Getting wild on a combination appreciation highlight! While focusing on huckleberries this week, we’re not done swooning over our new King Kampachi (we’ll never stop swooning over fresh quality fish), so I brought the two together in one dish. Whole Barbequed Huckleberry Kampachito with all the fixins. The huckleberry sauce caramelized beautifully on the kampachito for a finger-lickin’ sticky crisped skin covering perfectly succulent juicy flesh beneath. This sauce is out of control tasty, intensely fruity and bright, the sweet and heat combo of berries meeting aromatics is a perfect summer treat. It showed up on the table again as a ssamjang to double down on that incredible flavor. This incredible and inspirational series highlights #immigrant stories in America through food. Honestly, some of the greatest documenting I’ve seen since Bourdain.
