I wonder if I should do a sampler again?🤔 What do you think? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Flan de Sal is a new spin from traditional pan de sal. Each bread roll is filled with flan 🍮 then topped with caramelized sugar. yum. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ The sugar stays crackly for a few hours then slowly melts back into caramel sauce. “Masa Memory” is a series of food stories. I will start with one of mine and share more by my friends, family, clients and hopefully some of you. Masa Memory = nostalgia: For me, it is the smell lingering from our kitchen on Sunday evenings as a child, my Nana’s salsa and mole, the beautiful food prepared for me by strangers, in new cities, around the world. It is about my deepest love and gratitude for my Nana and the women in Mexico, who gifted me with my Masa Memories. A few years ago, I opened a Pop-Up Taco restaurant in Brooklyn. Josephina was named after one of my favorite Soldaderas in the Mexican Revolution. I grew up hearing stories about these women ... about their bravery, strength and their cooking! At Joesphina, we used @masienda corn (at first, it was hard to get our hands on because orders were going to large restaurants, but I just had to have it! I wanted to use beautiful, non-gmo corn, straight from the source). We would soak, grind and press the masa fresh everyday. I worked on set with @katesjordan by day in Industry City and after the last shot ... I quickly biked to the restaurant to press tortillas before we opened. @jenniphervanbogart worked the counter and supported me every step of the wild way. @pocoapocoapoco worked with artist in Oaxaca to source the most beautiful skirts, tops and aprons from for our uniforms and I dyed them pink. Dear friends, talented and magic chefs, came from all over to show their support for my Taco Pop-Up dream... Manhattan, Paris, Upstate, Mexico and Copenhagen. My love, @brass__tacks wrote an article about Josephina and we launched our opening night with @thebonesofjrjones, who sang everyone sweet tunes. The entire experience was so special, humbling, exhausting, full of joy and one of the biggest learning, growing and breaking moments in my journey. I’m thankful for all of it! I love making tortillas and cooking Mexican food because it keeps me connected to my Masa Memories - which keeps me close to my family, my brother Levi, my friends and to everything that lives beyond a finished meal. ♡ - @april_valencia on Instagram

Pizza swirls 🍕🌀. You guys saw it in my stories and wanted the recipe like CRAZY! I am so excited to share. Finally a handy handful of carbs for the lunchbox that is full of protein, fiber, and veggies too!! . Adapted from @superhealthykids . Ingredients: Crust🌀: 2 cups light spelt flour 2 1/4 teaspoon active dry yeast 1 1/2 teaspoon coconut sugar 3/4 teaspoon salt 1/2 tsp dried oregano 2/3 cup water 3 tablespoon avocado oil 1 1/2 cup mozzarella (or dairy free) cheese . SAUCE🍅: Any small- chopped veggies that you like (tomatoes, mushrooms, onions, peppers, zucchini...) 1 cup of your fave marinara sauce . All you do: Sauce: Roast finely chopped veggies in oven with drizzle of oil at 400F for about 15-20 mins or until soft and done Blitz veggies with marinara sauce in the blender. Set aside # Crust: -mix 1 cup of flour with the yeast, sugar, and salt. Add in the water and the oil and whisk until combined. -Add in remaining flour and oregano and combine (with hands!) until it forms a sticky ball. -Knead dough on a floured surface. Let the kids punch it hard! -place dough in a large greased bowl, rub a bit of oil on top of it, and cover bowl with a plate and leave it for 30 mins - Roll dough out into a floured surface. Make