It has a savory but mild taste. While the denomination Emmentaler Switzerland is protected, Emmentaler alone is not; similar cheeses of other origins, especially from France, Bavaria and Finland, are widely available and sold by that name. Emmental was first written down in records in 1293, but first called by its name in 1542. ⭐𝐇𝐎𝐖 𝐈𝐓𝐒 𝐏𝐑𝐎𝐃𝐔𝐂𝐄𝐃??? This cheese is produced in the central cantons of Switzerland. It is a traditional, unpasteurised, hard cheese made from cows milk. Its hard, thin rind is covered by paper with producers name on it. The aroma is sweet with tones of fresh-cut hay. По мере взбивания масло «поймает в ловушку» все ароматы, и вкус готового крема покажется вам гораздо ярче. 🔸 При замешивании теста для кексов методом «взбивания масла» начните взбивать масло, добавив в него ароматические компоненты. Поверьте, такой кекс будет более ароматным, чем тот, в котором специи будут смешаны с мукой и добавлены в последнюю очередь. 🔸 Если в любое тесто предполагается введение растопленного сливочного масла, смешайте его со специями, пряностями или ароматическими травами и только после этого начните растапливать. Остудите до комнатной температуры и используйте, процедив при необходимости. 🔸 Масляный соус типа голландского тоже можно ароматизировать на этапе растапливания сливочного масла. 🔸 Начните приготовление практически любого жареного блюда с прогревания в сливочном масле веточек тимьяна или розмарина и тонко нарезанного или раздавленного зубчика чеснока. Le Saint-Nectaire est un fromage au lait cru, thermisé ou pasteurisé de vache à croûte fleurie ou à croûte lavée. Cest aussi la 3ème AOP fromagère de France en termes de volume de vente, ainsi que la 1ère AOP fermière d’Europe. Il se présente sous la forme d’un cylindre de 20 à 24 cm de diamètre, de 3,5 à 5,5 cm de hauteur et dont le poids est compris entre 1,450 kg et 1,950 kg. Affinage 28 jours minimum après entrée en cave. Le Saint-Nectaire peut également être fabriqué dans un format réduit de 12 à 14 cm de diamètre, 3,5 à 4,5 cm de hauteur et dont le poids est compris entre 0,500 kg et 0,700 kg. Affinage 21 jours minimum après entrée en cave. La pâte est onctueuse et souple et de couleur ivoire. Le goût est franc, doux, légèrement salé, avec des saveurs lactiques variées (crème, beurre,...) et des arômes d’ambiance d’affinage (cave, paille d’affinage, terre ou sous-bois), le tout souvent relevé d’une subtile tonalité de noisette. En effet, il convenait à la fois aux fermes possédant des troupeaux de petite taille, ainsi qu’aux plus grandes exploitations cherchant à valoriser leur production laitière hivernale relativement limitée alors que leur production d’été, plus abondante, était destinée à la fabrication de « Fourme de Cantal ». Today, whilst admiring how fast one of our paddocks is growing for this time of the year, we spied in the distance several fluffy white babies……..further inspection revealed 5 ewe’s, each with twins! 🐑 Cheeky possums took it upon themselves to find a paddock all on their own in which to deliver their babes. And a fine job they did!……. 🐑 So slowly, ever so slowly, we walked the mamma’s and their babes back to the safety of the house paddocks. They are now happily settled into the mums and bubs paddock…… 🐑 And from happy sheep, comes the loveliest of cheese!……we have just released our August cheese box, pictured here. 🔹Day- 02 🔹Type - Brie Made from unpasteurized cows milk. Country of origin: France. Region: Seine-et-Marne. Family: Brie. Type: soft, artisan, soft-ripened Fat content: 8.4 g/100g. Texture: buttery, runny and soft-ripened. Rind: bloomy. Colour: cream. Flavour: fruity, mild, nutty, tangy. Aroma: pronounced, strong. Vegetarian: no. Brie is the best known French cheese and has a nickname The Queen of Cheeses. Brie is a soft cheese named after the French region Brie, where it was originally created. Several hundred years ago, Brie was one of the tributes which had to be paid to the French kings. In France, Brie is very different from the cheese exported to the United States. Real French Brie is unstabilized and the flavour is complex when the surface turns slightly brown. When the cheese is still pure-white, it is not matured. If the cheese is cut before the maturing process, it will never develop properly. Exported Brie, however, is stabilized and never matures. Stabilized Brie has a much longer shelf life and is not susceptible to bacteriological infections. Brie is produced from the whole or semi-skimmed cows milk. Rennet is added into raw milk and heated to a temperature of 37°C to obtain the curd. The cheese is then cast into moulds, several layers of cheese are filled into the mould and then kept for around 18 hours. After this, the cheese is salted and aged for a minimum of four weeks. Brie cheese is slightly pale in colour with a greyish tinge under a rind. Its flavour varies depending upon the ingredients added while producing the cheese. Hat sich wohl auch die @migros gedacht und gleich drei neue Alternativen aus Lupinen entwickelt (vorerst leider nur in der Region Zürich und Luzern). 😎👌Wir fanden sie alle drei besser als den bisherigen Genuss am Stück, der bei den restlichen Milchprodukten zu finden ist. Der Geschmacksvolle ist am härtesten und gefiel uns deshalb besonders gut. Die anderen beiden lenkten dafür mit Pfeffer beziehungsweise Paprika gekonnt vom leider immer noch vorhandenen alternativen Käsegout ab. 😅 Ebenfalls neu: Raclette Alternative The Melty. Schmilzt nice, mit verschiedenen Raclette Zutaten bestimmt eine nette Alternative (klebt aber sehr an den Zähnen 😝). Mit Raclettegeschmack aber nicht vergleichbar. Il gorgonzola è oggi prodotto nelle province di Bergamo, Brescia, Biella, Como, Cremona, Cuneo, Lecco, Lodi, Milano, Monza-Brianza, Novara, Pavia, Varese, Verbania, Vercelli ed alcuni comuni dellAlessandrino. Il formaggio #gorgonzola DOP per essere definito come tale, deve rispettare il disciplinare di produzione; lo stesso prevede che per la sua produzione si utilizzi unicamente latte vaccino pastorizzato, quindi lutilizzo di latte di pecora o capra o bufala non è consentito. È un formaggio a pasta cruda, a latte pastorizzato, grasso, di colore bianco paglierino, le cui screziature verdi sono dovute al processo di erborinatura, cioè alla formazione di muffe dovute allaggiunta di spore di penicillium al latte (per lo più colture selezionate a livello industriale). La crosta non è edibile.
