Another day, another noodle bowl 🍜 Yesterday’s lunch was so good that I couldn’t help but make another bowl of noodles today! Hoisin glazed @gardein beefless tips with sautéed garlic and shallots in @miyokoscreamery oat milk butter 🧈 Then I made a creamy ramen with a little unsweetened coconut milk 🥥, tomato sauce 🥫 and extra spicy gochujang Chile paste concentrate then topped it all off with some fresh lime juice, sesame seeds, red pepper flakes, and cilantro! 😍 So delicious and whipped it up in less than 15 minutes. How does stress impact the skin physiologically? Psychological stress and skin are closely linked, I often say to my patients ‘stress causes skin disease and skin disease causes stress’. The brain has a stress-activated pathway that causes release of various chemicals and hormones that drive inflammation both in the body and the skin. Feelings of emotional distress lead to the release of a stress hormone (cortisol), which is known to affect the immune system (making the skin less able to defend itself), drive allergic responses, delay healing and disrupt the skin’s natural barrier. The effects seen on the skin can vary, including feeling red, dry and itchy, as well as the formation of lines, wrinkles, pigmentation, signs of premature aging and dull skin. Short-term stress (e.g. feeling anxious before a presentation/exam) can cause temporary problems like flushing, itching and sweating. STICKY SESAME CRISPY TOFU 😍 . Follow us veganfoods_healthy for daily vegan recipes . Recipe: . Ingredients: Crispy tofu: 1 package Extra firm tofu 1/4 cup corn starch Sesame sticky Sauce: 1 teaspoon avocado oil 2 garlic cloves minced 2 tbsp organic brown sugar or coconut sugar 2 tsp rice vinegar 1/4 cup + 2 tbsp Tamari or soy sauce 1/4 cup organic ketchup 1 tsp toasted sesame oil 2 tbsp sesame seeds Other ingredients: sliced green onions for garnish White or brown rice to serve Method: 1.Remove tofu from package and wrap in a couple paper towels gently pressing on tofu to release a bit of the moisture. Cut tofu into cubes then roll each tofu cube in corn starch making sure each side is coasted. 2.Bring a hot skilled to medium heat and add enough avocado oil to cover the bottom of the pan. Once hot, add cubed tofu and cook on each side until golden & crispy. Season with salt and once removed from pan place on a plate lined with paper towel. 3. In a bowl combine all sauce ingredients (except garlic & avo oil) mix to combine. Heat 1 tbsp of oil in a large pan over medium heat. Add the minced garlic and cook for 30 seconds. Add the sauce mixture and bring to a simmer. Cook for 3-4 minutes or until just thickened. 4. Add the crispy tofu to the pan and toss to coat with the sauce. Oh-lala, vegan Shakshuka! Een heerlijk Oosters eenpansgerecht, met héél veel kruiden en boterbonen. Super romig en voedzaam. Hoe maak je het?↓ Ingrediënten (2 personen) . 1 ui, fijn gesneden . 2 tenen knoflook, geperst . 1 blik gepelde tomaten . 1 blik boterbonen . 1 blik artisjok . 200 gram spinazie . C.a. 10 zongedroogde tomaten . 1 tl korianderpoeder  . 1 tl gemalen komijnzaad . Om te serveren: (glutenvrij)stokbrood of een graansoort naar keuze Bereidingswijze (20 minuten) . Snijd de ui en pel de knoflook. Zet een koekenpan op het vuur en bak hierin de ui aan. Pers de knoflook uit en bak even mee. . Laat de bonen en artisjok ondertussen uitlekken in een vergiet en voeg deze vervolgens samen met het korianderpoeder en komijnzaad toe aan de ui en knoflook. . Bak ongeveer 3 minuten en voeg vervolgens de zongedroogde tomaten en het blik gepelde tomaten toe. . Tot slot voeg je de spinazie in delen toe totdat alle spinazie is geslonken. See the full recipe below 👇⁠ ⁠ Serves: 4⁠ ⁠ Prep time: 10 mins⁠ ⁠ Cook time: 40 mins⁠ ⁠ Ingredients: ⁠ ⁠ • 1kg free-range chicken wings, jointed and wing tips removed⁠ • 120g self-raising flour⁠ • 2 Tbsp baking powder⁠ • Egg fried rice⁠ • Cucumber ⁠ ⁠ Marinate⁠ ⁠ • 3 long red chillies, sliced into rings⁠ • 2 Tbsp rice vinegar⁠ • A pinch of sugar⁠ • A large pinch of salt⁠ ⁠ Sauce Mix:⁠ • 120g Lee Kum Kee Sweet Hoisin Sauce⁠ • 2 Tbsp tomato puree⁠ • 80g unsalted butter⁠ • 2 cloves garlic, peeled & minced⁠ • 1.5 Tbsp rice vinegar⁠ ⁠ Method:⁠ 1. Preheat the oven to 230°C / 210°C fan / gas mark 8.