It’s hard right now because customers are coming in and the usual warm greetings just aren’t there. You know people are worried. My mom always raised us to care about the customers. It’s not about how much money we are making, of course we need to survive too, but I care about how they feel. Yesterday, i had a customer who came in and they had just gotten laid off. The last time I saw them we were talking about upcoming vacations, what movie they wanted to go see next and now it’s “I’m stuck at home and I lost my job.” It’s just a tough thing to hear.” . . . ⁣🥕 SPICED CARROT CAKE 🥕 with a drizzle of honey ✨🍯 i’ve topped mine with coconut yoghurt, ribboned carrots, crushed walnuts, pumpkin seeds, rosemary, + a generous drizzle of honey 😍 this loaf is also gluten + dairy-free & deliciously dense. heres the full recipe... enjoy! x⠀ ⠀ ⠀ INGREDIENTS⠀ ⠀ 100ml extra virgin olive oil⠀ 3 large eggs⠀ 1 1/2 cups coconut sugar (or raw / brown sugar)⠀ 2 cups almond meal⠀ 1/2 cup buckwheat flour (or another flour of your choice - plain, spelt, or wholemeal - if not worried about gluten)⠀ 1 tsp baking powder⠀ 1 tbs cinnamon⠀ 1 tsp allspice⠀ 1/2 tsp sea salt⠀ 1/2 tsp bicarb soda (baking soda)⠀ 1 tsp apple cider vinegar ⠀ 2 1/2 cups grated carrot (about 3 carrots)⠀ 3/4 cup walnuts, roughly chopped⠀ 1/3 cup milk of your choice⠀ ⠀ ⠀ METHOD⠀ ⠀ Preheat oven to 180C / 350F (fan forced).⠀ Line a loaf tin (23cm x 13cm / 9 inches x 5 1/2 inches) with baking paper, set aside.⠀ In a large mixing bowl whisk the olive oil, eggs, and sugar, until well combined.⠀ Add the remaining ingredients and fold together to combine.⠀ Pour the mixture into the pre-prepared tin and bake in the oven for 60 minutes.⠀ Once cooked remove from the oven and allow to cool before turning the loaf out.⠀ You can serve this loaf warm fresh from the oven or allow to cool completely in the fridge overnight.⠀ Top with a thick layer of coconut yoghurt or super thick natural yoghurt or mascarpone.⠀ Top with carrot ribbons, walnuts, fresh rosemary sprigs, and a generous drizzle of honey or pure maple syrup. - @gatherandfeast on Instagram

Lemon-ginger poppyseed cake with lemon curd, mascarpone frosting and edible flowers, adapted from @cocoebaunilha ✨ It’s a piece of cake (get it?) I decided to make a layer cake. My very first layer cake. Ive been baking bread every week and Im obsessed with the Great British Baking Show, so I figured I could channel my inner @noel_fielding, have some fun, and it would all be a breeze. Wrong. My batter split, then I tried to get fancy with some parchment paper and made the cake edges all lumpy, and I didn’t even manage to level them very accurately... I wanted that very sexy naked cake finish and didn’t hit the mark. I was pretty deflated by the time I FaceTimed Matt for help and I didn’t know if it was worth salvaging. First came a thorough inspection, then a quick break, and together we started rattling off ideas that could save the shoot. Toughen up, buttercup. Its just a cake followed by a list of ideas that included Just step on it put a bunch of flowers on it glue some fruit to it and the winner - Just cut a big slice out. The idea of putting my problems in their place was instant relief, and the obvious lesson was in staying cool, and working through the obstacles. Life, plans, and expectations rarely work out as intended and seriously limit what an otherwise open mind can provide you. WE DONT GIVE UP was the quote of the day and Im obviously so happy I didn’t scrap my efforts. Self-doubt can be a monster when you let it out, but when it does end up in your head-space then take a deep breath and have a good laugh with it. Embrace the inner monster! As part of our new People of Market of Choice series, we’re featuring some of our many talented teammates and their inspiring stories. We hope you enjoy them! Fruits, vegetables and other produce have always been a part of Patty’s life. Growing up in Molalla, she spent summers picking broccoli with friends. On weekends, she ran a small produce stand that her mother owned. Fast forward to today and Patty is now the produce manager at our Belmont Market in Portland, working with fruits and vegetables every day. Its a career that brings her joy, she says. I love merchandising produce – especially new produce at the beginning of the season because its so colorful and exciting. When you get the colors looking so complementary and the display looks so inviting, it’s very satisfying. But to her, it’s about much more than organizing bell peppers into visually appealing patterns. Shes always had a passion for fresh, nutritious, locally sourced fruits, vegetables, herbs and spices. Happy Fall, Friends! What is your favorite winter squash this season? The perennial question: when to harvest winter squash? Its true, the skin color is tempting, though deceptive (though Honeynut, the final frame, is the exception)! Winter squash require ~60 days from pollinated flower to ripe, mature fruit, so here in Zone 5, waiting til mid-September is just a safe bet at the earliest. We wait as long as possible before frost because, even with powdery mildew often drenching the plants, if there is any green in the leaves & stems that means sugars are being photosynthesized & sent into each fruit ✨ Once plants are quite thoroughly dead &/or its about to frost, we harvest each fruit by snipping each stem 1 from the fruit, handling them carefully, as if they were marvelously large easter eggs, which I suppose they are 😂 Very few winter squash are delicious straight from the vine, with delicata being the exquisite exception. The rest are much sweeter & more creamy when cured in a warm (80 F is the dream) place