it into a large rectangle. - paint dough surface with prepared pizza sauce. - Add any small toppings if you want to - Roll up the rectangle -slice it -pop each slice into a greased muffin tin - Bake at 400F for about 10 mins. Chicken Rolls Ingredients for the mix: Chicken mince 500 gms Chopped green chili 1 Chopped onion 1 Chopped garlic 5-6 cloves Chopped ginger 1 inch Chopped coriander leaves 1 bunch Red chili powder 1-2 tsp Turmeric powder 1/2 tsp Garam masala 3/4 tsp Black pepper powder 1 tsp Salt to taste Milk 1/2 cup Cooking oil 3 tbsp Garlic mayonnaise 4 tbsp Mozzarella cheese 5 tbsp Method: 1. Sauté green chili and onions till for 3-4 minutes. 2. Add chopped ginger and garlic and sauté for another 5 minutes. 3. Add red chili, turmeric and garam masala powder and sauté till raw smells goes away. 4. Add chicken mince and stir fry it for 5 minutes. 5. Add 1/2 cup milk cover and cook for 10 minutes. 6. Remove lid and let the mix dry completely. 7. Add pepper powder and coriander leaves. 8. Remove from heat and let the mix cool. 9. Once cooked add garlic mayonnaise and mix well. Roll ingredients: Multipurpose Flour 2 cups Active yeast 1 tsp Sugar 1 tbs Warm milk 120 ml Egg 1 Beaten Egg for glazing 1 tsp Salt 1 tsp Unsalted butter 3 tbsp Method: 1. Add yeast and sugar in warm milk for 5 minutes. 2. Mix flour, egg, salt and butter. together with the milk till it becomes a dough. 3. Keep the dough covered for an hour. 4. Divide the dough into 10 equals parts and roll it to oval shape. 5. Add 1.5 tbsp of mince and a little mozzarella cheese, fold the edges in and roll. 6. Keep all the rolls covered with a moist cloth for another 1 hour. 7. Glaze them with beaten egg and bake for 20-25 minutes at 180C . 🍔 Baking up a barbecue 🍔- As part of our role as @chocolatepen_official ambassadors for @offclskyrocket toys, we were challenged to bake up a barbecue! There’s even prizes for the best ones so we really tried our best! Shame my head chef is a child, not a pâtissier but I think we did quite well. We made burger cakes and ice cream dessert cakes! The burgers are white cake (the mix was provided and omg it so yummy and soft) with sugar cookie patties (added brown food colouring and oats for meat texture) and then they have fondant icing lettuce and ketchup! We also used the chocolate pen to add some “sesame seeds” to the buns. Our ice cream cup cakes are yummy cupcakes but pink! With pink frosting “ice cream” and chocolate pen decorations! St Cera is back. This cheese is made by @st.judecheese on the Norfolk/Suffolk border and is then matured into the pungent, farmyardy St Cera by our team in Bermondsey. Its sticky, orange rind is developed through careful washing of the cheeses in brine over several weeks. Due to the labour intensive nature of this maturation work we had to take a break from it at the height of lockdown. OMG... it’s finally done!! Our cheeseburger and fries inspired stuffed meatloaf using @porterroad dry aged ground beef along with some BBQ sauce and a little bit of pano flakes. I then formed it around the edges of a loaf pan. I then filled it with precooked French fries and grated cheddar cheese. I then covered the fries with the remaining ground beef and turned it out from the pan. Pão de leite! 🍞🍞🍞 Já publicamos a receita anteriormente, mas nada como facilitar a vida, certo? 