a little and then uh come right here and Ill show you the meat. Alright, what Ive done is I cut all the meat up. See? Its a little strip. Thats the whole roast except for those few little fat and things I cut off of it and Ive got this back here in this little boiler. Im gonna boil it because there were some um good meat left on it and so what Im gonna do is Im gonna boil that for the broth uh just for my I dont know what Im gonna do with it but Ill probably drink the broth but Ill let it sit in the refrigerator overnight and then skim all that fat off of it from that roast and then Ill just have that good broth left. You can make a little soup or whatever you wanna do. So, Im gonna wait just a minute. Let this grease get hot. Okay, my grease is really hot. So, what youre gonna do? Since I have got a bunch of meat. Let me put it on the plate where we can get over here and work with this. Let me just put it on this plate. Ill have to scrub my chopping block a little bit. Alright, this is this is the roast. This is how much meat weve got. So, what I wanna do now, see how its really hot. I will just put uh maybe a fourth of it in this meat. I mean, I dont wanna put too much. Alright, thats all on my foot. Im gonna brown it on that side. Flip it over the side machine and brown it on the other. Then, Im gonna put it in this bowl. I dont wanna stir it a lot because I dont want the juice because the meat coming out. And brown it on that side. I hope my fire alarm didnt go off. It has before. Dont fall in over. Alright, now Im gonna flip it over to the other side. Ive got it on fire and the reason they have, you know, if you fry these real slow, you lose your juices that are in it. Its its corned in beef to fry it fast. If youre gonna fry something, or sear something, do it quickly and be done with it. Trying to see if its brown yet. You just dont wanna stir it much. I know youll be tempted to do this but dont. Dont Just get it real brown on one side and just flip it to the other side. If the fire alarm goes off, Ill run back there at the hall and stop it and then Ill come right back, okay? Anyway, Im enjoying the new and I got a lot of new ones lately. I certainly have. I just got many new ones. Its its great. Let me fry this up. Okay, our meat is brown and Im gonna see, I want you to see how it looks. See how brown it is? And Im gonna put it in our bowl, okay? And I am now gonna put on another handful of it. I still got it on high. I will just take another handful and spread it around in there. I think Im gonna do this with three cookies. So, Im gonna let this brown a while, okay? Okay, this has gotten brown on one side. So, Im gonna stir it on to the other side and let it be brown and then we got one more cooking to go. Alright, the second cooking is brown. Put it over there. Itll almost have its like its a burnt look but thats okay. Cuz its not burned. So, here goes the last little bit, okay? Okay? Now, thats on fry and what were gonna do after that is um let me turn you this way a little bit. Okay, weve got three big onions and Ive cut that into huge except for this last one right here. And Im gonna show you how I do it. II cut clean my onion. I cut them in half like that. Then I take this half. Its right here. And I just cut down like that. Try to keep it together a little bit. Then I pick it up like that. Push it all the way together and cut it this way and when you do, look at those little kind of cubes youve got. Now, were gonna fry this in that same skillet that were frying all that over in it. I love this stuff. My mama used to make uh beef stroganoff all the time and we loved it. Now, what we do is we eat ours on a bed of rice. You just put your rice on your plate and then youre gonna put all this on top of it and maybe fix the garlic bread or um something like that and then something green. Um Im not sure what Im gonna fix with mine. I bought green beans and I may do that. But I also bought some turnip greens which I dont think would be good with that. So, I probably just do the green beans with it. You could do a little salad if you wanted to. And I want to tell yall the other day when I did those uh fried dumplings and Im calling them fried dumplings down south. There was so many other names for it. Im gonna get that list. I wrote them all down and Im gonna share it with yall. Uh it was really something. The what yall call them. From all over the country. Okay, heres our last skillet. And theyre good and brown. See? Alright, well put these in. This is gonna make a huge pot. So, youve got an eleven-dollar roast in there and Im