Very rustic matcha, orange and caramelised fig battenburg, perfect for these cold autumnal days 🍂 Late to the game but here’s my take on the first episode of the 2020 GBBO. Thanks to @sezpk for including me in a fun bake along, taking inspiration from each week’s episode of the GBBO 💕 A very healthy take on your classic sugary treat, using no refined sugar, no dairy and keeping it as simple as possible due to my detox starting soon 😬 The matcha sponge was made with the amazing @goodmoodmatcha, spelt flour, almonds, coconut sugar and olive oil. The orange sponge was made of coconut oil, coconut sugar, almonds, spelt flour and 2 fresh oranges and the marzipan was made with ground almonds, 3 dates and some matcha powder which resulted in a perfectly nutty and slightly earthy exterior, not your usual sickly sweet paste 🦷 🔫. The hardest shots are often the most #simple ones. One prop and two ingredients, the humble #fig and drizzle of #honey. I won’t even mention how long this took me to get a shot I liked, but safe to say, I have a newfound appreciation. And I am still finding honey drips on my floor. . How are you? I’m hoping you’re doing well and you’re safe. The new normal is quite abnormal. . I find the need to balance a social media presence with creating a series of small enjoyable real life moments. That being said, im just grateful the city workers takes good care of the recycling and wastes. They’re a god send and just having them is an enjoyable normal moment. #thankful . This week I found staging my own shots with limited food and in a familiar space is stupid hard. You see your rooms every waking moment and you forget how to manipulate small things to get a big impact. For me, it’s finding the right window and right time. . I’ve been a bit scared to try figs for a while now because I was a bit grossed out by the whole fig wasp thing, but so many people on here were singing their praises (hi @jennalaurenwood) that I just had to try them! • • The verdict: they were good! Caramelised figs with vanilla ice cream. This was a made up dish, that tasted absolutely delicious. Perfect for this warm weather 😃 -in a frying pan over low/medium heat.. melt 1tbsp butter -cut figs in half and sauté for around 2 minutes, turning occasionally -add 2tbsp of runny honey, and water -this will make a sticky caramel sauce -coat the figs in the sauce for another 2 minutes, and then leave to cool -in a serving dish/glass add Ice cream , top with figs and more runny honey. PASTRY METHOD (use ready to bake puff pastry if you like) ✓ Sift the strong plain flour & salt into a large bowl. ✓ Add the cubed butter to the bowl & rub them in loosely. You need to see bits of butter. ✓ Make a well in the bowl & pour in the cold water and vinegar, mixing until you have a firm rough dough. ✓ Turn out onto a lightly floured board, knead gently & form into a smooth rectangle. ✓ Roll the dough in one direction only, until 3 times the width, about 15 x 45cm. ✓ Keep edges straight & even. ✓ Fold the top third down to the centre, then the bottom third up & over that. ✓ Give the dough a quarter turn (to the left or right) and roll out again to four times the length. ✓ Fold the top quarter down to the centre, then the bottom quarter up & over that. ✓Give the dough a quarter turn (to the left or right) and roll out again to four times the length. ✓ Once again, fold the top quarter down to the centre, then the bottom quarter up & over that. ✓ Wrap the dough tightly in cling film. ✓ Rest the dough for 2 hrs in the fridge. . TO BAKE ✓ Roll out the dough to the size of your baking tray. ✓ Line with baking paper & place on baking tray. ✓ Trim the edges & add a window frame using left over scraps. ✓ Use a fork to poke holes inside the window. ✓ Egg wash & blind bake at 200°c for 15 minutes. ✓ Add your toppings: onions, figs, goats cheese (remove straw from the centre) & bake for another 10 minutes. ✓ Sprinkle toasted pine nuts, thyme & honey ✓ Serve with your favourite Loire Valley wines! . CHOCOLATE GANACHE COVERED FIGS! I don’t know about you guys but I loveee