⁠ 2. Mix the chillies with 2 Tbsp vinegar, sugar and salt. ⁠ 3. Add the flour and baking powder to a large bowl, add the chicken wings and toss well until coated.⁠ 4. Place the chicken wings on a baking tray lined with baking paper, leaving a space between each. Bake for 20 minutes, then turn the pieces over and bake for another 20 minutes.⁠ 5. Meanwhile, add all sauce mix to a saucepan. Place on a medium heat and stir every 30 seconds until the butter has fully melted and incorporated into the sauce. Bubble gently for 4 minutes, stirring frequently. Remove from the heat and set aside.⁠ 6. When the wings are ready, place them into a large mixing bowl. Add the sauce incrementally, tossing the wings in between, until they are glossy and glazed. How about a flavourful, tangy and creamy Thai green curry as a gorgeously cozy weeknight meal idea? 🌱 Happy Monday! Anyone else get excited for the week ahead? Like every Monday is a new start/beginning full of endless possibilities! Honestly I start my week off with so many plans and then I blink and the week is over 😅 Curry is pretty much a go to weeknight meal in our house, because we can use up random veg or protein in the house, it takes 15 minutes and it’s DELISH. Rich and I do tend to get a little greedy using both tofu AND prawns 🙈 what can I say? We are hungry people 😅 Thai Green Curry with Lemongrass Rice ——————————————————— RICE -1 cup white rice -1 1/2 cups water -1 pinch salt -3 dried lemongrass stalks CURRY -150 g prawns OR 1 pack extra firm tofu (cubed) -1 tbsp sesame oil -3 kefir lime leaves -2 stalks dried lemon grass -2 cloves garlic, minced -1 thumb ginger, grated -1 chilli, minced -2 tbsp fresh coriander, finely chopped -1 cup sliced chestnut mushrooms (or other veg) -OPTION: 3 tbsp Thai green curry paste OR double these ingredients to make your own flavourful paste (lemongrass, kefir, ginger, garlic, Chili, coriander) -1 can full fat coconut milk -200 g spinach -lime and spring onion to garnish 1. Rice the rice with lukewarm water 3-4 times. Drain and add the allocated water to boil. Season with salt and add the lemongrass stalks. Bring to a boil and reduce heat to a simmer for 15 minutes. 2. If using prawns, heat in a pan until fully pink and cooked. Set aside. (If using tofu, skip this step) 3. Using the same pan (unwashed- this is to give that ‘fish sauce’ depth of flavour) heat sesame oil with the kefir lime leaves and lemongrass for about a minute. Than add garlic, ginger, and chilli to the pan (if not using a store bought paste, add double these ingredients). Allow to cook until fragrant and add your veg- I used chestnut mushrooms. Cook until softened and add the coriander, doubling the coriander amount if not using a paste. If using a paste, add now and allow to fry for 2 min. 4. Add the coconut milk, bring to a soft boil and reduce to a simmer (add tofu here if using). Simmer for 5 minutes and add spinach. Wilt and serve - @scrambledhealth on Instagram