gonna feed six people tomorrow and no telling how much to be left over. Alright, you got all these brown stuff down in this skillet right here. You probably cant see it but I call that goody. Somebody else told me the name of it. Anyway, now Im gonna put this onions in it. This is three big onions. Im gonna stir them around in there. Im gonna turn it down just a little bit. And thats gonna go in there too. And then well be ready to uh add some other stuff which Im gonna show yall what were gonna add in just a minute, okay? Alright. Now, Im gonna stir that around in here and all that good stuff on the bottom is coming up on my onions if you can see that. You see that coming up on it? That good brown. So, what we wanna do is get this just kinda tender. They dont have to be real tender but youve got to get them cooked in there. This cleans out the skillet for you. Its gonna be so good yall. Its gonna be good yall. It is. Alright, Im gonna let that cook just a little bit. Im gonna tell you what else is going in here. You want to get you uh well, Im gonna put in three cans of mushroom soup but you may want to put in two or four. Its a quarter on how big your roast is and I didnt tell you how many pounds mine was. I dont even know but you saw about how big it was and you put this in here. So, Im gonna do that. Weve already put two cans in there and heres the last one, cream of mushroom soup and you just put it in your pot. Like this. And then Im going to put one can of water because Im gonna let it cook now an hour or two out of a long time. So, Im gonna put one can of water. This is just a can of water. Stir it up. Mix all that soup with all that good meat. Like this Okay, my onions are about ready to put in there and I may have to add a little bit more water. I dont know. Your gravy is supposed to be a little on the thick side but for it to simmer for a while, you may have to add. I think Im gonna add one more cup. I mean, one more can of water. Because its gonna cook down some. Alright, stir that around. Think our onions are about ready to go in there. They look like it. Now, when you see these onions, youre gonna think, well, miss Brenda burns the onions. Well, I did not. All that brown thats on there. That is from um the bottom of the pan. I think the people that rode in the other day until I always called it goody and I think they called it fond or I think it was FONE or something like that. Yall have to write again and tell me what you call it. Drippings or or whatever. I dont know what its called. I just know what I call it in the south and its and its goody in the south. Alright, so Im gonna take this and Im gonna pour the all these good onions into my big pot. And see my skillet. Its not gonna be hard to clean it all. Cuz all that good stuffs in there. Let me move it over here to the sink. Okay. Now, Im gonna kinda mix that in a little bit right here. Yall can see that. My word. Alright. Now, were gonna put in uh your Worcestershire salts. If I can get it open. Oh, here its got a clock top on it. Let me see here. There we go. Oh, I think Ill get out of measuring spoon cuz yall always like to see how much and I never do measures so but Ill measure for yall. Lets start with a tablespoon, okay? This makes it taste real good. Were gonna put in Worcestershire salts and garlic powder. Now, folks, if yall have some of the real garlic, the little garlic cloves, to be that would be even be better. That didnt look like enough. Im gonna put in another one. Okay, there we go. Now, lets put in some garlic powder. I think Ill use uh tablespoon of that. That was two tablespoons of Worcestershire. Now, Im gonna put in one tablespoon of garlic powder. And then Ill taste it after a while. Okay, now heres what were gonna do. Im gonna let this simmer cook. Okay, Im gonna put it back on this side. Im gonna have it real low and Im gonna let this simmer for an hour or two til that meat is good and tender and its bubbly and hot and then, Im gonna um put it in the refrigerator. For tomorrow and then Ill make my rice tomorrow but anyway, what I was gonna tell you is right before you serve it, let me show you what goes in. You in the morning, Im gonna get this hot again and get it nice and bubbly hot and then Im going to put in this whole pint of sour cream in this mixture. And then Im gonna let it get really pipe and hot and good and then, its ready. And were gonna put in it over rice and then serve whatever else you want to with it and its gonna be absolutely delicious. Ill try to remember in the morning when I get up to show you how the finished product