😉 Ingredientes: 1 kg de farinha de trigo 1 e 1/2 xícara de leite morno 1/2 xícara de água morna 1/2 xícara de óleo 4 colheres (sopa) de açúcar 1 colher (sopa) de sal 2 ovos 30 g de fermento biológico fresco ou 10 g de fermento biológico seco Modo de Preparo: Em uma tigela dissolva o fermento no açúcar e acrescente o sal, os ingredientes líquidos, os ovos e misture muito bem. Acrescente aos poucos a farinha até incorporar e sove bem a massa. Deixe descansar por aproximadamente 1 hora. Após o crescimento, divida a massa, enrole da forma que desejar, coloque em duas formas para pão e deixe crescer por mais 15 minutos. Leve para assar em forno médio (180°), preaquecido, por aproximadamente 45 minutos. Living with my best friend over the past four and a half years in just a few snapshot moments. I have loved living with this girl more than I can say, it’s been the happiest time of my life. Who wouldn’t want to live with Claudia bloody Sutton?! You can only imagine how fun that would be, and I got to do it for nearly 5 years. It was absolutely excellent and I can’t stop crying about the fact we’ve moved out today. The first image is a picture of me, holding a replica of a drawing I made of Claudia when we were 7 years old and were asked to do a project on our best friend. This is entitled “Claudia” by Jessica Goldstein. I gave Claudia the original “piece” framed when we moved into our first flat in Angel as a surprise and it has been the piece de resistance of both our flats and basically our lives. On moving out week, I couldn’t bear to part with it, so as a surprise to me, Claudia took a picture of the drawing and got it framed for me. I was just a little emotional about it. The last picture is us crying in bed last week contemplating is being apart from each other. Since we were 6 years old we dreamed of what our flat would be like when we grew up, and although neither flat was quite as pink and glittery as we imagined (although my rooms weren’t far off), I can’t believe that after years of planning and dreaming it’s already over. Although we’re both moving on to brilliant new chapters I still don’t understand why we can’t just be 25 again spending our days drinking bubble tea with face masks on, watching Grace and Frankie, having a cuddle in bed, getting the flat ready for our friends to come over before a night out that would go on until the early hours (usually finishing at ours) and then getting back into bed to recover together until the next weekend. I love you wifey! Even though we won’t be living together, I’ll be seeing you at yours tomorrow. The bark using these to rub together has given a nice change of pace to the normal candied pork we have been eating for the last few years. A used a healthy coating of @hardcorecarnivore red followed by a medium coat of @butcherbbq Honey rub. The result is a salty start with a sweet finish at the end. I’ve been wanting to make this GF slice for ages! I grew up on iced vovo’s and miss them lots! I cheated and used marshmallows but next time will make my own marshmallow as it’s quite easy to do. The base is made up of:- 3 GF weetbix 1 cup of GF SR flour 1 cup of coconut 3/4 cup of sugar Mix well then add 120 grams of melted butter and press into a lined tin and bake for 10-15 mins at 180 degrees. Let cool a little then spread with some strawberry jam and a layer of marshmallows. Pop back in oven for 5-10 minutes then let cool and slice up! It’s so delicious😋 you won’t be disappointed (and this comes from someone who doesn’t even like weetbix!) 《湯種牛奶吐司》 最近愛上製作吐司，因為成品可以配搭不同配料，做出不同口味的三文治，為麵包添上更多色彩！ Reference 參考了網上的食譜，再跟據1.5斤的吐司模調整份量！搓揉方法就是參考了《自製麵包研究室》。 塗蛋黃液時，完全是貪心不想浪費食材的狀態，結果塗太厚！麵包進焗爐沒多久，表面就開始變深色了🙈，讓成品出爐時明顯是過濃了！😅 爐溫方面一開始是想設定190度30分鐘的，可是10分鐘後，見麵包表面已開始有焦濃的情況。最後還是要調低10-20度，並在表面鋪上烘焙紙，再繼續進行餘下的烘烤！下次做山形吐司時，還是用170-180度試試看好了！🙈 第一次用淺井的吐司模，對於吐司週邊的上色還是挺滿意的！😍不枉千里迢迢把你買回來！❤️ #foodie #hkfoodblogger #自己煮 #吃貨人生 #hkigfood #hkfood #hkfoodlover #foodiehk #homemade #烘焙#手作烘焙 #烘焙日記 #bakery #baking #bake #心情 #隨筆 #心靈 #寫作 #閱讀 #故事 #文字 #人生 #思考 #短文 #每週一烘焙 #slicedbread #吐司 #牛奶吐司 #milkbread - @metaphor.cuisine on Instagram