A Speedy Saturday Tofu Thai Green Curry ~ GF, Vegan & DF ~ We were lucky enough to go to Thailand for our honeymoon and it was one of the most beautiful places I have ever visited. I couldnt tell you how many Thai green curries we had had whilst we were over there, but lets just say it was a fair amount! 😂 I found this easy vegan recipe in @olivemagazine and it was so simple to make and absolutely delicious ~ Ready in under 25 minutes too! 👌 ⠀ ⠀ Ingredients (Serves 3/4) ⠀ ⠀ • Marinated Tofu ~ I used @cauldronfoods Organic Marinated Tofu Pieces ⠀ • Jasmine rice 240g (I cheated and used jasmine micro rice packs but have left in original recipe instructions for rice ☺️) ⠀ • Vegetable oil 2 tsp⠀ • Full Fat Coconut milk 400g tin⠀ • Thai green curry paste 50g⠀ • Sugar snap peas 150g⠀ • Baby sweetcorn 175g, halved lengthways⠀ • Green beans 150g, halved⠀ • 1 lime, juiced⠀ • Coriander a small bunch, leaves picked⠀ ⠀ ⠀ Method 👩‍🍳 :⁣⠀ ⠀ Step 1⠀ ⠀ • Put the jasmine rice into a pan with 480ml of water and a pinch of salt. Bring to the boil, turn the heat to low, put on a lid and simmer gently for 10 minutes, then leave off the heat to steam for another 10 minutes. Fluff up with a fork just before serving.⠀ ⠀ Step 2⠀ ⠀ • Toss the tofu in a bowl with the oil then cook in a non-stick frying pan for 1-2 minutes on each side until really crisp, then remove and set aside.⠀ ⠀ Step 3⠀ ⠀ • Add the curry paste and coconut milk to the pan and simmer for 5 minutes until reduced slightly. Everyone needs this velvety cashew carbonara in their lives ☝️ The ultimate healthy comfort food, for the whole family🍴 WE DELIVER 1 1/2 tbsp oil 180g chestnut mushrooms 1 head of broccoli 1 red onion 200g brown rice penne pasta 2 tbsp vegan basil pesto 2 tsp Dijon mustard 400ml cashew cream 450g firm smoked tofu 4 garlic cloves 4 tbsp nutritional yeast 80g sundried tomatoes Medium handful of flat-leaf parsley YOU COOK 1. Dice the red onion and finely chop or crush the garlic. Thinly slice the mushrooms. Trim the broccoli and cut the broccoli head into small florets. Cut the broccoli stalk in half and thinly slice. Roughly chop the sun-dried tomatoes. Cut the smoked tofu into 1cm cubes. Roughly chop the parsley leaves. 2. Heat a large frying pan with 1 tbsp oil on a medium-high heat, add the onion and cook for 5 mins until softened. Then add the smoked tofu cubes for 5 mins until starting to turn golden. Season with sea salt and black pepper. Add the mushrooms, garlic and half of the sun-dried tomatoes to the pan and cook for a further 5 mins. 3. Add the cashew cream, nutritional yeast and Dijon mustard (to your taste) to the tofu and vegetables with the parsley (reserve a pinch to garnish when serving) and simmer for 5-10 mins until thickened. Season to taste with sea salt. 4. Half fill a large saucepan with boiling water, add the penne and cook for 7-8 mins, then drain. Stir 1/2 tbsp olive oil through the pasta to prevent sticking. Add to the creamy carbonara and stir through, keep warm. 5. Bring another saucepan of lightly salted water to the boil. Place the broccoli florets and stalk slices into the pan and cook on a high heat for 3-4 mins or until cooked with a slight bite then drain and season with sea salt and black pepper. Stir through the basil pesto and the remaining sun-dried tomatoes. 6. Serve the cashew carbonara with smoked tofu in four warm bowls, sprinkle with the remaining parsley and serve alongside the pesto broccoli. - @mindfulchefuk on Instagram

The Thai drunken noodles (pad kee mao) I’m basically ALWAYS craving. 🤗 Turns out, it’s surprisingly easy to make this restaurant fave at home with your choice of protein and veggies. But the Thai basil sauce is really the star of the show here. It’s savory, slightly sweet, spicy (if you’d like), loaded with lots of fresh Thai basil and ridiculously good. 👏⁣⁣ ⁣⁣ I can’t guarantee that this recipe is completely authentic, but it’s the closest I’ve come to recreating the version from my favorite Thai restaurant.
