I gave my usual not celiac but not a preference spiel but the table next to us had someone who had celiac and a dairy issue. The friend I was with and myself sat in shock as the maitre d explained literally everything on the menu, allergens present, possible substitutions, and allergy protocols in their kitchen, from MEMORY.
