This Indian summer has made our Autumn veg grow very well. The brassicas were planted under fleece at the begining of August and have escaped the ravages of cabbage white butterflies. We have been cutting Red Russian Kale and lettuce for several weeks already. Late planted runner and dwarf French beans are still harvesting heavily and are just as delicate as mid summer crops. Were very excited to announce that Salt Lake City is now home to one of the most advanced #recycling centers in the country! The new Materials Recovery Facility (MRF) was built and is operated by @wastemanagement. Its where all of Salt Lake City’s residential recycling is sorted before the material goes on to its final destination to turn into new goods. It’s a single-stream operation and sorts empty plastic bottles and containers, metal cans, cardboard, paper, and newspaper. The facility is outfitted with the latest recycling technology and equipment. This matters because consumer material continues to change at a rapid pace and the sheer quantity of recyclable material being processed has also gone up dramatically– and will only continue to grow. So we need facilities that can keep up, especially with the inundation of “contamination” in recycling bins (these are items that aren’t recyclable in the blue bin, but can overwhelm these facilities – like plastic bags, the many types of new-fangled packaging, Styrofoam, as well as things that obviously shouldn’t go in there like hoses, bowling balls, food, clothing, trash etc. See our Stories for a glimpse.) What’s different at this MRF, you might ask? A good analogy is that it’s like going from the Flintstones with the old recycling technology to the Jetsons with the new technology . . . overnight. The facility is comprised of a network of machinery equipped with advanced automation capabilities and sorting optics. Rotating fiber screens, ballistic motion separators, 2D and 3D optical sorters, and barrel magnets are among technologies used to separate materials. More than 2.5 miles of fast-moving conveyor belts carry materials through this single-stream processing facility. The MRF has been operating for a month now and the improvements in recovery quantities and end-product quality are astounding. It’s also helping the City with fuel and time savings. Due to its closer location in SLC, we’ve been able to cut 1.5 hours from each of our recycling truck’s daily drives. Weve spent a lot of time with the Allium Family this week! Weve been sorting and packing over 400 Garlic Orders, Grading and Cleaning 1500 shallots, and harvesting more than 3,000 lbs of onions so far! If youre like us, youre kind of into this plant family. It brings us garlic, shallots, onions, and awesomness! Flavors for all dishes and aromas that envelope the kitchen. As we transition into Fall, our allium offerings will transition as well. Sweet Onions and White Onions are winding down. Whats in the market is all thats left for 2020. Red Onions and Yellow Onions are just coming in. We intend to have ample supply through Thanksgiving at least. Shallots are looking great, but we didnt grow enough. Theyll store for months, but our supply will run out before Thanksgiving. Garlic supplies are vanishing. It sounds crazy. We know. Every year we wonder what well do with all this garlic. And lately, we keep wondering why we dont have enough! The garlic in the market is all thats left for 2020. Feel free to stock up now. When we run out, we run out. Black Garlic demand this year has been unprecedented. Were doing our best to stock up, but well be lucky to get through the Holiday Season with any left. Our goal was to have enough to get to next June. Now were unsure if well have enough to get to 2021! Fear not! Were doubling our garlic acreage this fall to grow more than 30,000 bulbs for 2021. Today, we closed the gardens for the winter. We cleaned out and gleaned from our p-patch gardens and our SAGE garden at our Greenwood Senior Center. August is a big topic of discussion around these parts. How to cope with the cumulative effects of working in heat and humidity, alongside the added push of getting fall plants in the ground. How to still have the energy at the end of it to dive into the long fall and the season of making big decisions for the future. And, if you’re a year-round farm like us, how to keep at it right on through the winter. Our first step has been to not pack CSA boxes during the month of August. Someone recently asked how we leave the farm for a month in the middle of the season and manage to have vegetables for everyone first thing when we return. The answer is we don’t actually take the month of August off. Our hope is to simply make August a bit more reasonable. Since we’re not packing CSA shares, we can focus on bed prep, seeding, and transplanting. With summers getting hotter and longer, we think seriously about what it would take to have an even longer pause in the summer CSA calendar. Because that’s what it would take to actually get a real break. But