black figs. They are so sweet. The natural sugars from the fruit itself just ooze out making the fruit itself taste like dessert. Dipping the figs in ganache sauce adds the perfect touch! Here are the recipe details to dip 20 black figs! Ingredients: -1 cup dairy free chocolate, I like @hukitchen chocolate because it is refined sugar free -1/3 cup nut milk (I love almond milk) -20 black figs Instructions: -Wash the figs and slice in half longways. -Clear room in your fridge or freezer for a cutting board (this is where you will our the figs once they are dipped.) Line the cutting board with wax paper. -In a small sauce pan, add the milk. -Bring the milk to a boil and add the chocolate. -Immediately turn the burner to low and continuously whisk (with fork or mini whisk) until the chocolate sauce forms. -Add the sauce to a small but tall bowl (think a snack bowl, it’ll be easier to dip) -Dip the figs half way. -Immediately place the figs on the lined cutting board. -Sprinkle with course sea salt if desired. -Place in the fridge or freezer until the chocolate hardens (3-4 hours) Tag me when you make them! I have a thing for fruit. It goes back to my jam days when I’d drive to the U-pick farms and collect a ridiculous amount of berries, way more than I would possibly need for jam but I always shared. Mostly I loved the gathering of fruit, down in the dirt with the spiders and bees searching for hidden treasures. Living in California during culinary school, my love turned to obsession. Coming from Minnesota with its extended winter climate doesn’t lend for an abundance of varietals so California for me was a paradise. The bounty was astounding and I was infatuated with stone fruits and berries of all kinds accessible many months of the year. It was a very inspiring time and living there forever marked my heart with a stamp of California. Upon returning to Minnesota, it was a difficult transition and I missed the farmers market and the culture I had been a part of if only for a brief period of time. Fast forward to now. I’ve been working with the summer bounty inspired by my time in the Bay Area, only now it’s in a place most dearest to my heart, at Black Walnut. On Being Back Into The Swing Of Things; or, Life Lessons From A Pandemic: for most everyone reading this, this covid period has been a testing time for you. which for a purely subjective projection i would say is pretty accurate. but i sincerely hope that as normality starts to resume you are at least on an emotional and spiritual uptick, and that you have processed all there is to be processed from these unprecedented times. because it is beyond cliche to say this has made one more appreciative of the more mundane aspects of normality but clearly maxims are relatable for a reason. the brisk ‘London walk’ against the breeze. the weird lady literally smoking a cig on the tube. the ‘lads’ in the denim jackets ordering well done steaks from respectable places of cuisine. things you can’t help laugh at. the twilight sensation when you’re one drink away from either puking or passing out. having the luxury to ponder explicitly the meaning of life rather than having it be a source of existential angst — the kind which inspires rather than confronts. all of that and more. and my more is this otherworldly cuisine from the brunswick house, emblematic of which is the hospitality (and cheeky staff discount) courtesy of @klaudija_is_i bc damn. innovative-but-not-gimmicky combinations. raw dry aged dexter. the sheen of the potato bread. celeriac purée. home bred venison faggots. oxidised wine. amazing decor. even better smoking area. with a view. an experience worth 6 months of lockdown ✨ - @piesnobiety on Instagram