looks, okay? But today, Im just doing this part. Yall have a great day. Ill talk to you tomorrow. Buh bye. Good Sunday morning, yall. I told you Id get back on here this morning after we let our pot of Stroganoff sit all night and um in the fridge, you get good and um marinated up. You can eat it right when you make it but I wanna save mine til Sunday and I was so busy today that um I wanted to be able to make a little stuff ahead of time. So, Ive our Stroganoff um kinda sort of hot right here uh in the pot and I want you to come over here and look at it. Look at that. See that good tender meat in there? Look at that. It is so good and uh what I did is I cooked it. Yall wanna know how long I cooked it. I cooked it uh a little bit over an hour yesterday just simmering in this pot and so now, what you do, Im gonna leave it low and Im going to put in this whole pint. You know, I told you I was gonna put a whole pint of sour cream in there and yall this makes it. I mean, it makes it. So, Im gonna gently put this in and Im gonna stir it around and Im gonna leave it on low til its time to eat it. This is some good, thick sour cream. Get every little bit out of it too. Im telling you. This makes it so good. Now, Im gonna just kinda stir that in or fold it in. Its gonna make your gravy look a little bit lighter and its gonna be good over rice. So, what Ive got going here in the back pot over here right here is Ive got me uh half a pot of water. Fix it to boil it and Imma put some salt in it. And Im going to put a cup of rice. Now, this of course I did uh a heaping cook and uh though were gonna eat this today. This will swell up and and be plenty for today and then uh if I have some beef stroganoff left over, I can fix some more rice later. Alright, come over here and look at how creamy this looks now. See, this is a different color now. Its got the this lighter gravy in there, okay? Something I didnt not do today um but you can do it. It is real good in it. If you can get you a whole pack of uh some good mushrooms and just uh put that whole pack of fresh mushrooms in here or you could use the canned mushrooms. And it would make your uh straw it off even richer. Okay, now that come over here to this side and Im gonna show you what else Im cooking. You know, I tell you, we wanna do something green. Well, Im doing use green beans right here and so what Ive done with the green beans is when I open my can and yall I bought a gallon can of green beans and this is too much for us to eat this gallon can but I will say this, they theyre good leftover. You can make uh uh a green bean casserole out of whatevers left or just put cheese on top or you just eat plain. But its a lot cheaper to buy the gallon cans than it is two or three little cans. So, this is what you need to do and always look your green beans over good because sometimes youll have a uh a little steam em that might have accidentally gotten in there. So, you wanna make sure you get those out and Ive salted it and I put one um tablespoon of um bacon grease in there. Now, these are chopped onions. My granddaughter Isabella came a few weeks ago and she got up on her chair and straightened all my spices out and I had two or three jars of onions. So, she just put them all in one thing and label it for me. Wouldnt that sweet? Thanks, Isabella but anyway, Im gonna put a few onions in there. Maybe a tablespoon or two. Yall this makes it so good. That gives it a nice little flavor. If you put you just some little dried onion flakes in it and a little bacon grease and a little salt and Im gonna turn this on and let it cook. Alright, our waters boiling over here for our rice. Yall can see that and Im gonna put in the cup of rice and Im gonna put in a little salt. Im gonna let it come to a boil and then Im gonna turn it down real low. And so uh and Im gonna put also put a top on it. Do it like that. Let it come to a boil and then Im gonna put a top on it and let it just kinda simmer and it will just puff up so big and pretty and everything. So, today is Sunday. Am letzten Wochenende hatten wir die Möglichkeit legal in die Schutzräume eines ehemaligen Großbetriebes in Magdeburg abzutauchen und uns dort eine vollständig erhaltene Telefonzentrale anzusehen. Es war spannend als der Eigentümer das dicke Schlüsselbund raus holte, die Tür nach Jahren das erste mal öffnete, wir uns durch die dicken Spinnweben kämpften..... ;-) Im 2. Weltkrieg wurden die Keller des Betriebes zu Luftschutz- und Splitterschutzräumen umgebaut, zu Zeiten der DDR blieb der Charakter weitestgehend erhalten. Hier die ersten Bilder.....