then what would we do about the tomatoes and the peppers and the okra? We love being a four season farm but how do you get the farm to slow down enough to fit in actual breaks. Perennial wheat breeder Shuwen Wang is handed a bag of the harvested grain by combine driver Adam Gorrell. The plot combine harvests small sections of perennial wheat in a breeding nursery, and the grain, kept separate, is bagged for lab analysis, which will inform future breeding efforts. In 2018, we developed five stable lines of a new type of perennial wheat which could live for years in the field. Seeds are now being propagated for worldwide evaluation. Twenty of the most promising crosses are being grown in nine different countries to see how particular genetic types vary in performance when grown under a broad range of environmental conditions. In honor of our last day of this crazy 2020 blueberry season, I thought I’d throw it back to day one ❤️ Feb 26, 2018- our first official day of U-Pick. (Look at how small the blueberry plants are in the background!) I can still remember at the end of that day exactly how I felt. The funny thing is- I’m feeling pretty similar today- it’s a the very best mixture of exhaustion and gratitude and a little bit of disbelief. When the world started to go a little crazy, we were only a couple of weeks into blueberry season, and we weren’t sure how or if we’d be able to open again. Figuring out how to operate under a global pandemic was a little bit of a challenge- but when we gave it a try, we were met with an absolute tidal wave of support, patience (📣shout out to all you SUPERSTARS who waited 3 HOURS that first day! Y’all are our heroes!) and kindness. It was unbelievable. So we decided to give it another try- and you showed up again. Thankfully we figured out some ways to keep the line moving a little faster 🤣 We have the best family friends and customers in entire World! Thank you *again* from the very bottom of our hearts for coming out to support us this season. 2020 will be a season to remember for sure, but we are looking forward to getting back to our normal u-pick fun in 2021! . . . We’ve been picking hops all week, waiting in between while they spend some time in our drier. Our brewer Scott is excited about this years hop yield. He has been out in the field working with our team to make sure our beers get only the best hops. We even had our bartender/server Nate out in the field picking hops! When we say your beer is farm to glass, we take that seriously. #Buckwheat for @Hodmedods coming in... Doesn’t deserve to say it’s “coming in nicely” this year though. Unfortunately the crop is very green. You can see from the third picture just how much seed has been knocked to the ground by the heavy rain we had a few weeks back. Just not an ideal year... At least we have some nice hot weather for the coming few days. This crop will go on one of my ambient blowing floors, max 70cm deep, and be blown overnight tonight and then every day with the hot sun until it drys down to a safe moisture level. Won’t be cheap this year with quite this level of green! There is a double necessity to get this crop off the field though. It is about to be planted with an herbal ley mix, and be adopted into #organic conversion. So the sooner that ley is established, the better! A week and a half ago we loaded up a truck with all our chocolate machines and away they went to our soon to be new factory in Charleston, UT.⠀ ⠀ We’ve been building to this point for the last 6 months but today brought on the emotions. New beginnings are here but it’s always a little tough to say goodbye to the old. This 2,500 sq ft space on Iron Horse drive has done us proud for 5 years. It’s been our chocolate factory home with so much growth and support along the way. Its moments like these that really make you pause for thought on how far we’ve come and the lessons learned.⠀ ⠀ I’m so incredibly excited for our next step in our chocolate journey but I think I’ll always kinda miss our little space in PC that was a dream we reached for back in Denver that we brought to life. This is my grandpa. He’s 96, still works on the family farm, and is one of my favourite people on the planet. For the past few years I have been documenting his fascinating life. I’m still not sure yet what will come of the hundreds of photos taken but I’m just grateful to have them and will cherish all the one on one time I’ve spent with him over the years. So with all that said I’m so pumped that this day has finally arrived. We are heading back to Saskatchewan to the farm for a project I have dreamed of for years that involves my grandpa + the talent of our friends @hellotmrw. I started working for my family grape growing business @warneckeranch in 2010, then bought some fruit in 2012 and started selling SUTRO volcanic wine in 2015. Meanwhile, I lured my then boyfriend Eliot Sutro out of SF and up north, got married in 2013, gave birth to Isabel at home in 2014 and gave birth to Adin at home in 2016.