È davvero un trio magico ✨ e questo CHIA PUDDING ne è la conferma 😍 fatto con semplici ingredienti e tocco finale by @koro_it con la loro crema di noci 100% (goduria pura) per un risultato bello a vedersi e buono da ripulire tutto il bicchiere 😋 Ecco come fare⬇️: . INGREDIENTI: 150g di ricotta 15g di semi di chia 2 fichi 100ml di latte di riso 1 cucchiaio di marmellata di fichi 5 gocce di flovdrops gusto sciroppo d’acero (facoltativo) Crema di noci 100% qb. . PROCEDIMENTO: Unire la ricotta con latte e marmellata di fichi e flavdrops (se lo preferisci più dolce), infine aggiungere i semi di chia. Lasciar riposare qualche minuto in frigo. Tagliare i fichi a fette sottili e riporli nella parte interna del bicchiere premendo con le mani. Versare poi il chia pudding preparato e lasciare riposare in frigo per almeno 1 ora (più rimane in frigo meglio è). Inspired by @jessicaallegrettiph I have decided to make sugar-free fig jam. Easy to make, great on toast or to top cereal and yoghurt. “Healthy Happiness” 2kg of ripe figs 400ml of filtered water The juice of one large lemon Wash and trim the hard bit of the stalk off the figs then quarter. Use a wide pan bring to a simmer the figs and the water, keep simmering for 45 minutes stirring occasionally. Take off the heat stir in the lemon juice and pour into sterilised jars. Baked Figs with Feta in a Raspberry and Honey Drizzle! . Had to do at least one post to mark the fig season. We don’t tend to eat a lot of them as raw fruit, but lightly baked, they’re not only delicious, but can also be scooped out of their skin so much more easily (unless you like eating the skin that is). So if you saw the raspberries on my stories the other day, you’ll know we’re having a bumper crop this year (although picking them is a bit of a nightmare, with all the wasps around... 😖). So other than all the usual things you do with raspberries, I thought this coulis would be a bit different and work nicely with the figs and a bit of feta. Made with just raspberries, a little red wine vinegar, honey and olive oil... dead easy. So, having a little family dinner tonight... I love it❤️You need the following: two figs, 1 tablespoon of water, 2 teaspoons of agave syrup, 1 teaspoon of cinnamon. Cut the figs into eight pieces and bring half to the boil with the rest of the ingredients. If you like something sweeter, you can add a tablespoon of sugar. After it has boiled for a short time, the liquid will slowly turn red and you can cook it on a gentle heat. Let cool down briefly, fill jars with yogurt, put the mixture on top and garnish with the rest of the figs. It is enough for about 3 small glasses. Die Feigen in acht Stücke schneiden und die Hälfte mit dem Rest der Zutaten aufkochen. Wer ist etwas süßer mag, kann noch einen Esslöffel Zucker hinzufügen. Nachdem es kurz aufgekocht ist, wird die Flüssigkeit langsam rot und bei leichter Hitze kann man es noch weiter kochen. Kurz abkühlen lassen, Joghurt in Gläschen füllen, oben drauf die Masse und mit dem Rest der Feigen und Mandelsplittern garnieren. Es reicht für ca. 3 kleine Gläschen. Let’s talk Figs and why September is by far the best month of the year for this Mediterranean fruit. Figs are grown throughout the Mediterranean in regions like Italy, Spain, France and Turkey, but Figs are especially important in Turkey. Turkey is the home of the Black Bursa fig and this variety is even named after the city of Bursa in Turkey, Turkey also holds an annual Fig festival every year in the month of September because of the immense popularity of the Bursa Fig in Turkey. The Bursa Fig has also surprisingly gained quite a lot of popularity in the UK as well in recent years, with the UK importing more Bursa Figs from Turkey than any other country. This is great news because Bursa Figs taste fantastic and are superior to other varieties in my opinion, unfortunately this variety is all too often picked underripe so that it can survive the journey over to the UK, it’s a shame really because this variety has great potential. An expert tip would be to pick Bursa Figs that have a noticeable softness to them, they should also preferably be uniform in colour and not have a lot of green on their skin, this indicates immaturity. . . Everyone rushes about, somewhat stressed but in many ways euphoric, especially when the weather stays clear.” This is how @fabrizialanza, in her book “Coming Home to Sicily: Seasonal Harvests and Cooking from Case Vecchie”, describes the first week of September at @tenutaregaleali. Since her youth, she has been part of this joyful dance. Today, she has found her own way to honour the harvest season at @annatascalanza, turning a glut of fruit and vegetables into wonderful preserves to see through till next summer. In these days the atmosphere around the courtyard of Case Vecchie is very busy as Fabrizia and her team continue preserving all the summer bounty! 