We close this chapter during uncertain times across the entire music industry but, make no mistake… The story of Chameleon Club is far from over. Since 1985 we have provided Central Pennsylvania with the best in live music. Countless national touring artists that would typically skip over a town the size of Lancaster have graced our historic stage. Additionally, local artists and bands have been a priority throughout our history; We have had the privilege to witness the rising careers of many artists from Lancaster and the surrounding area. We undoubtedly plan to keep that proud and storied tradition alive and well in Central Pennsylvania. Everyone that has passed through these doors has a story. Bands have started, friendships have strengthened, engagements were made, careers were established throughout this building. Everyone at the Chameleon is thankful and indebted to the fierce loyalty our patrons and friends have shown to this very special independent music venue. While we may be tearing up writing this and, believe me - it was hard removing the iconic “Chameleon” sign behind the main stage – We are looking forward to the future in our new location. Hong Kong 🇭🇰 Neon Lights I - no I’m not in Hong Kong at the Moment. I haven’t been traveling since early February and I miss it dearly. I miss my trips, my photography when I’m not at home. My feed has become so mono thematic and while it has grown my account, it taught me a lot of new lessons as well. Still, it’s not what I had intended for my feed. Tokyo is a city that is known for its fashion, and I would most definitely make a stop in Harajuku to check out its street style. I am sure it is epic! I also am very interested in checking out the Shimo-Kitazawa area, which is known for its vintage shops, vinyl, quirky shops, and restaurants. I always try to buy a vintage scarf wherever I travel as a unique souvenir, I’m sure I could find that and much more here. ⠀ ⠀ And we can’t visit Tokyo without eating all the food ... I don’t know about you, but when I travel, I am all about trying out all the different cuisines. I am definitely so excited to try all the sushi, and my husband Nate has been dreaming about trying authentic Japanese ramen. I hear that Chūka Soba Benten is a must try spot that has become legendary for serious ramen fans, which my husband definitely is! I would definitely love to check out Sushi Dai, it is apparently one of the most popular sushi restaurants in Tokyo because you can enjoy traditional, high-end sushi at a mid-price range. Nothing beats a bowl of Korean Naengmyeon (cold noodles) to beat the heat outside. Pictured is the Bibim Naengmyeon (Spicy Mixed Cold Noodles) with Meat Patties Combo at Jonga on @northroadbia. I had studied abroad in Seoul back in Summer 2016 and became addicted to the texture of the noodles and the “yuksu”, or beef broth, that was paired with it. Pictured above is new outdoor seating being painted and built a couple of weeks ago. Restaurants have been trying their best and adapting to current times, by creating outdoor seating under the city’s Open Streets Initiative. The reality is that business isn’t the same, and Chinatown simply does not have the space to just recoup their losses from the few seating provided with outside dining. I passed by Nam Son, a Vietnamese restaurant on Grand St, and it literally had only one table for two outside their restaurant. Now imagine the dim sum restaurants that use to serve at least a hundred people. But on a more positive note, the outdoor seating has helped bring life back to Chinatown, along with more community collaboration. Meet the inspiration behind Send Chinatown Love! 🥟: 88 Lanzhou 📍: Chinatown, NY. Since 2017, the hand-pulled noodles and crispy dumplings at 88 Lanzhou have been well loved by New Yorkers everywhere. One of those loyal fans was our founder, @justintmckibben. Experiencing 88 Lanzhous closure early this year actually sparked the inspiration that gave birth to Send Chinatown Love. When 88 Lanzhou announced they might be permanently closing, we knew we had to reach out. Owner Zhang immigrated to the States in order to provide stability for his children. In their first year, they nearly closed the restaurant for good, but the outcry from the community encouraged him to reopen the business. Even when they expanded, they remained true to the restaurant’s authentic, no-frills nature. With the pandemic, this stability was again threatened. Not only for their family but their family of employees too. Another one in the books, and another new set of obstacles and challenges that myself and everyone working this had to navigate. This event was the most fun for myself so far. Being that close to you eating, being able to have (limited) conversations inbetween plating and shaking noodles was something I’ve been looking forward to since I’ve started holding these pop ups. ⠀ First, and foremost, thank you to Keizo Shimamoto (@goramen) for being the most important constant in this ramen world. Endless help with producing noodles, teaching me to operate the machines... questions about tare, oils, which products to order over others. You name it, he’s been a guiding hand. He casts a wide net, and you can find his direct influence all over the country at this point.⠀ ⠀ Everyone who was working that day can attest to the fact that if Brandon (@dipsdipspvd) hadn’t showed up in the 11th hour, bursting with energy and a willingness to give up his seated reservation to help, that we’d have been screwed. ⠀ ⠀ Nes (@nesneversmiles) as always was there to keep me chugging along. Stop for 10 seconds to try and reset and I’d hear “dropping 4 noodles. 3 shoyu 1 shio.” He’s the one who kept your wait times down. If he wasn’t there keeping it moving I’d be at The Tailor Shop still, moving chashu around a bowl trying to get it in the right place. ⠀ ⠀ Spencer and Cheylsea (@bage_roner & @cheyfed) crushed the bar and front of house. Spencer’s mirin spritz was absolutely delicious, and I’m craving one right now. Thanks so much you two. These few days abit gian Hokkien Mee and just nice a bro here intro me to this stall at geylang. He tell me he play geylang so long, inside out he know where is the best chicken house, cheapest chiong cigarette and of course the best hokkien mee. This stall operating for many many years and they still using charcoal. As we all know, charocal cook things, the taste is up 10 level one. Actually the whole kopitiam smell of the hokkien mee. I duno other stalls how. Imagine u order chicken rice and u eat but smell hokkien mee. Order hor fun and eat but smell hokkien mee and even drink teh o ping also smell hokkien mee. Die die means must order 1 plate if not sorry to ownself liao. Ordered their big Hokkien Mee. Damage abit high at $15 but the portion power. See the 5 big prawns already enough to make limpeh steam liao. The moment i mixed the noodles with the chilli, the torrent of wok hei fragrance hit my nostrils from left, right and centre. Every strain of noodle can see abit chao ta. That is the touch of wok hei. And the prawn broth with pork lard already seeped into every inch of the noodle to the point that even 1 noodle strain the flavour already win some other stalls 1 whole plate of noodle gao gao. Not too dry and not too wet and the charcoal slow heat definitely seals the flavour better and give it some grill hei also. Prawns are big, juicy and fresh. Most importantly is not overcooked and is still crunchy and sweet. At first I thought will jerlat but actually wont if mixed the chili and lime. Highly recommended if you are a hokkien mee fan.