with plenty of airflow, effectively shrink-wrapping as well as deepening their flavor for long-term storage. Your kitchen counter will do as a solid second ⭐️ Some winter squash only store a short time, like delicata & honeynut; if we enjoy them on New Years, we consider ourselves fortunate. Others are consistently stored through spring & even summer, like Sibley (the hubbard cousin in the 2nd photo) who we met sitting resplendent in the center of Patrice Fortiers dining room table along the northern St. Lawrence in late June 🎉 Friends, if youre hoping your winter squash will accompany you for seasons to come, dont let them get frosted. Even a touch of frost on their skin will prevent them from curing. Theyll still be delicious, so enjoy them, just soon --- within a few weeks, ideally — with plenty of garlic, if you’re anything like us 🧄 Happy Fall, did I mention?!! Doing this interview was very nerve-racking for me. When we started off I was physically shaking - I can hear it in my voice. Why? “so what’s your plan” I don’t have one. lol Weird right? Society tells us we always need to be working towards a goal. “There’s no standstill in life. If you’re not moving forward you’re going backwards” I used to believe that. But I’ve always made lists. Set goals & had mini goals to reach my big goals. Thinking maybe if I got some external validation or achievement it would bring me happiness. It didn’t. Being the strongest, richest, leanest, smartest, etc doesn’t matter if you don’t know what your purpose is. And I mean your TRUE purpose. I thought I knew what mine was. I didn’t. Most of the time our purpose is far too tied up in either outside influence/expectations, or our own egos. So for now I’ve relinquished control, & I’m finding beauty in the unknown. I don’t have a plan, because I refuse to set another goal that isn’t fueled by my true purpose. I haven’t completely figured it out. Maybe you haven’t either. I believe some people never do. The subtle coconutty notes of pandan, warm buttery flavour, shards of white chocolate and the gorgeous coconut ice cream combined to taste like the perfect marriage of east and west. My biggest qualm was that the pandan wasn’t prominent enough. 8.5/10⁣ ⁣ 𝐂𝐡𝐨𝐜𝐨𝐥𝐚𝐭𝐞 𝐥𝐚𝐯𝐚 𝐜𝐚𝐤𝐞 🍫 ⁣ Honestly we were surprised by how mind-blowing this dessert was. I always think of chocolate lava cake as something one can just whip up at home on a fat night in, but this gooey, melt-in-your-mouth option was exemplary. I think this was largely due to its toppings - it had the same beautiful creamy coconut ice cream melting its way in, and on the side was this purple mascarpone, did it have ube in it?! A Message to The Bachelor Farmer and Marvel Bar Community: Dear Friends, Six weeks ago, we closed the doors to The Bachelor Farmer, Marvel Bar, and our cafe to protect the health of our team, and the community. And today, I have reached the very difficult decision that we will not reopen. The loss fills me with sadness, but I am also overwhelmed with gratitude. We had the privilege of serving you for almost nine years. We celebrated important milestones right alongside you, hosting countless birthdays, weddings, and anniversaries. We welcomed a president, a vice president, and a first lady. And we were fortunate to be able to go out on a high note, having recently received another four stars from the Star Tribune and reimagining a bar as a space where everyone feels comfortable. We helped to create a vibrant neighborhood and I hope we contributed something of lasting value to the fabric of our community. I’m proud of that legacy and can’t thank you enough for making it possible. We have tried to provide support for our team through this incredibly difficult time, and this decision doesn’t change that. Every employee received six weeks of pay while furloughed and we will continue to provide full health benefits through May 31. And for our guests, if you have an unused gift card we will transfer the balance into a credit at Askov Finlayson. Any outstanding event deposits will be refunded in full. There is no easy way to do this, but we’re committed to doing it right. Lastly, to our friends in the Minneapolis restaurant community: It has been an honor to be in your company and I believe in your ability to overcome these unprecedented challenges. Is it greenwashing or on the path to driving real change? For decades, organic cotton was viewed as the gold standard for sustainable cotton initiatives but widespread adoption of conventional farming methods have changed the conversation. I’m glad to see more detail and data about US conventional cotton’s environmental impact. For example, despite the notion that all cotton is water thirsty, irrigated water usage has declined dramatically for American cotton farmers since the 1980s thanks to better technology. 👖 This underlines what I found in my @anothertomorrow story on cotton, which is that if farming conditions vary from field to field and country to country, why do we keep talking about cotton in terms of global industry averages? It’s bound to be inaccurate. We either need better regional and national data or TALK TO FARMERS MORE. Seriously, how often do we get to read stories in mainstream press about farmers and what they think about sustainability. 👕 In the piece, Tennessee farmer Matt Griggs talks about how he’s reduced his synthetic chemical usage by planting cover crops and using manure instead of manmade fertilizer. He’s saved money doing it, too. The Protocol is launching with some interesting data and ambitious goals. Some of the questions I’m asking: - Are the Protocol’s assertions that US cotton has gotten greener over time misleading?