🍇 Raisins (uvetta di Corinto), almonds and figs are properly dried before storing them. 🥒 Courgettes are sun-dried as well. In winter, they can be reconstituted in water, then sautéed in olive oil. 🍅 After harvested in their full maturity, tomatoes are cooked, filtered and laid down for a couple of sunny days until the liquid transforms itself into a paste, the estratto (also called by Fabrizia “Sicilian caviar”). @annatascalanza believes that any culinary process must have its roots in procedures whether it is about layering of flavours, patience, or knowledge. [RECETTE x OMNIVORE] Figues pochée, fromage frais et coulis de mure au thym citron par @corentin_magnin Ingrédients pour 6 personnes : • Figue pochée : 6 figues de soliès @natoora / 400g eau / 100g purée de figue / 100g sucre / 7g thym citron / 12g vinaigre de figue/50g jus de citron / 75g vin rouge /1baton de cannelle • Biscuit aux noix : 65g beurre / 30g poudre amande @moulindelaveyssiere / 75g farine de noix @moulindelaveyssiere / 30g sucre glace / 2 œufs • Creme au fromage frais :125g creme pâtissière / 1feuille de gélatine / 50g fromage frais/75g crème montée @sacrewilly • Coulis mure : 125g purée de mure / 50g eau / 25g jus de citron /25g vin rouge / 5g thym citron / 2g vinaigre de figue Matériel nécessaire : • Casserole / fouet / maryse / cercle / spatule / batteur / bol ou cul de poule / four Déroulé : 1) Réaliser un sirop avec tout les éléments sauf les figues, laisser infuser 30m et chinoiser le jus de cuisson. Pocher ensuite vos figues dans ce sirop juste avant de servir. 2) A l’aide d’un robot batteur mélanger a la feuille le beurre et les poudres.ajouter les œufs a la fin .mouler en cercle et cuire au four a 180 pendant environ 10m. détailler ensuite 6 pieces de biscuit de la même taille que vos figues. 3) Réchauffer légèrement la crème pâtissière et incorporer la gélatine préalablement réhydratée. Ajouter ensuite le fromage frais puis la crème montée. Réserver au frais 4) Chauffer tout les éléments ensemble et laisser infuser 30m. chinoiser et réserver au frigo. 3 INGREDIENT CHOCOLATE PB FIG CUPS coming at ya 🙌🏼 i’m the type of person who constantly needs a stash of treats in my fridge/freezer so these are the only type of food i “meal prep” 😂 recipe dEATS: - melt 1/2 cup @hukitchen chocolate gems and pour into silicon muffin tins - freeze for 15 minutes - add a tbsp of @georgiagrinders peanut butter to each cup and freeze again - melt more @hukitchen chocolate and slice up some figs to top off your chocolate pb fig cups and freeze for at least an hour or until firm - enjoy!! SBRICIOLATA DI FICHI. Ragazzi oggi si va di sbriciolata! Vi lascio la ricetta per realizzare questi cubotti deliziosi con un crumble croccante e una farcitura realizzata con fichi freschi... Provate a farla e fatemi sapere. A voi i fichi piacciono? Ditemi la vostra! . . . Sbucciate 700 gr di fichi e fateli sciogliere in padella, aiutandovi con una forchetta, con 3 cucchiai di zucchero e 1 cucchiaino di cannella. Fate cuocere fino a quando non diventa una crema morbida. Saranno sufficienti 5 minuti. Fate raffreddare. In una ciotola mettete 250 gr di farina 00, 50 gr di farina di mandorle (vanno bene anche gli amaretti sbriciolati), 150 gr di zucchero, 1 uovo, 110 gr di burro freddo a pezzettini. Amalgamate bene tutti gli ingredienti e sbriciolate con le mani. Foderate una teglia con carta forno, ponete la metà delle briciole sulla base, sopra versate il ripieno di fichi raffreddato e ricoprite con le restanti briciole. Cuocete in forno preriscaldato a 175 gradi per 30 minuti o comunque fino a quando la superficie sarà ben dorata.
